Steel-cut oatmeal is my new favorite hot breakfast. It has more texture than rolled or flaked oats and really sticks to your ribs. But this tasty cereal takes about 25 to 30 minutes to cook - not what you need when you're trying to get out the door. So I make a batch that will last a few days; it keeps well in the refrigerator, and you can reheat small portions gently atop the stove or in the microwave. You can also freeze this oatmeal in ice cube trays, an idea I got from oncology nutritionist Maria C. Romano. She contributed the recipe from which this one is adapted to the "Eat Healthy, Shop Smart" community farmers' market program at Montefiore Medical Center in the Bronx.

2 cups water
2 cups low-fat milk
1/4 teaspoon salt (or to taste)
1 cup steel-cut oats
1 teaspoon unsalted butter (optional)
2 to 4 tablespoons dried fruit, such as raisins, chopped dried apricots, dried cranberries
1 to 2 teaspoons maple syrup, agave syrup, honey or brown sugar (more to taste)
Fresh fruit (such as diced apples and pears, optional)

Steps:

  • Combine the water, milk and salt in a large, heavy saucepan, and bring to a boil. Slowly add the oats, stirring constantly. Reduce the heat to low, cover and simmer 15 minutes, stirring occasionally with a wooden spoon. Stir in the butter, dried fruit and sweetener. Cover, and continue to simmer for another 10 to 15 minutes, stirring often to prevent the cereal from sticking to the bottom of the pan, until the oats are soft and the mixture is creamy. Serve, with added fruit stirred in if desired, or refrigerate and reheat as desired. Or freeze as follows:
  • Line ice cube trays with plastic wrap. Fill each cube with oatmeal, cover with plastic wrap and freeze. Once frozen solid, remove the cubes from the ice tray and freeze in a plastic bag. For each portion, thaw three or four cubes in a microwave on the defrost setting. Add additional warm milk if desired.

1 3/4 cups milk (any kind you like (I use unsweetened almond milk))
1 1/2 tablespoons honey ( or maple syrup)
1 1/2 tablespoons peanut butter ( or other nut butter of choice, optional but delicious)
1 cup uncooked steel cut oats
1/2 teaspoon kosher salt
Chia seeds
Protein powder
Ground cinnamon
Citrus zest (I love orange zest with honey and cinnamon!)
Dried fruit (favorites: reduced-sugar dried cranberries, raisins, chopped dates)
Fresh fruit (or frozen and thawed fruit)
Toasted almonds (walnuts, or pecans (add just before serving to maintain the most crunch))
An extra drizzle of honey ( or maple syrup)

Steps:

  • In a mixing bowl, whisk together the milk, honey, nut butter, and any protein powder you may be adding until smooth. Stir in the oats, salt, and any other optional additions (wait to add fresh fruit or nuts so that they stay fresh/crisp). Cover the bowl tightly with plastic (or transfer it to an airtight storage container) and refrigerate overnight or for up to 5 days.
  • When ready to serve, stir the oats and portion the desired amount into your bowl. (At this point, you can also divide the oats into individual containers and refrigerate for the week.) Top with any desired fresh fruit, nuts, or other toppings. (If placing the oats in individual jars, feel free to add toppings to each, as they will store fine this way. If storing as a single larger batch for the week, I find it is best to wait to add the fresh toppings/nuts until just before serving so that they don't all sink to the bottom.) Enjoy cold and congratulate yourself for your breakfast-planning prowess.

Steps:

  • Bring water and salt to a boil in a saucepan. Stir oats into boiling water.

1/2 cup unsalted butter (softened)
1/2 cup coconut oil (softened )
1 cup brown sugar (more or less according to taste)
2 eggs
1 tbsp vanilla extract
1 1/2 c almond flour
1 tsp baking soda
1 tbsp cinnamon
1/4 tsp ground ginger
1/2 tsp salt
1 cup Steel Cut Oats flavored or plain
1 - 2 cups dried fruit

Steps:

  • Cook oats according to direction on the package
  • While oats cook, mix flour, baking soda, cinnamon, ginger and salt in a bowlIn a large bowl, blend the butter and coconut oil.
  • Add sugar and whip until smooth. Add vanilla and one egg. Beat thoroughly. Add the second egg. Beat again.Add flour mix to egg mix. Add half at a time to avoid lumps.
  • Once the cooked steel-cut oats cool completely, add all mixes together BY HAND. Add dried fruit and any other optional grains
  • Spread batter over a parchment paper-lined half sheet pan or a pan sprayed with cooking spray.
  • Cook at 350 degrees for approximately 25 to 30 minutes until the top is brown. Allow the oat mixture to cool completely before cutting into squares.
  • The finished texture will be soft. You can also serve hot into a bowl with nuts or other toppings.

Steel cut oats and your favourite dried fruits make for a delicious breakfast that's ready and waiting for you when you roll into the kitchen for breakfast. There's absolutely no need to add any sugar to the oatmeal, as the sugars in the fruit take care of that for you. Use any combination of fruit you have on hand; I've used apples, prunes, dates, apricots, cranberries, raisins, cranberries, strawberries, and pineapple and all are great but my favourites are apple/raisin, and dates all by themselves. From the manual that came with a Cuisinart slow cooker.

3 1/2 cups boiling water
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup raisins
3/4 cup dried apple ring, cut up into small pieces
1/2 cup cut up dates
1/2 cup milk
3 teaspoons dark brown sugar (I use splenda instead of sugar)

Steps:

  • Put everything except milk into boiling water and cook over med heat for about 25-30 minutes. Oats should be tender but not mushy. There should be some definite texture to the oats. Add milk, stir well and cook about 3 min more. Serve.
