1 large onion, coarsely chopped (1 cup)
2 teaspoons finely chopped garlic

Steps:

  • In 12-inch skillet, heat oil over medium-high heat. Add onions and garlic; cook 4 to 5 minutes, stirring frequently, until onions are softened.
  • Stir in chili powder, cumin, salt, pepper and beef. Cook 6 to 8 minutes, stirring occasionally, until beef is lightly browned.
  • In 3- to 4-quart slow cooker, place beef mixture. Stir in beans, tomatoes and water.
  • Cover; cook on Low heat setting 8 to 10 hours. Stir well before serving.

2 yellow onions, diced
1 red or green bell pepper, diced
2 lbs ground beef (I use an 80/20 fat content)
8 cloves garlic, minced
3 Tbsp chili powder

1 1/2 tsp kosher salt
1/2 tsp black pepper
28 oz can crushed tomatoes ((or diced))
14 oz can tomato sauce
2 (15oz) cans dark red kidney beans, drained and rinsed

Steps:

  • To a large skillet, add oil and heat over MED to MED-HIGH heat. Add onions and bell pepper and cook, stirring occasionally, until softened and very fragrant, about 5 minutes.
  • Add ground beef and cook about 5 minutes, crumbling with a wooden spoon or potato masher, until beef is no longer pink. Drain any excess fat, and return beef mixture to skillet.
  • Add salt, chili powder, cumin and black pepper and minced garlic, and cook about a minute.
  • Transfer beef mixture to the bottom of slow cooker. Add crushed tomatoes, tomato sauce, beans and green chiles, and stir well to combine. Cover and cook on LOW for 8 hours, or on HIGH for 5-6 hours.

Steps:

  • Heat the oil in a large Dutch oven over medium. Add the onion, season with salt, and cook, stirring occasionally, until the onion is softened and translucent, about 8 minutes. Increase the heat to medium-high, add the beef and garlic, season with salt and cook, breaking the beef into crumbles with a spatula, until the beef has lost its pink color, 8 to 10 minutes. 1 red pepper, deseeded and thickly sliced
small bunch fresh coriander, stalks finely chopped
1 tbsp sunflower oil
500g/1lb 2oz beef brisket, trimmed of excess fat and cut into matchbox-size pieces
salt and freshly ground black pepper
2 fat garlic cloves, crushed
1 tsp ground cumin
1 tsp ground coriander
2 tsp hot chilli powder
1 tsp dried oregano
2 tbsp tomato purée
400g/14oz can chopped tomatoes
300ml/½ pint hot beef stock
2 x 400g/14oz can red kidney beans in water, rinsed and drained
1 cube good quality dark chocolate, minimum 70% cocoa solids

Steps:

  • Place the onion, red pepper and coriander stalks into a slow cooker.
  • Heat the oil in a large non-stick frying pan, season the beef with salt and freshly ground black pepper, then fry in two batches until golden-brown, transferring to the slow cooker when ready.
  • Add the garlic, spices and oregano to the pan juices and fry for one minute until fragrant. Stir in the tomato purée, tomatoes and stock then bring to a boil. Pour the hot sauce over the beef in the slow cooker, then cover with a lid and cook on low for seven hours. Stir in the beans, then cook the chilli for an hour more until the meat is very tender.
  • Pop the chocolate into the chilli, let it melt, then stir. Season the chilli to your taste, then scatter with the coriander and serve with rice or cornbread.

2 Tbsp chili powder
2 1/2 tsp ground cumin

1 (15 oz) can dark red kidney beans, (drained and rinsed)

Steps:

  • Heat olive oil in a large and deep non-stick skillet over medium-high heat.
  • Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
  • Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.
  • Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavor but you can drain it all if you'd prefer). Pour browned beef into slow cooker.
  • Stir in diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste.
  • Cover with lid and cook on low heat for 5 - 6 hours.
  • Stir in dark and light red kidney beans and allow to heat through, about 2 minutes. Serve warm with desired toppings.

  • Brown the vegetables: In the same pan, stir in the onions and the remaining oil. Add the garlic, chiles, bell pepper, tomato paste, and a generous pinch of salt. Cook until the vegetables start to brown, about 5 minutes.
  • Cook the chili: While the vegetables are cooking, to the slow cooker add the tomatoes, chili powder, bay leaf, cumin, allspice, red pepper flakes, and 2 cups of water; stir to combine. Add the vegetables to the bowl of meat and stir to combine, then add to the slow cooker. Stir in the vinegar. Cover and set the cooker to low; cook for about 8 hours. Check after a couple of hours. Stir and taste for seasoning. Thirty minutes or so before serving, turn the slow cooker to high and stir in the black beans and cook for an additional 30 minutes.
  • Serve: Allow it to "rest" for about 15 minutes before serving. Stir in the scallions. Taste for seasoning. Serve with any or all of the following: cheddar, sour cream, avocado, scallions, lime wedges, and tortilla chips.

1½ pounds lean ground beef or bison (may substitute ground turkey)
1 medium onion, diced
4 cloves garlic, minced
1 bell pepper, any color, diced
1 small jalapeño pepper, finely diced (seeds and membranes removed for less heat)
3 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon smoked paprika
¼ teaspoon salt, plus more to taste
¼ teaspoon ground black pepper
2 (15-ounce) cans no-salt-added tomato sauce
1 (14-ounce) can fire-roasted diced tomatoes
1 (4-ounce) can diced green chiles
1 (15-ounce) can no-salt-added kidney beans, drained and rinsed
1 (15-ounce) can no-salt-added pinto beans, drained and rinsed
1 (15-ounce) can no-salt-added black beans, drained and rinsed
¾ cup low-sodium beef broth (may substitute water or chicken broth)
1 tablespoon cocoa powder
¼ teaspoon ground cinnamon

Steps:

  • Heat a large skillet or Dutch oven over medium heat. Add the oil. When the oil starts to shimmer, add the onion, garlic, bell pepper, and jalapeno. Sauté, stirring occasionally for 5 minutes or until onions and peppers just start to soften.
  • Add ground beef, chili powder, cumin, smoked paprika, salt, and black pepper. Use a large spoon to spatula to break up the meat. Cook, stirring occasionally until beef is almost cooked through.
  • Transfer beef mixture to a 6-quart slow cooker. Add all remaining ingredients. Stir to combine. Place the lid on the slow cooker and cook on low for 8 hours (or high for 4-5 hours).
  • Taste and adjust seasonings as desired. Serve with desired toppings.

1 teaspoon hot sauce, optional
Kosher salt and freshly ground black pepper, to taste
1/2 cup sour cream
2 green onions, thinly sliced

Steps:

  • Heat olive oil in a large skillet over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. Add garlic, onion and chili. Cook, stirring occasionally, until tender, about 4-6 minutes. Place ground beef mixture into a 6-qt slow cooker.
