1/2 cup unsalted butter
1/4 cup all purpose flour
1/4 cup granulated sugar
2 eggs, well beaten
1 cup whole milk
1 (15.25-oz.) can whole kernel sweet corn, drained
1 (14.75-oz.) can creamed-style sweet corn
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees.
  • In a sauce pan, heat the butter slowly over medium-low heat, swirling the pan until it's just melted. Set it aside while you measure out the rest of the ingredients.
  • Whisk the flour into the melted and cooled butter until well incorporated. Then whisk in the sugar, eggs and milk.
  • Stir the creamed corn into the butter mixture, along with the drained whole kernel corn. Season with salt and pepper.
  • Pour into a shallow 8x8" baking dish.
  • Bake uncovered at 350 degrees for approximately 1 hour and 15 minutes, until the center is set and the corn casserole is brown and caramelized on top. Let stand for 5 minutes, serve warm.

4 eggs, beaten
2 (14.75 ounce) cans creamed corn
1 (15.25 ounce) can whole kernel corn, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a 2-quart baking dish.
  • Mix flour and sugar together in a bowl; add beaten eggs and beat using an electric mixer until smooth. Stir in creamed corn and whole corn. Pour mixture into melted butter in the baking dish; do not stir.

Creamed corn is one of my favorite comfort food dishes. Here, I've used my recipe for that dish in a different way that's perfect for gatherings with family and friends: a casserole! Boxed corn muffin mix, Cheddar cheese and sour cream are added to my creamed corn and bake up into an irresistible side dish that everyone will love.

Nonstick cooking spray, for the baking dish
8 ears fresh corn, shucked
4 tablespoons unsalted butter
1/4 cup whole milk
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
One 8.5-ounce package cornbread mix, such as Jiffy
One 8-ounce carton sour cream
2 large eggs
One 8-ounce block sharp Cheddar, shredded
2 green onions, thinly sliced, optional

Steps:

  • Preheat the oven to 350 degrees F. Coat a 3-quart baking dish with cooking spray.
  • Cut the corn kernels from the cobs (about 8 cups) and scrape the cobs to remove all the liquid. Melt the butter in a large skillet over medium heat. Add the corn, milk, salt and pepper. Simmer until the corn is softened and the mixture begins to thicken, about 5 minutes. Remove from the heat.
  • Stir together the cornbread mix, sour cream, eggs and half of the cheese in a bowl. Stir in the creamed corn. Pour the mixture into the prepared dish. Sprinkle with the remaining cheese. Bake until the casserole is browned and set, 35 to 40 minutes. Sprinkle with the green onions before serving, if desired.

2 cups spinach
2 cups creamed corn
¼ cup fresh herb, such as parsley, chives, sage, or dill, finely chopped
1 pinch cayenne pepper, optional
4 large eggs
¼ cup parmigiano-reggiano, grated, plus more to finish
flaky sea salt, to taste

Steps:

  • In a 10-inch (25 cm) cast iron skillet set over medium heat, add the olive oil, garlic, and onion, and cook until the onion is softened, 5 to 7 minutes.
  • Preheat the oven to 400°F (200°C).
  • Add the grated sweet potato, season with salt and pepper, and continue to cook until the sweet potato is tender, 8 to 10 minutes.
  • Add the spinach and stir until wilted, about 1 minute, then fold in the leftover creamed corn, herbs, and cayenne, if using.
  • Season again to taste and stir until warmed through, about 1 minute.
  • Use the back of a wooden spoon to create four small indentations for the eggs and add each egg, being careful not to break the yolks.
  • Sprinkle with Parmesan cheese and place in the oven.
  • Bake until the egg whites are just set and the top begins to turn golden, about 15 minutes.
  • Sprinkled with flaky salt, additional herbs, and additional Parmesan cheese.

500 ml sliced mushrooms
320 g canned lobster
5 ounces canned crabmeat
225 g shrimp
225 g scallops
boiling water
50 ml all-purpose flour
2 ml salt
600 ml skim milk
2 ml curry powder
15 ml Worcestershire sauce
15 ml onion flakes
1 ml pepper
125 ml cheddar cheese
125 ml dry breadcrumbs
60 ml granulated sugar
50 ml all-purpose flour
2 ml mustard powder
2 ml salt
250 ml skim milk
60 ml white vinegar

Steps:

  • Salad dressing:.
  • Stir first 4 ingredients together well in small saucepan. Mix in part of milk until smooth. Mix in rest of milk and vinegar. Heat and stir until it boils and thickens. Once cooled keep in container. Store in refrigerator. Makes 1 and 1/4 cups or 275 ml.
  • Cook scallops in boiling water for 5 minutes. Drain and add to seafood in casserole dish. Remove tails from shrimp ring and add to dish.
  • If mushrooms are dried, cover with water and soak for 10 minutes then drain.
  • Mix flour and salt and stir in milk. Add 1/2 cup of Salad Dressing, curry, Worcestershire sauce, onion flakes, pepper, grated cheese and mushrooms. Let mixture boil and thicken.
  • Add mixture to seafood, stir and cover with breadcrumbs. Bake in oven at 350°F (175°C) for 45 minutes.
