A truly incredible dessert! It's just soooo good and really easy to make. Everyone always raves about it and asks me for the recipe when I make it. Wonderful served with whipped topping or ice cream. Great for vegans!

1 (21 ounce) can cherry pie filling
½ cup all-purpose flour
½ cup rolled oats
⅔ cup brown sugar
¾ teaspoon ground cinnamon
¾ teaspoon ground nutmeg
¼ cup chopped pecans
⅓ cup melted margarine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.) Lightly grease a 2 quart baking dish. Pour pie filling into the dish, and spread evenly.
  • In a medium bowl, mix together flour, oats, sugar, cinnamon, and nutmeg. Mix in melted margarine. Spread over pie filling, and sprinkle with chopped pecans.
  • Bake in the preheated oven for 30 minutes, or until topping is golden brown. Allow to cool 15 minutes before serving.

This is filling for 4 - 6 pies, very easy, after heating and thickening, water bath for 20 minutes.See other uses listed in recipe.

3 -4 cups blackberries or 3 -4 cups huckleberries, washed
2 1/2-3 cups sugar
3 cups water
3 -4 apples, peeled, half slices
2 tablespoons lemon juice
1 teaspoon salt
3 -4 cups chopped frozen rhubarb or 3 -4 cups chopped fresh rhubarb
2 tablespoons dry tapioca
1 tablespoon cornstarch
1/2 cup cold water

Steps:

  • In large stockpot, add berries. With a potato masher,mash down a few times in the pot to release the juice. Add sugar and water.
  • Turn heat on low and stir until sugar is dissolved.
  • Peel and slice apples. Put in a ziplock bag with lemon juice and salt. Shake, Shake, Shake.
  • Add rhubarb to the stock pot, mix well and then add the apple mixture. Stir.
  • Add instant tapioca. Do not use whole Tapioca.
  • Wash pint jars and place in 9x13 pan upside down and add hot water to pan. Heat oven to 250°.
  • Fill hot water bath canner with hot water.
  • Cover and start the water to boil.
  • Increase heat to medium for the stockpot, stir and cook about 15 minutes.
  • Add 1 cup cold water. Stir.
  • In bowl, add cold water and cornstarch, stir to dissolve and then stir in hot filling. Stir and cook until thickened and glossy. Pull off the heat.
  • Fill jars, leaving 1 1/2 inch head space.
  • Stick knife down the side of the jar to eliminate any air pockets. Wipe rim of jars.
  • With hot clean damp cloth. Put hot seal on each jar and screw on ring.
  • Place filled jars in canning rack, lower into boiling water. Cover. When water starts a rolling boil over the top of lids start to time, 20 minutes. Raise rack, place jars on toweled surface. Be careful.
  • Jars are hot and you don't want to click them against each other.
  • Note: You may add sugar to taste. This recipe is slightly tart because the family likes it this way.
  • Variations of the Pie Filling after Canning:.
  • •Open one jar and add 1 cup sour cream. Serve cold or place in pie crust and bake.
  • •Open one jar and add 8 oz. cream cheese and mix well. Serve cold with cool whip or fill pie crust and bake.
  • •Use a cup or two from a canned jar and use as a swirl filling in bundt cake batter.
  • •Use as a filling between baked cake layers.

1 3/4 cups peeled chopped tart cooking apples (about 2/3 pound or 2 medium)
1/3 cup water
1/3 cup light brown sugar, firmly packed
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 tablespoon all-purpose flour
1 teaspoon granulated sugar
1 tablespoon butter
2 cups all-purpose flour
1 teaspoon salt
3/4 cup well-chilled vegetable shortening
4 -8 tablespoons ice cold water
1/2 cup confectioners' sugar (powdered sugar)
1 tablespoon milk
1/4 teaspoon vanilla extract

Steps:

  • TO MAKE THE PASTRY:.
  • Blend flour and salt in medium mixing bowl. Cut chilled shortening into 1/2-inch cubes. Cut in chilled shortening cubes into flour mixture, using a pastry blender, in an up and down chopping motion, until mixture resembles coarse crumbs with some small pea-sized pieces remaining.
  • Sprinkle half the maximum recommended amount of ice cold water over the flour mixture. Using a fork, stir and draw flour from bottom of bowl to the top, distributing moisture evenly into flour. Press chunks down to bottom of bowl with fork. Add more water by the tablespoon, until dough is moist enough to hold together when pressed together.
  • To test the dough for proper moistness by squeezing a marble-sized ball of dough in your hand. If it holds together firmly, do not add any additional water. If the dough crumbles, add more water by the tablespoonful, until dough is moist enough to form a smooth ball when pressed together.
  • Shape the dough into a ball. For ease in rolling, wrap dough in plastic wrap. Chill for 30 minutes or up to 2 days.
  • FOR THE FILLING:.
  • Combine apples and water in small saucepan. Cook and stir on high heat until mixture comes to a boil. Reduce heat to low. Simmer 5 minutes. Stir in brown sugar, cinnamon and nutmeg. Simmer 5 minutes.; stir frequently. Combine flour and granulated sugar. Stir into apple mixture. Bring to a boil. Boil 1 minute. Stir in butter.
  • Heat oven to 425ºF. Roll out refrigerated pie dough. Cut six 5 1/4-inch circles from each half (reroll circles as necessary to 1/16-inch thickness).
  • Place about 1 tablespoon apple filling on each dough circle. Moisten edges with water. Fold in half over filling. Press with fork to seal. Place on ungreased baking sheet. Prick tops with fork to let steam escape.
  • Bake 20 minutes or until golden brown. Cool 10 minutes on wire rack.
  • Combine powdered sugar, milk and vanilla in small bowl. Stir well. Drizzle over turnovers. Serve warm or cool.
  • Note: Any canned fruit pie filling can be substituted for fresh apple filling.
