15 Minute Halloumi Tomato Salad image

Whether you're in need of a lunch, a light dinner, or an appetizer to impress... This tomato halloumi salad is here for you! By using fresh, deliciously ripe tomatoes you will not need much effort to make this soar. The herbs are flexible and there are endless ways to serve this to make it work for you!

250 g halloumi cheese (sliced )
600 g mixed tomatoes*
1 Tbsp extra virgin olive oil
1 tsp balsamic vinegar
1 handful fresh chopped herbs**
Salt and pepper (to taste)

Steps:

  • Slice your larger tomatoes into thick rounds, and your smaller cherry / plum tomatoes into halves. Place in a large bowl and drizzle with the olive oil and balsamic vinegar, add salt and pepper to taste. Flip the tomatoes around to ensure they are all coated with the oil and vinegar.Chop the herbs and add them to the bowl (you can reserve some for topping the salad if you wish), again using a spoon to flip the tomatoes around and distribute the herbs. Scatter the tomatoes into a serving bowl or dish while you prepare your halloumi. Heat a large, nonstick frying pan with just a small coating of oil at the bottom. Once it's heated, add the halloumi slices and cook for 2 minutes before flipping one slice over - if it's nicely browned, you can proceed with flipping the others and letting them cook another 2 minutes on that side. If it's not there yet, just flip it back and check in another 30 seconds or so.Once the halloumi is cooked, place the slices on top of the tomatoes. Add the reserved herbs, another sprinkle of salt and pepper, and serve immediately.

4 large firm heirloom tomatoes (about 10 ounces each), cored, cut horizontally in half
2 tablespoons fresh oregano leaves, divided
2 tablespoons fresh thyme leaves, divided
5 tablespoons (about) extra-virgin olive oil, divided

Steps:

  • Arrange tomatoes, cut side up, on rimmed baking sheet. Sprinkle with salt and pepper, then 1 1/2 tablespoons each oregano and thyme leaves. Drizzle with 3 tablespoons oil. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature.
  • Prepare barbecue (medium-high heat). Brush grill rack with oil. Place tomatoes, cut side up, on rack. Cook until bottoms are charred, 3 to 4 minutes. Turn tomatoes over and grill just to sear, about 1 minute. Turn cut side up onto platter. Sprinkle with 1/2 tablespoon each oregano and thyme, then drizzle with more oil, if desired. Serve warm.

3 ripe tomatoes (about 1 pound), halved crosswise
1/3 cup extra-virgin olive oil, plus more for brushing
Coarse salt and freshly ground pepper
3 tablespoons red-wine vinegar
3/4 cup packed fresh small basil leaves, plus more for serving
1 small red onion, cut into 1-inch-thick wedges
4 portobello-mushroom caps
2 medium summer squashes or zucchini, or a combination, quartered lengthwise
8 ounces halloumi cheese (available at murrayscheese.com), cut into 4 slabs
2 small romaine-lettuce hearts, cut lengthwise into quarters
1 small head radicchio, cut into wedges

Steps:

  • Preheat grill to medium-high. Brush tomatoes with oil; season with salt and pepper. Place on grill, cut-side up; cook until marked on bottom, about 5 minutes. Chop and transfer to a bowl. Stir in oil, vinegar, and basil; season with salt and pepper.
  • Brush onion, mushroom caps, and squashes with oil; season with salt and pepper. Grill until tender and marked in spots, about 8 minutes for onion and squashes, 7 minutes for mushrooms. Meanwhile, grill cheese until softened and marked, about 1 minute a side.
  • Divide romaine hearts, radicchio, vegetables, and cheese among plates. Drizzle with dressing, top with basil, and serve immediately.

2 brown pittas , torn into pieces
5 tbsp olive oil
2 lemons , juiced
1 garlic clove , crushed
250g block halloumi , sliced
250g microwavable pouch quinoa
350g medium tomatoes , quartered
1 large cucumber , halved, deseeded and sliced
4 spring onions , sliced
½ small bunch mint , chopped
½ small bunch dill , roughly chopped

Steps:

  • Heat the grill to high. Toss the pitta pieces with 1 tbsp oil and spread out onto a baking sheet. Grill for 3-4 mins, turning halfway, until golden and crisp. Set aside to cool.
  • Meanwhile, whisk together the remaining oil with the lemon juice and garlic, then season. Heat a large griddle pan or non-stick frying pan over a high heat and cook the halloumi for 1-2 mins on each side or until lightly charred.
  • Cook the quinoa following pack instructions, leave to cool, then toss with the tomatoes, cucumber, spring onion, most of the fresh herbs and the dressing. Season to taste. Tip onto a serving plate and top with the halloumi, pitta and remaining herbs.
