- Rinse wings and dip in egg mixture, then dredge in flour.
- Heat 2 Tbsp oil in large frying pan and fry wings until browned.
- Mix sauce ingredients together until sugar dissolves.

SPICY ASIAN FRIED CHICKEN WINGS
Steps:
- Preheat the oven to 350 degrees F. Sprinkle the wings with salt and pepper and place onto a baking sheet. Place into the oven and roast until crispy and the fat has rendered out, 35 to 40 minutes. Remove from the oven and cool.
- For the glaze: In a small saucepan, combine the dark miso paste, white miso paste, 1/4 cup lukewarm water, mirin, soy sauce, sesame oil, rice wine vinegar, garlic powder, brown sugar and 1 tablespoon sambal. Bring the mixture to a simmer and cook until reduced and the sauce has slightly thickened, 5 to 7 minutes. Remove from the heat, add the honey and stir well.
- Heat a large, heavy-based pot with 3 to 4 inches of peanut oil to 350 degrees F for deep frying.
- Wash the wings under cold running water, and then drain and pat dry with some paper towels. In a large mixing bowl, mix the cornstarch, flour, garlic powder, salt and ground ginger together. Then lightly dredge the wings in the mixture. Shake off any excess, and then fry the wings, in batches, until lightly golden, 5 to 6 minutes. Drain and set aside on a wire rack.
- Toss the wings with the glaze and serve.
ROASTED ASIAN CHICKEN WINGS

- Preheat the oven to 425 degrees F and line a baking sheet with 1-inch sides with aluminum foil.
- In a large bowl, season the chicken wings with the Essence, salt and pepper, tossing to coat well. Spread the seasoned wings in the prepared roasting pan evenly and bake until browned, about 35 minutes.
- While the wings are baking, in a large skillet, combine the remaining ingredients set over medium-high heat, except the sesame seeds and green onions. Bring to a boil, stirring occasionally, until the sugar is dissolved and the liquid has reduced to a syrup, 7 to 8 minutes. Remove from the heat and cover to keep warm until ready to use.
- Remove the wings from the oven and reduce the oven temperature to 350 degrees F.
- Place the wings in a large, heat-proof bowl. Drizzle half the prepared sauce over the wings, reserving the other half, tossing to coat well. Sprinkle the sesame seeds over the wings and toss again. Place a wire cooling rack inside a large baking sheet lined with aluminum foil and arrange the coated wings on top of the rack. Return the pan to the oven and bake an additional 20 to 25 minutes, or until cooked through and crispy.
- Arrange the wings on a large serving platter and top with sliced green onions. Serve immediately with the remaining sauce passed on the side for dipping.
JAPANESE CHICKEN WINGS
I have never had wings that taste as good as these and this is the only recipe I use to make wings with. My girlfriend Betty gave me this recipe and she got it from her neighbor so it's starting to get around. Everyone that I have served these to absolutely loves them and goes well with a nice rice dish. Great for a large crowd and tastes good warmed up if there are any left overs.

- Cut wings in half and divide into 4 batches.
- Dip in slightly beaten egg and then in flour.
- Divide the butter into 4 batches.
- Melt the butter in a 2 cup measuring cup and pour only a 1/4 cup into a 10" non stick frying pan.

ASIAN STICKY WINGS

- Pour the vegetable oil to the fill line of a deep-fryer and preheat to 350 degrees F.
- Lightly dredge the wings in the potato starch and shake off the excess. Make the batter by whisking the Fry Mix with 1 cup water until smooth; the consistency should be similar to light pancake batter. Dunk the wings in the batter, allowing excess batter to drip back into the bowl.
- Carefully place the wings in the deep-fryer and fry until lightly browned and cooked to an internal temperature of 150 degrees F, about 7 minutes. Drain on a baking sheet with a rack and let rest for 2 to 3 minutes.
- Return the wings to the deep-fryer for another 3 minutes, until golden brown. Transfer to a mixing bowl, brush with just enough Sticky Wing Sauce to coat and then toss with the fried garlic and green onions. Finish with sesame seeds and serve immediately.
- In a large mixing bowl, whisk together the potato starch, flour, granulated garlic and togarashi until well combined. Store in an airtight container.
- In a large mixing bowl, whisk together the ketchup, mayonnaise, honey, chili sauce, chili oil, soy sauce, Worcestershire and 1/2 cup water until well combined.
TAILGATING ASIAN WINGS

- Preheat the oven to 350 degrees F.
- Season the wings with salt and pepper. Arrange the chicken wings on a baking sheet in a single layer. Put in the preheated oven and cook for 45 minutes.

- Stir the soy sauce, brown sugar, and garlic powder together in a saucepan over medium heat; cook and stir until the sugar melts completely. Remove from heat and allow to cool.

- Mix garlic, ginger, soy sauce, sake, mirin, sesame oil, black pepper, cayenne, sugar, and salt in a medium bowl.
- Place chicken in the marinade and mix until thoroughly and evenly coated. Cover and refrigerate for 1 to 10 hours.
- Set up your dredging station: Place a wire rack over a foil-lined baking sheet. Add potato starch to a wide, shallow bowl.

JAPANESE STYLE CRISP CHICKEN WINGS
This recipe comes from the Canadian Japanese Cookery dating back to 1983. A very simple but tasty chicken recipe.

Steps:
- Clip wing tips off and discard.
- Separate wings at joints.
- Wash and drain well.
- In a mixing bowl, whisk together salt, soy sauce, brown sugar, honey, grated ginger and minced garlic.
- Add chicken wing pieces into a large zip-loc bag.
- Pour soy sauce mixture over the wings, shake bag to coat well.
- Place bag in refrigerator and marinate for 3 to 4 hours or longer.
- When ready to use, drain well in a large sieve or a rack for at least 1/2 hour.
- In a mixing bowl, mix together flour and bread crumbs.
- Roll wing pieces in flour mixture until nicely coated.
- Deep fry in batches in hot oil in a WOK until nicely browned, about 3 to 4 minutes, stirring often.
ASIAN CARAMEL CHICKEN WINGS
Using dark caramel in savoury dishes is common in Asian cooking- it adds depth of flavour and contrasts well with sour and spicy notes

- Put the sugar in a medium sauté pan with enough water to make it go sludgy. Place on a low heat and bring to the boil, then cook until you have a dark amber caramel (see tip, below).
- At arms length, add the other ingredients, except for the chicken and garnish, and bring to a simmer - take care as it will spit. Once it has calmed down a little and you have a thick sauce, stir in the wings until well coated. Pour over 100ml water and simmer on a medium heat for about 30 mins, stirring every now and then until the sauce is a thicker consistency - add a splash more water if needed.
- Turn down the heat and continue to cook, covered, for a further 15 mins, stirring occasionally, until the wings are lacquered and tender and the sauce is very thick. Turn off the heat and quickly stir through half the spring onion, ginger and chilli. Tip the wings and sauce onto a platter. Scatter with the remaining garnish and coriander, and serve with extra lime and rice.
