These are great to serve to a crowd, you can make them ahead and keep warm in the oven. No need to add in salt to the flour mixture as the soy sauce is salty enough. Double the recipe if desired. Servings are only estimated.

3 lbs chicken wings (cut in half)
2 eggs, beaten
1 cup flour
1/2 teaspoon garlic powder (can omit)
1/2 teaspoon cayenne pepper (or to taste, use only if you like spicy!)
1 cup butter
2 tablespoons vegetable oil
3 tablespoons soy sauce
3 tablespoons water
1 cup sugar
1/2 cup white vinegar
1 teaspoon Accent seasoning (optional)
1/2 teaspoon salt

Steps:

  • Mix the flour with the cayenne pepper and garlic powder.
  • Heat butter and oil in a skillet until hot.
  • Dip the wings into the eggs, then into the flour mixture.
  • Fry the wings until deep brown and crisp, then transfer into a shallow roasting pan.
  • Mix all ingredients for the sauce.
  • Bake for about 30 minutes at 350 degrees, spooning the sauce over the wings while baking.

1 cup all-purpose flour for coating
1 cup butter
3 tablespoons soy sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut wings in half, dip in egg and coat with flour.

1 cup flour
2 eggs
1/4 water
1 cup white sugar
1 cup white vinegar
6 tablespoons soy sauce

Steps:

  • Rinse wings and dip in egg mixture, then dredge in flour.
  • Heat 2 Tbsp oil in large frying pan and fry wings until browned.
  • Mix sauce ingredients together until sugar dissolves.
  • Lay wings (not overlapping) in a 9X13 casserole dish.
  • Pour sauce over and bake 350F 1 hour (turn wings over after first 1/2 hour).
  • Continue to cook until sauce is thickened a nicely gooey.

3 pounds fresh chicken wings, tips removed and wings cut into drummette and middle "flat" with 2 bones
Kosher salt and freshly ground black pepper
1/2 cup dark miso paste
1/2 cup white miso paste
3 tablespoons mirin
3 tablespoons low-sodium soy sauce
2 tablespoons sesame oil
1 1/2 tablespoons seasoned rice wine vinegar
1 tablespoon garlic powder
1 tablespoon light brown sugar
1 tablespoon sambal (chili-garlic paste)
2 tablespoons honey
Canola oil, for deep frying
1 cup cornstarch
1 cup all-purpose flour
2 tablespoons garlic powder
2 teaspoons kosher salt
1 tablespoon ground ginger

Steps:

  • Preheat the oven to 350 degrees F. Sprinkle the wings with salt and pepper and place onto a baking sheet. Place into the oven and roast until crispy and the fat has rendered out, 35 to 40 minutes. Remove from the oven and cool.
  • For the glaze: In a small saucepan, combine the dark miso paste, white miso paste, 1/4 cup lukewarm water, mirin, soy sauce, sesame oil, rice wine vinegar, garlic powder, brown sugar and 1 tablespoon sambal. Bring the mixture to a simmer and cook until reduced and the sauce has slightly thickened, 5 to 7 minutes. Remove from the heat, add the honey and stir well.
  • Heat a large, heavy-based pot with 3 to 4 inches of peanut oil to 350 degrees F for deep frying.
  • Wash the wings under cold running water, and then drain and pat dry with some paper towels. In a large mixing bowl, mix the cornstarch, flour, garlic powder, salt and ground ginger together. Then lightly dredge the wings in the mixture. Shake off any excess, and then fry the wings, in batches, until lightly golden, 5 to 6 minutes. Drain and set aside on a wire rack.
  • Toss the wings with the glaze and serve.

1 tablespoon Emeril's Asian Essence
1 teaspoon salt
1/2 teaspoon ground white pepper
2 cups fresh orange juice
1 cup canned pineapple juice
1 cup sugar
1/2 cup soy sauce
1/2 cup mirin
2 tablespoons orange zest
2 tablespoons minced garlic
2 tablespoons minced fresh ginger

3/4 teaspoon crushed red pepper
2 tablespoons sesame seeds

Steps:

  • Preheat the oven to 425 degrees F and line a baking sheet with 1-inch sides with aluminum foil.
  • In a large bowl, season the chicken wings with the Essence, salt and pepper, tossing to coat well. Spread the seasoned wings in the prepared roasting pan evenly and bake until browned, about 35 minutes.
  • While the wings are baking, in a large skillet, combine the remaining ingredients set over medium-high heat, except the sesame seeds and green onions. Bring to a boil, stirring occasionally, until the sugar is dissolved and the liquid has reduced to a syrup, 7 to 8 minutes. Remove from the heat and cover to keep warm until ready to use.
  • Remove the wings from the oven and reduce the oven temperature to 350 degrees F.
  • Place the wings in a large, heat-proof bowl. Drizzle half the prepared sauce over the wings, reserving the other half, tossing to coat well. Sprinkle the sesame seeds over the wings and toss again. Place a wire cooling rack inside a large baking sheet lined with aluminum foil and arrange the coated wings on top of the rack. Return the pan to the oven and bake an additional 20 to 25 minutes, or until cooked through and crispy.
  • Arrange the wings on a large serving platter and top with sliced green onions. Serve immediately with the remaining sauce passed on the side for dipping.

My girlfriend Betty gave me this recipe and she got it from her neighbor so it's starting to get around. Everyone that I have served these to absolutely loves them and goes well with a nice rice dish. Great for a large crowd and tastes good warmed up if there are any left overs.

1 beaten egg
1 cup flour
1 cup butter (do not use margarine and divide into 4 batches)
3 tablespoons soya sauce

1/2 cup vinegar

Steps:

  • Cut wings in half and divide into 4 batches.

7 jumbo chicken wings
1 cup potato starch or cornstarch
1 cup Fry Mix, recipe follows
1/2 cup Sticky Wing Sauce, recipe follows
1 green onion, chopped
1 tablespoon minced garlic, fried
1 teaspoon sesame seeds
3 cups potato starch or cornstarch
1 cup all-purpose flour
1/2 cup granulated garlic
1/4 cup shichimi togarashi (see Cook's Note)
2 cups ketchup
1 cup mayonnaise
1/2 cup honey
1/2 cup hot chili sauce, such as Sriracha
1/4 cup garlic chili oil (see Cook's Note)
1/4 cup soy sauce
2 tablespoons Worcestershire sauce

Steps:

  • Pour the vegetable oil to the fill line of a deep-fryer and preheat to 350 degrees F.
  • Lightly dredge the wings in the potato starch and shake off the excess. Make the batter by whisking the Fry Mix with 1 cup water until smooth; the consistency should be similar to light pancake batter. Dunk the wings in the batter, allowing excess batter to drip back into the bowl.
  • Carefully place the wings in the deep-fryer and fry until lightly browned and cooked to an internal temperature of 150 degrees F, about 7 minutes. Drain on a baking sheet with a rack and let rest for 2 to 3 minutes.
  • Return the wings to the deep-fryer for another 3 minutes, until golden brown. Transfer to a mixing bowl, brush with just enough Sticky Wing Sauce to coat and then toss with the fried garlic and green onions. Finish with sesame seeds and serve immediately.
  • In a large mixing bowl, whisk together the potato starch, flour, granulated garlic and togarashi until well combined. Store in an airtight container.
  • In a large mixing bowl, whisk together the ketchup, mayonnaise, honey, chili sauce, chili oil, soy sauce, Worcestershire and 1/2 cup water until well combined.

1 tablespoon freshly grated ginger
1 teaspoon chili garlic paste

Steps:

  • For the wings at home:
  • Preheat the oven to 350 degrees F.

  • Combine all of the ingredients in a resealable gallon-size plastic bag and combine well.
  • For the wings tailgaiting:
  • Preheat a grill to 350 degrees F, prepared for indirect heat. Add all the wings and cook for 10 to 15 minutes to reheat and get some grill marks, turning after 7 minutes. Remove the wings from the grill to a serving bowl. Add the sauce and toss to combine.

1 quart canola oil, or as needed

Steps:

1 1/2 teaspoons salt
1/3 cup soy sauce
1/4 cup brown sugar
1/4 cup liquid honey
1 teaspoon grated fresh gingerroot
2 large garlic cloves, minced
1 cup all-purpose flour
1 cup fine breadcrumbs or 1 cup cracker crumb
2 cups peanut oil (for frying) or 2 cups vegetable oil (for frying)

Steps:

  • Clip wing tips off and discard.
  • Separate wings at joints.
  • Wash and drain well.
  • In a mixing bowl, whisk together salt, soy sauce, brown sugar, honey, grated ginger and minced garlic.
  • Add chicken wing pieces into a large zip-loc bag.
  • Pour soy sauce mixture over the wings, shake bag to coat well.
  • Place bag in refrigerator and marinate for 3 to 4 hours or longer.
  • When ready to use, drain well in a large sieve or a rack for at least 1/2 hour.
  • In a mixing bowl, mix together flour and bread crumbs.
  • Roll wing pieces in flour mixture until nicely coated.

100g golden caster sugar
4 tbsp gluten-free fish sauce
1 green chilli , halved (optional)
small piece cinnamon bark
small piece ginger , finely chopped
juice 1 large lime , plus extra for squeezing over
1kg chicken wing , tips removed and cut in half
small bunch spring onion , cut into 1cm lengths
large piece ginger , cut into matchsticks
1 green chilli (seeds removed if you don't like it too hot), cut into rings
handful coriander sprigs
boiled white rice , to serve

Steps:

  • Put the sugar in a medium sauté pan with enough water to make it go sludgy. Place on a low heat and bring to the boil, then cook until you have a dark amber caramel (see tip, below).
  • At arms length, add the other ingredients, except for the chicken and garnish, and bring to a simmer - take care as it will spit. Once it has calmed down a little and you have a thick sauce, stir in the wings until well coated. Pour over 100ml water and simmer on a medium heat for about 30 mins, stirring every now and then until the sauce is a thicker consistency - add a splash more water if needed.
  • Turn down the heat and continue to cook, covered, for a further 15 mins, stirring occasionally, until the wings are lacquered and tender and the sauce is very thick. Turn off the heat and quickly stir through half the spring onion, ginger and chilli. Tip the wings and sauce onto a platter. Scatter with the remaining garnish and coriander, and serve with extra lime and rice.
