1 tablespoon sugar
1 tablespoon butter, softened
1 1/2 cups powdered sugar
1 egg white

Steps:

  • Wash blackberries and put them in a bowl with the granulated sugar.
  • Mash the berries with a fork to bring the juices out.
  • In another bowl, mix together thoroughly the butter and powdered sugar.
  • Stir in the egg white, stiffly beaten, and add the berries just before serving.
  • You can serve this over custards, ice creams, cakes-- your favorite desserts!

This blackberry sauce recipe comes from "Preserved" by Nick Sandler and Johnny Acton. 3 cups fresh raspberries or 3 cups frozen raspberries
3/4 cup granulated sugar
4 tablespoons lemon juice
1/2 cup brandy (optional)
3 tablespoons tapioca starch or 3 tablespoons cornstarch
1/4 cup cold water

Steps:

  • In a medium size saucepan, add raspberries and sugar and bring to a boil mixing well until sugar is dissolved.
  • Strain through a very fine sieve or a cheesecloth.
  • Return puree' to saucepan.
  • Add lemon juice and Brandy and stir well.
  • In a cup, mix together tapioca starch and water until smooth.
  • Bring raspberry puree' back to boil and add tapioca starch mixture slowly using a whisk to mix well until sauce thickens to your desired consistency.
  • You may use this sauce hot or let it cool.

2 tablespoons butter
2 cups fresh blackberries
¾ cup white sugar
1 cup white sugar
½ cup butter, softened
2 eggs
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¼ cup milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt brown sugar and 2 tablespoons butter together in a saucepan over medium heat. Add blackberries to brown sugar mixture; cook and stir until mixture bubbles, 1 to 3 minutes. Stir 3/4 cup white sugar into berries, crush berries slightly with a fork, and continue cooking until berries are hot and slightly broken-down, about 5 minutes more; remove from heat and pour into a 9-inch cake pan.
  • Beat 1 cup white sugar and 1/2 cup butter together in a bowl with an electric mixer until light and fluffy; beat in eggs.
  • Whisk flour, baking powder, and salt together in a bowl. Alternately stir flour and milk into butter mixture, beginning and ending with the flour mixture. Mix vanilla into batter.
  • Pour batter over blackberry mixture in the 9-inch cake pan.
  • Bake cake in the preheated oven until cooked through, 35 to 40 minutes. Let cake cool in the pan until warm, but not completely cooled, about 30 minutes. Run a knife along the inside edge of the pan to separate cake from the sides, place a cake plate over the top of the pan, and flip the pan. Lift the pan slowly to release the cake from the pan.

  • In a medium saucepan set over medium heat, stir together sugar, lemon juice, and half the blueberries and blackberries. Bring just to a boil. Reduce heat to low, and simmer until blueberries burst and release juices, about 3 minutes.
  • In a small bowl, dissolve cornstarch in 1 teaspoon cold water. Stir into sauce. Simmer, stirring, about 1 minute more, until sauce thickens slightly. Remove pan from heat; stir in remaining berries. Transfer sauce to a serving bowl. Chill until cold; stir before serving with pie.
