CRANBERRY ORANGE COOKIES
A nice thing to have around during the holidays, but don't expect them to stay around long. These orange-flavored cranberry cookies are tart and delicious, not to mention beautiful. Not really a favorite of kids.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the egg until well blended. Mix in 1 teaspoon orange zest and 2 tablespoons orange juice. Combine the flour, baking soda and salt; stir into the orange mixture. Mix in cranberries and if using, walnuts, until evenly distributed. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Cookies should be spaced at least 2 inches apart.
- Bake for 12 to 14 minutes in the preheated oven, until the edges are golden. Remove from cookie sheets to cool on wire racks.
- In a small bowl, mix together 1/2 teaspoon orange zest, 3 tablespoons orange juice and confectioners' sugar until smooth. Spread over the tops of cooled cookies. Let stand until set.

CRANBERRY ORANGE COMPOTE

- Prepare a boiling water bath canner and enough jars to hold 4 cups of product.
- In a medium pan, combine the cranberries, orange zest and segments, orange juice, and honey.
- Put a lid on the pan, place it on the stove over high heat, and bring the liquid in the pan to a boil.
- Reduce the heat to medium-high, remove the lid, and stirring occasionally, simmer until the cranberries pop and the liquid has reduced.
- When you like the consistency of the compote, funnel it into jars, wipe the rims, apply the lids and rings, and process the closed jars for 10 minutes in a boiling water bath.
- When the time is up, pull the pot off the heat, remove the lid, and let the jars cool gradually in the water for ten minutes.
- When that time is up, remove the jars and set them on a folded kitchen towel to cool. When the jars have cooled enough that you can comfortably handle them, check the seals. Sealed jars can be stored at room temperature for up to a year. Any unsealed jars should be refrigerated and used promptly.

- Preheat oven to 375°.
- In a medium bowl cream butter, brown sugar, egg, peel, baking powder and allspice.
- Blend in flour and stir in oats and cranberry sauce.
- Drop batter from a teaspoon onto a lightly greased cookie sheet.

- Cool on racks and drizzle glaze over cookies.

CRANBERRY-ORANGE COOKIES

- Pulse the dried cranberries and granulated sugar in a food processor until the cranberries are finely ground and the sugar turns red. Add the flour, baking powder, orange zest, salt, allspice and cloves and pulse to combine. Add the butter and pulse until the mixture looks like coarse meal.
- Combine the cranberry juice, food coloring and vanilla in a small bowl and add to the food processor along with the egg; pulse until a dough forms. Transfer the dough to a bowl, cover with plastic wrap and refrigerate until firm, about 1 hour.
- Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Roll heaping teaspoonfuls of dough into balls, then roll the balls in sanding sugar and arrange about 1 1/2 inches apart on the prepared baking sheets. Bake, switching the position of the pans halfway through, until the cookies are just set on top and golden on the bottom, 18 to 24 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.

- In a small bowl, combine flour, baking soda, salt and cinnamon. In a 1-qt. glass container, layer flour mixture, brown sugar, 1/2 cup chocolate chips, cranberries, walnuts, oats and remaining chips. Cover and store in a cool, dry place up to 6 months. Yield: 1 batch (about 4 cups total)., To prepare cookies: Preheat oven to 350°. In a large bowl, beat butter, egg and vanilla until blended. - Tip the cranberries into a large pan with the orange juice and sugar, and bring to the boil. Turn down the heat to medium and bring to a gentle simmer, then continue to cook for 10 mins until the cranberries become plump and sticky.
- Tip the mixture into a blender, blitz to a purée, then return to the pan and simmer over a low heat for 5 mins until thick and jammy. Leave to cool and tip into a serving dish or jar. Will keep in the fridge for four days or freezer for up to six months.

- In 1-qt jar, place half of the flour mixture and press down firmly.

- Layer rest of ingredients, packing firmly with each addition.
- Dump jar ingredients into mixing bowl and stir until evenly distributed.
- Add egg, butter, and vanilla.
- Mix wet ingredients into dry until fully incorporated (you may use a spoon or mixer on low speed).
- Bake at 375 degrees F for 8 minutes, or until cookies begin to turn golden brown.
- Cool on baking sheet for approximately 2 minutes, then move to cooling rack.
