HAM, SWISS AND APPLE WRAPS



Ham, Swiss and Apple Wraps image

1/2 red onion, thinly sliced
1/3 cup low-fat plain yogurt
2 tablespoons chopped fresh dill or parsley
2 tablespoons honey mustard
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
1 1/2 tablespoons extra-virgin olive oil
4 ounces sliced lean ham (preferably low-sodium), torn into bite-size pieces
3 ounces sliced Swiss cheese, cut into strips
1 romaine lettuce heart, torn into bite-size pieces
1 apple, thinly sliced
4 whole-wheat wraps or tortillas
3 cups strawberries, halved

Steps:

  • Soak the red onion in a bowl of ice water, 10 minutes. Drain the onion and squeeze dry.
  • Whisk the yogurt, dill, honey mustard, and salt and pepper to taste in a large bowl. Slowly drizzle in the olive oil and 1 tablespoon water, whisking until combined. Add the onion, ham, cheese, lettuce and apple and toss to coat. Pile the ham mixture in the middle of each wrap. Fold in the sides, then roll up the wraps. Cut in half and serve with the strawberries.

3/4 teaspoon cinnamon
1/4 teaspoon pepper
4 (4 ounce) beef tri-tip steak, cut 1-inch thick
1/4 cup hoisin sauce
1 tablespoon honey
1/4 teaspoon salt
3 cups coleslaw mix (tri-color mix includes green and red cabbage and carrots)
1 granny smith apple, thinly sliced
8 (8 -10 inch) whole wheat tortillas, warmed

Steps:

  • In a small cup combine cinnamon and pepper. Press evenly onto steaks.
  • Heat a skillet over medium heat and place steaks in skillet; cook for 10 minutes or until steaks are done, turning occasionally.
  • In a large bowl combine hoisin sauce and honey.
  • Cut steaks into thin slices; season with salt.
  • Add steak slices, coleslaw mix and apple in bowl with hoisin sauce mixture; toss to coat.
  • Place equal amounts of mixture down center of each tortilla, leaving a 1 1/2 border on each side. Fold bottom edge up over filling and fold sides to center; secure with a toothpick if necessary.

1 beef top sirloin steak (1 pound), cut into thin strips
1/4 teaspoon pepper
3 tablespoons reduced-sodium soy sauce, divided
3 teaspoons olive oil, divided
1 medium red onion, cut into wedges
3 garlic cloves, minced
1 jar (7 ounces) roasted sweet red peppers, drained and cut into strips
1/4 cup dry red wine or reduced-sodium beef broth
6 tablespoons fat-free ranch salad dressing
6 flour tortillas (8 inches)
1-1/2 cups torn iceberg lettuce
1 medium tomato, chopped
1/4 cup chopped green onions

Steps:

  • In a large nonstick skillet coated with cooking spray, saute beef, pepper and 2 tablespoons soy sauce in 2 teaspoons oil until meat is no longer pink. Remove and keep warm. , Saute the onion and garlic in remaining oil for 1 minute. Stir in the red peppers, wine and remaining soy sauce; bring to a boil. Return beef to the pan; simmer for 5 minutes or until heated through. , Spread ranch dressing over one side of each tortilla; sprinkle with lettuce, tomato and green onions. Spoon about 3/4 cup beef mixture down the center of each tortilla; roll up.

6 slices bacon
1/2 cup low-fat plain Greek yogurt
1 ounce Parmesan, grated (1/2 cup)
Coarse salt
2 pieces lavash flatbread or sandwich wraps
4 teaspoons Dijon mustard
1 cooked steak, thinly sliced (reserved from Steak au Poivre with Roasted Fingerling Potatoes)
1/2 small red onion, thinly sliced
1 cup baby arugula

Steps:

  • In a large skillet, cook bacon over medium-high until fat is rendered and bacon is crisp, 8 minutes. Transfer to paper towels to drain. Meanwhile, in a small bowl, stir together yogurt and Parmesan; season with salt. Spread yogurt mixture over half of each lavash piece. Spread mustard on other half. 150g thin-cut frying steak , very thinly sliced
1 tsp mild chilli powder
2 good pinches of ground cumin
2 garlic cloves , finely chopped
2 tsp sunflower oil
1 yellow pepper , deseeded, quartered and sliced
1 red onion , thinly sliced
2 tomatoes , chopped
400g can black bean , drained
good handful fresh coriander
4 value soft tortilla wraps

Steps:

  • Put the steak in a bowl with the spices and garlic, and stir well. If you have time, leave to marinate for a couple of hrs. Heat the oil in a wok, then tip in the beef and fry for just 1-2 mins, until it changes colour but is still on the rare side. Remove the beef to a plate.
  • Add the pepper and half the onion, and stir-fry in the juices - add a splash of water to get things going and stop it burning. Stir in the tomatoes and beans, and heat through with plenty of seasoning, then stir in most of the coriander.
  • Meanwhile, heat the tortillas. The best way is directly on the gas flame, as it gives them a lovely charred flavour. Stir the beef into the beans and heat briefly. Serve with the tortillas and the reserved onion and coriander.
