TEX-MEX COLESLAW
This is from a March 1984 issue of Bon Appetit in the Food Processor section that used to be in the magazine. (I guess that's when processors were new on the cooking scene!). Although this recipe is written for the processor, it can easily be adapted to the regular slice and dice method and you could even use the packaged coleslaw mixtures. It can be prepared up to 2 days ahead.This is great with barbeque or burgers or your favorite Tex-Mex food.

Steps:
- With Steel Knife:.
- Place cilantro in work bowl;with machine running, drop garlic and jalapeno pepper through feed tube and mince finely.
- Add onion and chop finely, using on/off turns.
- Add oil,vinegar,sugar, salt and pepper and blend 3 seconds.
- Pour dressing into large bowl and set aside.
- With Thin Slicer:.
- Arrange cabbage wedges cut side down in feed tube and slice using firm pressure, transfering to the large bowl as necessary.
- Toss cabbage with dressing, cover and refrigerate.
- When ready to serve, drain excess liquid and adjust seasoning if necessary.

TEX-MEX GOULASH
This recipe makes much more than I anticipated when I made it. If you have a larger group it works out perfect. You could also freeze leftovers and just re-heat them in the oven. Be sure not to top the whole dish with torillia chips unless you are going to eat the whole thing right then. Otherwise just top each plate that is served with the crushed tortillia chips.

- Start by boiling the elbow noodles. While elbow noodles are boiling brown the ground beef and strain off any fat. Add taco seasonning, onion, strained can of corn or frozen corn, Rotel, and Jalapeno black eyed peas. Keep warm while noodles finish cooking. Strain noodles when cooked and add them to the meat mixture. Blend well then add cheese and sour cream. Stir well and keep warm serve when its dinner time. Add crushed tortillia chips to the top of each served plate. Then just eat!

Steps:
- Cook noodles in boiling water according to package; drain. Toss with the butter and keep hot and set aside.
- While noodles cook, brown and crumble the beef with the onion until no longer pink; drain if necessary.
- Add to skillet, the Rotel (undrained), corn, water, cumin, garlic powder, cayenne, pepper and salt.
- Bring to a gentle simmer and cook for about 10 minutes.
- Stir in the reduced-fat sour cream and blend well. Heat through, but do NOT allow to boil.
- Serve over the hot cooked noodles.
- Garnish with chopped cilantro.

MEXICAN COLESLAW
I took the recipe from Cooking Light and tweaked it a little. The first time I made it by the recipe it was too tart and not spicy enough so the following is what I finally came up with.

- Combine the cabbage, onion, cilantro and jalapeños in a salad bowl and set aside.
- Combine the lime juice, olive oil, sea salt and sugar and whisk until the sugar and salt are dissolved, then pour over the cabbage mixture and serve immediately.
- I do not like this dish as a leftover, it loses it's crispness and clean taste.

TEX MEX COLESLAW
All the goodness of coleslaw with a mexican twist. Started as tacos but leftovers and busy schedules made it into a one bowl quick and easy family favorite.

Steps:
- Drizzle some oil in a hot pan saute half of the minced onion and garlic. Add the ground beef 1 tsp garlic powder, onion powder, ground cumin, and a pinch of salt (or 1 package of taco seasoning). Brown, break up the clumps. Set aside when fully cooked.
- Combine cabbage, mayonnaise, lime juice, onions, tomatoes, garlic, 1 tsp cayenne, garlic powder, onion powder and ground cumin, salt to taste.
- Add cooled meat. Garnish with minced cilantro and serve with your favorite tortilla chips. Have your favorite hot sauce on hand to spice it up.
- NOTE: Add mayonnaise if you like it creamier. Instead of meat we use black beans and corn too.
