SPICY ZUCCHINI QUESADILLAS

Spicy Zucchini Quesadillas image

My family loves Mexican food, so I created this easy recipe one summer when our garden was bursting with zucchini. For milder quesadillas, use Monterey Jack instead of pepper Jack cheese. If you want them spicier, add some red pepper flakes or chopped jalapenos. -Linda Taylor Lenexa, Kansas

FIESTA BLACK BEAN QUESADILLAS

Fiesta Black Bean Quesadillas image

I found this on a healthy lifestyle website somewhere and adapted it to our taste. They were very good and filling. I made a triple batch of the salsa and a double batch of the quesadillas, as the recipe is more of a snack or lunch size serving. The salsa was good on the quesadillas, but I think it could use some additional seasoning. I'll likely play around with it and update it here if I like the results.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 20

1/2 cup chopped tomato
3 tablespoons chopped red onions
1 teaspoon minced jalapeno (or to taste)
3 tablespoons diced red bell peppers
1 teaspoon chopped fresh cilantro leaves
1 tablespoon fresh lime juice
salt
fresh ground pepper
1 (15 ounce) can black beans, rinsed and drained
2 tablespoons chopped fresh cilantro leaves
3/4 cup chopped red onion
3/4 cup chopped tomato
1 garlic clove, minced
1/4 teaspoon ground cumin
1/2 teaspoon adobo seasoning (Mexican seasoning with oregano, cumin, and other seasonings)
salt
fresh ground pepper
4 large whole wheat tortillas
1 cup low-fat monterey jack cheese
nonfat sour cream, as desired (to garnish)

Steps:

  • Make the salsa by combining all the ingredients together. Store in the refrigerator until ready to use (may be made up to 2 days ahead).
  • Heat oven to 200* F.
  • Combine the beans, cilantro, onions, tomatoes, garlic, cumin, adobo, salt and pepper in a bowl and toss to combine.
  • Lay tortillas flat. Place 1/8 of the cheese on one half of each tortilla. Top with 1/4 of the bean mixture, then with 1/8 of the cheese. Fold tortilla in half to cover filling.
  • Heat a large non-stick skillet or griddle over medium heat. Cook one quesadilla at a time, taking care not to spill while cooking or turning (use two spatulas when turning over), until lightly browned on both sides and cheese is melty.
  • Transfer each quesadilla to oven when finished to keep warm while cooking the remaining quesadillas.
  • Cut quesadillas into 4 wedges; serve hot with sour cream and salsa.

SCOUT'S BLACK BEAN QUESADILLAS

Scout's Black Bean Quesadillas image

Yes, you could bake these, and they would be lower in fat. But I think you would be missing something. If you want to lower the fat amount, but still have the right taste, use a nonstick skillet and nonstick spray instead of butter or margarine. There's not really any "passive" cooking time, since while one is cooking, you're getting the next one ready, so the Prep time is my estimate for the whole amount of time. Makes 4 main dish servings.

Categories     Cheese

Time 25m

Yield 4 serving(s)

Number Of Ingredients 6

1 (15 ounce) can black beans, drained and rinsed
1 cup salsa
1 cup shredded cheese (your choice, my fave is a cheddar, monterey jack, colby, and pepper jack blend)
1/2 teaspoon salt
8 (8 inch) flour tortillas
4 tablespoons butter or 4 tablespoons margarine

Steps:

  • Mash black beans in a medium bowl slightly. You want some chunks left in it. Mix in salsa, cheese, and salt.
  • Heat skillet over medium heat. Spread 1/2 T. butter on one side of 2 tortillas.
  • When skillet is hot, lay one tortilla in it, buttered side down. Spoon one quarter of bean mixture onto tortilla and spread evenly to edges. Lay second tortilla on top, butter side up.
  • When bottom tortilla is brown and crisp, flip. When second tortilla is brown and crisp, remove from pan and allow to cool before cutting into wedges.
  • Repeat for three more quesadillas.

GRILLED CORN, ZUCCHINI, AND BLACK BEAN QUESADILLAS

Yield Serves 4

Number Of Ingredients 21

For the grilled vegetables:
2 ears of corn, unshucked
1 medium zucchini, halved lengthwise
2 tablespoons olive oil, divided
Kosher salt and freshly ground black pepper
1 bunch scallions (reserve 1 scallion for salsa)
For the salsa:
1 avocado, diced
1 scallion, thinly sliced
1/2 pint (1 cup) cherry tomatoes, coarsely chopped
2 tablespoons coarsely chopped fresh cilantro
2 tablespoons fresh lime juice
1/2 teaspoon kosher salt
Pinch of cayenne pepper
For the quesadillas:
4 (8-inch) flour tortillas
1 1/2 cups shredded Monterey Jack cheese
1 (15-ounce) can black beans, drained, rinsed
2 tablespoons vegetable oil, divided
Cilantro leaves with tender stems (for serving)
Lime wedges (for serving)

Steps:

  • Grill the vegetables:
  • Prepare a grill for medium-high, direct heat, preferably with hardwood or hardwood charcoal. Grill corn over direct heat, turning to cook evenly, until kernels are tender, about 20 minutes. Let corn steam in its husk 10 minutes, then shuck and cut kernels from cob. Transfer kernels to a large bowl.
  • While corn is grilling, brush cut sides of zucchini with 1 Tbsp. olive oil, then sprinkle with salt and pepper. Toss scallions with remaining 1 Tbsp. olive oil and a pinch of salt and pepper. Grill zucchini and scallions over direct heat, turning occasionally, until tender and lightly charred, 8-10 minutes. Let cool slightly. Coarsely chop zucchini and scallions, then toss with corn. Season with salt and pepper.
  • Make the salsa:
  • Combine avocado, scallion, tomatoes, cilantro, lime juice, salt, and cayenne in a medium bowl.
  • Assemble the quesadillas:
  • Arrange tortillas on a work surface. Dividing evenly, layer cheese, then beans, then grilled vegetables on one side of each tortilla. Fold tortillas in half to create half-moons.
  • Heat 1 Tbsp. vegetable oil in a large heavy skillet over medium-low until hot, then cook 2 tortillas, turning once, until cheese is melted and tortillas are brown, 1-2 minutes per side. Transfer quesadillas to serving plates, then cook remaining tortillas with remaining oil. Sprinkle quesadillas with cilantro leaves and serve with salsa and lime wedges alongside.
  • Do Ahead
  • Vegetables can be grilled, covered, and chilled for up to 3 days.
