FRUIT SALAD - AMBROSIA STYLE
My Mother made this salad for every Thanksgiving and Christmas Dinners. I remember looking forward to this the most, as a kid, as I loved the marshmallows and the fruit. My Mom made a big bowl of this and added shredded coconut to half of it and left the other without for those of us non-coconut lovers. This is so quick and easy yet so tasty and refreshing, especially with a big heavy holiday meal. I also found out that this is a common Hawaiian Luau side dish. Time does not include chilling time.

Steps:
- Drain all cans of fruit.
- In a large bowl add drained fruit, marshmallows, sour cream and coconut if using. Mix well to combine.
- Refrigerate for at least 6 hours, overnight if possible. This allows the juices to blend with the marshmallows and sour cream.
- One hour before serving, slice bananas and add to rest of the fruit, stir to combine.
- If it seems to dry add a little more sour cream.
- Enjoy!

- Combine in a medium bowl the tuna, lime juice, coconut milk, cucumber, scallions, optional chile and coconut, salt, and pepper. Refrigerate 30 minutes to 1 hour. Mix in the tomato and serve right away.

Steps:
- Preheat oven to 375°F.
- Puree the bananas in a blender or food processor. It should yield 4 cups.
- Mix the brown sugar and arrowroot or cornstarch together. Add in the vanilla and combine with the bananas and process well. There should not be any lumps of starch. Adjust the sugar to your liking.
- Pour the mix in a buttered 2-quart baking dish.
- Bake for 30-45 minutes, or until the pudding is firm and bubbling.
- Remove from oven and allow to cool. Cover with plastic wrap and refrigerate until well chilled.
- Once chilled, cut into cubes and place them into a large serving bowl or in individual bowls.
- Top with a dollop of coconut cream and a little more brown sugar and serve.

Steps:
- Peel and thinly slice pineapple. Peel and quarter kiwis, remove white parts and cut green parts into small cubes.
- Peel and filet orange, keeping the juice.
- Mix fruits with sugar, rum, orange and lemon peel, set aside.
- Mix 5 tablespoons of fruit juice with starch, heat rest of the juice and stir in the dissolved starch.
- Bring to a light boil, add fruits and let simmer for about 10 minutes.
- Pour into 4 serving bowls, let cool and chill for 3 hours.
- Serve with desired garnish.
