12 slices white bread
3/4 cup mayonnaise
8 romaine lettuce leaves
16 slices vine-ripened tomatoes
Kosher salt and freshly ground black pepper
16 slices crispy cooked bacon
16 ounces sliced roasted turkey
16 frill picks, or plastic cocktail swords
Potato chips
Sweet pickles

Steps:

  • Toast the bread in a toaster, or under a broiler on both sides. Cut the lettuce leaves in half crosswise and form into 8 neat stacks.
  • To make a double-decker club: On a clean work surface, arrange 3 bread slices in a row. Spread 1 tablespoon mayonnaise over 1 side of each bread slice. Place a lettuce stack on top of the first bread slice, top with 2 tomato slices, and season with salt and pepper, to taste. Place 2 slices bacon over the tomatoes (broken to fit neatly if necessary) and top with 1/8 of the turkey (without letting any hang over the sides). Season the turkey with salt and pepper, to taste. Repeat with the second bread slice. Carefully place the second layered bread slice on top of the first layered bread, turkey side-up. Cover with the third bread slice, mayonnaise side-down.
  • Pin the sandwich's layers together by piercing them with 4 frill picks or cocktail swords through the top bread slice, in 4 places in a diamond-like pattern, all the way to the bottom bread slice. Repeat entire process with the remaining ingredients to form 3 more sandwiches.
  • Using a serrated knife cut each sandwich, diagonally, into 4 triangular pieces (each piece should be secured in the center with a pick or sword). Serve with potato chips and pickles.

Steps:

  • Spread mayonnaise over 1 side of each slice of toast. Place 1 lettuce leaf and 1 chicken slice on each of 6 toast slices.
  • Cover with second toast slice, mayonnaise side up. Top with lettuce leaf, 3 slices tomato and 2 slices bacon. Sprinkle with salt and pepper.
  • Cover with third toast slice, mayonnaise side down; secure with wooden picks. To serve, cut diagonally into triangles.

2 boneless skinless chicken breasts (1/2 lb)
4 thin slices Canadian bacon
2 kaiser rolls, cut horizontally into thirds
3 tablespoons reduced-fat mayonnaise
4 leaves lettuce

Steps:

  • Heat gas or charcoal grill. To flatten each chicken breast, place between 2 sheets of plastic wrap or waxed paper. Working from center, gently pound chicken with flat side of meat mallet or rolling pin until about 1/4 inch thick; remove wrap.
  • When grill is heated, carefully oil grill rack. Place chicken on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 6 to 8 minutes, turning once, until chicken is no longer pink in center. During last 5 minutes of cooking time, heat bacon on grill, turning once, until hot. If desired, during last 3 minutes of cooking time, toast kaiser roll pieces, cut side down, on grill.
  • Spread cut sides of roll pieces with mayonnaise. Cut each chicken breast into 2 pieces. For each sandwich, on bottom section of roll, place 2 chicken pieces, overlapping if necessary. Top with lettuce leaf, tomato slice and middle section of roll. Place 2 Canadian bacon slices on top of middle roll section. Top with lettuce leaf and top section of roll. Press each sandwich slightly; spear each with 2 long toothpicks. Cut sandwiches in half between toothpicks.

¼ cup of balsamic vinegar
¼ cup of olive oil
1 teaspoon of sugar
1 cup of mayonnaise
½ cup of shredded Asiago cheese
2 tablespoons of tomato paste
2 tablespoons of red wine vinegar
¼ cup of julienne sun dried tomatoes
2 tablespoons of chopped fresh basil
Kosher salt and fresh cracked pepper to taste
1 loaf of bread
1 pound of cooked crisp bacon
½ pound of deli sliced ham
½ pound of sliced and cooked Canadian bacon ham
6 leaves of butter leaf lettuce
4 thinly sliced vine ripe tomatoes
2 peeled and seeded mashed avocados
1 pound of sliced or shredded mozzarella cheese
1 cup of microgreens

Steps:

  • Preheat the oven to 375°.
  • Chicken: Remove the chicken breasts from the marinade and season them on both sides with salt and pepper.
  • Heat a very large frying pan over medium-high heat and add in the chicken breasts. Cook for 3 to 4 minutes, or golden brown and then flip the chicken over and add the pan to the oven and cook for 8 to 10 minutes or until browned and cooked throughout. Rest for 2 to 3 minutes on a cutting board before slicing.
  • Onions: Place the onions on a sheet tray and place in the oven at 375° for 30 minutes.
  • In a medium bowl whisk together the balsamic vinegar, olive oil, and sugar and baste the onions using a brush every 5 minutes. Remove the onions once they are done cooking.
  • Spread: Whisk together the mayonnaise, Asiago cheese, tomato paste, red wine vinegar, sun-dried tomatoes, basil and salt, and pepper until combined. Cool before serving.
  • Chicken Club Assembly: Toast 3 pieces of Cobblestone Million Dollar White bread and layer the sandwich as followed: mozzarella cheese, sliced chicken breasts, balsamic onions, lettuce, tomato, toast, mashed avocado, bacon, ham, microgreens, spread, toast.
  • Chicken Melt Assembly: Place the slices of Million Dollar White bread on a griddle. Once brown flip over and add cheese to each slice. Layer on as followed: bacon, Canadian bacon, sliced chicken breasts, onions, and spread and place on the other sliced of toasted cheese melted bread.

2 slices streaky bacon
1 small chicken breast (or 2 slices leftover roast chicken)
3 slices bread
1 tbsp mayonnaise
2 Little Gem or soft green lettuce leaves

Steps:

  • Heat a frying pan over a medium heat. Add a drizzle of oil, then the bacon slices to the pan and fry for 5-10 minutes, turning the bacon every so often, until it is crisp and browned all over. Transfer to a plate lined with kitchen paper.
  • Slice the chicken breast horizontally in two, so you have two thinner pieces. Season with salt and pepper, then fry the chicken in the hot bacon fat over a medium-high heat until they are browned and completely cooked through.
  • Meanwhile, toast the bread to your liking. Spread each slice with a teaspoon of mayonnaise. Build the sandwich by adding lettuce leaves and tomato slices to the bottom piece of toast, season with salt and black pepper, then top with a slice of the crisp hot bacon.
  • Slice each large piece of chicken breast into 4 or 5 equal pieces on a diagonal so they are easy to spread across the sandwich.
  • Place the second piece of toast on top, then repeat the layering again finishing with the final piece of toast. Cut the sandwich diagonally in both directions to create 4 triangles, securing each with a cocktail stick.

1 teaspoon anchovy paste

Steps:

  • Start to cook the bacon so that it becomes crisp. In a blender or food processor puree the olives, mustard, anchovy paste, olive oil, vinegar, and garlic; season to taste with salt and pepper and adjust amount of vinegar for tang.
  • Toast the bread lightly. Remove bacon to paper towels to drain.
  • To assemble, spread each slice of bread with olive mixture, on one side only. Set some bacon on bottom of bread, then top with tomato and onion slices, chicken and cucumber; salt and pepper each layer lightly as you go. Top with bread, mayonnaise side down; repeat with second layer of fillings and finish with third slice of bread, olive mixture side down. Assemble the second sandwich in the same way.

  • In a small skillet or frying pan, cook bacon strips on medium high heat until crispy. Turn and cook both sides, then remove from skillet or pan and set on paper towel to drain excess fat and allow to cool for assembling the club sandwich.
  • In a small to medium sized skillet or frying pan, bring olive oil to medium high heat and pan sear the chicken breast (either pre-cut chicken tenders, cut into strips yourself, or cook a whole chicken breast and cut once done). 3 ounces of chicken breast
1 cheddar

  • Grill the chicken breast for about 6 minutes per side and then slice it.
  • Fill a saucepan with water and add in the egg. Set the pan over high heat and bring to a boil. As soon as the water comes to a boil, remove the pan from heat and cover the pan. To get a hard-boiled egg, leave it in the pan for about 10-15 minutes. When ready, slice it in quarters.

The endless flavour possibilities keep it original. The California style club is a popular and lower carbohydrate option to popular diner styles because it omits the third layer of bread. The avocado spread is also a healthier alternative to traditional butter and mayonnaise.

8 Blue Ribbon sandwich squares
12 pieces chicken chilli loaf
Sliced tomato
Sliced cheese (optional)
2 large potatoes (cut into fat chips)
4 pieces chicken fillet
½ teaspoon salt
½ teaspoon white pepper
½ teaspoon chicken spice
1 tablespoon lemon juice
Pinch ground green

Steps:

  • 1. Marinate chicken in spices, lemon and chilli. 2. Drizzle oil on a grill pan and heat. 3. Fry chips. Season with salt or chips spice. 4. Cook chicken till done on each side. Leave aside. 5. Lightly fry off chilli loaf 6. Toast bread lightly. 7. Squirt on sauce and place down lettuce. 8. Place down chicken and a tomato slice. 9. Add on more sauce, fries, chilli loaf, more sauce. 10. Now close with another slice of bread, serve with a skewer inserted.

This chicken club sandwich is an updated version of a classic. It has lemon grilled chicken, lots of bacon, loads of tomatoes, and an avocado ranch spread.

For Chicken:
4 boneless skinless thin chicken breasts
¼ cup olive oil
¼ cup lemon juice
2 tsp sugar
2 minced cloves garlic
2 tsp dried Italian herb seasoning
1 tsp kosher salt
½ tsp black pepper
For Avocado Ranch Spread:
1 cup sour cream
1 pitted, flesh removed and roughly chopped ripe avocado
2 tsp lemon juice
1 tbsp roughly chopped, or 1 tsp dried dill fresh dill
2 tbsp roughly chopped Fresh Parsley
1 tbsp sliced Green Onions
to taste salt and pepper
For Sandwich:
4 sandwich rolls
8 slices cooked bacon
3-4 thinly sliced heirloom tomatoes
1 cup or 4 leaves of romaine or butter lettuce microgreens

Steps:

  • Chicken:
  • Mix together the olive oil, lemon juice, sugar, garlic, Italian herb seasoning, salt and pepper in a large resealable bag.
  • Add the chicken and marinate for at least 1 hour, up to 8 hours.
  • Heat a grill to medium-high. Grill the chicken for 6 to 8 minutes per side until done. Slice into thin strips. The chicken can also be cooked inside on a grill pan.
  • Avocado Ranch Spread:
  • Combine all ingredients in a food processor; process until completely smooth.
  • Assemble:
  • Slice rolls in half. Toast the rolls if desired.
  • Spread 2 tablespoons of the avocado ranch sauce on the bottom piece of bread. Add 2 slices of bacon and sliced chicken. Top with sliced tomatoes and greens. Add more ranch spread to the top of the roll if desired.
