Truly the best black bean chili recipe!! It ultra-quick and easy to make (less than 10 mins prep time), it's naturally gluten-free, vegetarian, vegan (although you can add meat if you'd like), it only calls for 8 main ingredients, and it's SO flavorful and delicious.

Number Of Ingredients 11

1 pound dry black beans, rinsed and picked over
1 medium white onion, peeled and diced
6 cloves garlic, peeled and minced
6-8 cups vegetable stock (or water*)
2 cups (16 ounces) salsa verde, homemade or store-bought
1 (15-ounce) can fire-roasted diced tomatoes
1 (12-ounce) jar roasted red peppers, drained and diced
1 tablespoon ground cumin
2 teaspoons chipotle chili powder**
salt and pepper, to taste
toppings: diced avocado, chopped fresh cilantro, diced red onion, shredded cheese, sliced jalapeños or serranos

Steps:

  • Add black beans (no need to pre-soak), onion, garlic, 6 cups stock, salsa verde, diced tomatoes, roasted red peppers, cumin, chili powder, and a pinch of salt and pepper to the bowl of your Instant Pot. Stir to combine.
  • Close lid securely and set vent to "Sealing".
  • Press "Manual", then press "Pressure" until the light on "High Pressure" lights up, then adjust the +/- buttons until time reads 38 minutes. Cook. Then very carefully, turn the vent to "Venting" for quick release, and wait until all of the steam has released and the valve has dropped. Remove the lid, and give the soup a good stir.
  • Then, if you would like a brothier soup, feel free to add in 1-2 extra cups of vegetable stock. (If not, leave the soup as-is.) Taste, and season with extra salt and pepper as needed.
  • Serve immediately, garnished with lots of your favorite toppings. Or transfer to sealed containers and refrigerate for up to 3 days, or freeze for up to 3 months.

  • Heat 1 tablespoon oil (extra ingredient for stovetop version) in a large stockpot over medium-high heat. Add onion and sauté for 5 minutes, stirring occasionally, until translucent. Add garlic and sauté for 1-2 more minutes, stirring occasionally, until fragrant.
  • Add in beans (pre-soaked overnight***) 6 cups stock, salsa verde, diced tomatoes, roasted red peppers, cumin, chili powder, and a pinch of salt and pepper. Stir to combine.
  • Continue cooking until the soup reaches a simmer. Then reduce heat to medium-low, cover, and cook for 45 minutes, or until the beans are completely tender, stirring occasionally.
  • If you would like a brothier soup, feel free to add in 1-2 extra cups of vegetable stock. (If not, leave the soup as-is.) Taste, and season with extra salt and pepper as needed.
  • Serve immediately, garnished with lots of your favorite toppings. Or transfer to sealed containers and refrigerate for up to 3 days, or freeze for up to 3 months.

1 large onion, chopped
1 medium green pepper, chopped

1/4 cup olive oil
2 cups chopped onions
1 2/3 cups coarsely chopped red bell peppers (about 2 medium)
6 garlic cloves, chopped
2 tablespoons chili powder
2 teaspoons dried oregano
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
3 15- to 16-ounce cans black beans, drained, 1/2 cup liquid reserved
1 16-ounce can tomato sauce
Chopped fresh cilantro
Sour cream
Grated MontereyJack cheese
Chopped green onions

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onions, bell peppers, and garlic; sauté until onions soften, about 10 minutes. Mix in chili powder, oregano, cumin, and cayenne; stir 2 minutes. Mix in beans, 1/2 cup reserved bean liquid, and tomato sauce. Bring chili to boil, stirring occasionally. Reduce heat to medium-low and simmer until flavors blend and chili thickens, stirring occasionally, about 15 minutes. Season to taste with salt and pepper.
  • Ladle chili into bowls. Pass chopped cilantro, sour cream, grated cheese, and green onions separately.

1 1/2 cups black bean paste, Lee Kum Kee brand
1 cup chili-garlic sauce, Lee Kum Kee brand
4 tablespoons brown bean sauce
4 tablespoons oil
1 cup shaoxing wine
1/2 cup oyster sauce
4 tablespoons dried garlic, pieces
4 tablespoons dried ginger, small cubes
3 tablespoons dried onion, small cubes

Steps:

  • Place the black bean into a colander and run over with hot water and let the black bean drain until dry. Place the dry black bean into a lightly oil nonstick skillet and toast the black bean over a medium heat until well toasted. Place the toasted black bean into a stainless bowl and cool down room temperature.
  • Combine all of the ingredients into the black beans and blend together and spoon into a glass jar and seal and place the refrigerator for three days before use.

3 -4 tablespoons olive oil
2 lbs lean ground beef
1 -2 teaspoon crushed red pepper flakes (or to taste)
1 1/2 lbs sirloin, cut into about 1-inch cubes
2 tablespoons chopped fresh garlic
2 cups water (or use 1 cup water and 1 cup beer)
2 -3 tablespoons cumin (can use more to taste)
2 -3 tablespoons chili powder (I use ancho chili powder in place of the chili powder)
3 teaspoons dried oregano
1 tablespoon salt (or to taste)
1 teaspoon cayenne pepper (can use more)
3 (6 ounce) cans tomato paste (YES 3 cans!)
1 tablespoon sugar
3 -4 medium tomatoes, diced (use very red and ripe tomatoes for this)
2 large onions, chopped
2 green bell peppers, chopped
4 cups black beans, rinsed and drained
2 cups beef broth (more if needed to thin)
grated cheddar cheese

Steps:

  • Heat oil in a large heavy pot.
  • Add in ground beef; cook for 5 minutes.
  • Add in the cubed sirloin, crushed red pepper flakes and fresh garlic and brown about 5 minutes.
  • Add in 2 cups beer or water; bring to a boil.
  • Add in cumin, ancho chili or chili powder, oregano, salt and cayenne pepper; reduce the heat, cover and simmer for about 15 minutes.
  • Add in tomato paste and sugar; simmer for 5-6 minutes.
  • Add in chopped tomatoes, onions and green peppers; simmer for about 50-60.
  • Add in drained black beans, beef broth, starting with 2 cups adding in more to thin to desired consistancy; simmer for 20-25 minutes, stirring occasionally.
  • Ladle into bowls and sprinkle with cheddar cheese.

4 garlic cloves, finely chopped
2 large onions, chopped
3 tbsp sweet pimenton (Spanish paprika) or mild chilli powder
3 tbsp ground cumin
3 tbsp cider vinegar
2 tbsp brown sugar
2 x 400g (2 x 14oz) cans chopped tomatoes
2 x 400g (2 x 14oz) cans black beans, rinsed and drained
a few, or one, of the following to serve: crumbled feta cheese, chopped spring onions, sliced radishes, avocado chunks, soured cream

Steps:

  • In a large pot, heat the olive oil and fry the garlic and onions for 5 mins until almost softened. Add the pimenton and cumin, cook for a few mins, then add the vinegar, sugar, tomatoes and some seasoning. Cook for 10 mins.
  • Pour in the beans and cook for another 10 mins. Serve with rice and the accompaniments of your choice in small bowls.
