BISQUICK SAUSAGE EGG CASSEROLE
This recipe uses Bisqick instead of bread. I like that egg substitute is used for most of the eggs. You can totally change it up with different cheeses, meats & spices. Oh, & I love fresh Roma tomatoes on top! Adapted from a TOH recipe.

Steps:
- Combine sausage, onions, Bisquick, cheese & spices.
- In a huge bowl, whisk eggs, egg substitute & milk together.
- Stir sausage mixture into egg mixture.
- Pour into greased 9x13 pan.
- Bake @ 350 degrees for 50-60 minutes until a knife inserted into center comes out clean.

Steps:
- Preheat oven to 400 degrees.
- Spray 9 x 1 1/4 inch pie plate, or 8x8x2 inch casserole dish with cooking spray.
- Brown sausage, green pepper and onion in a 10-inch skillet over medium heat, 8 to 10 minutes, stirring occasionally, until sausage is no longer pink. Drain.
- Mix sausage mixture, potatoes, and 1/2 cup of the cheese.
- Spread in pie plate.
- Stir remaining ingredients in medium bowl with wire whisk or fork, until blended. Pour into pie plate.
- Bake 30 to 35 minutes, or until knife inserted in center comes out clean.
- Sprinkle with remaining 1/2 cup cheese.
- Bake 1 to 2 minutes longer, or just until the cheese is melted.
- Let stand 5 minutes before serving.
- Top with salsa and/or sour cream.
- Note: For more servings, double all ingredients, use a 13x9x2 baking dish, and bake 35 to 40 minutes.

Steps:
- Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
- In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
- The next day, preheat the oven to 350 degrees F.
- Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.

SAUSAGE AND PANCAKE CASSEROLE

- Preheat oven to 350°. In a large skillet over medium heat, cook and crumble sausage until no longer pink, 5-7 minutes; drain. Mix biscuit mix, milk, eggs and oil until blended; stir in sausage. BISQUICK EGG, SAUSAGE AND MUSHROOM CASSEROLE
I made this recently, it was really good! I added in some cayenne pepper to the sausages, but that is optional. Use the small pork breakfast sausages for this or you can use Italian sausages, casings removed.

- Set oven to 375 degrees.
- Butter a 13 x 9-inch baking pan.
- In a bowl stir together Bisquick mix with milk and 4 tablespoons mayo; whisking vigorously to combine; spread into the baking dish (the batter will be thick).
- In a skillet brown the sausage, onion and garlic with 3 tablespoons oil; (crumbling the sausage with a wooden spoon as it browns)season with pepper to taste.
- Sprinkle the sausage mixture evenly over the Bisquick batter in the baking dish, then sprinkle the sliced mushrooms over the sausage mixture.
- In a bowl whisk eggs with 1/3 cup mayonnaise and chilies until well blended.
- Add in the shredded cheese; mix to combine, then spoon over the meat (you don't have to cover completely).
- Sprinkle with grated Parmesan cheese.
- Bake for about 35-40 minutes.

- Heat a large skillet over medium-high heat; cook and stir the sausage in the hot skillet until crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Grease a 9x13 inch baking dish. Spread the bread cubes into the prepared dish; sprinkle the browned sausage and Cheddar cheese overtop.
- Beat the eggs in a mixing bowl until smooth; add the salt, mustard powder, and 2 cups of milk and whisk until evenly blended. Pour the egg mixture over the bread cubes. Cover and refrigerate overnight.
