AMISH HAM LOAF

Similar to meatloaf, this Amish Ham Loaf is made with ground ham and pork, seasoned with curry powder, ground ginger, and nutmeg then glazed with a sweet and sour sauce.

Number Of Ingredients 16

1 pound ground ham (about 3 cups)
1 pound ground pork
2 to 2 1/2 cups soft white bread crumbs
2 large eggs
3/4 cup sour cream
1/2 cup finely chopped onion
2 TBSP lemon juice
1 tsp. curry powder
1 tsp. ground ginger
1/2 tsp. ground nutmeg
2 TBSP yellow mustard
1/2 cup brown sugar
1/4 cup cider vinegar
1/4 cup water
1/2 tsp. fresh ground black pepper
Ketchup (optional)

Steps:

  • Preheat oven to 350 degrees F. Prepare a broiler pan by covering the bottom portion in foil. Replace the slotted top and spray lightly with cooking spray. Set aside.
  • In large bowl, with hands, combine the ground ham, ground pork, and 2 cups soft bread crumbs.
  • In medium bowl, whisk together the eggs, sour cream, onion, lemon juice, ginger, nutmeg, and mustard.
  • Pour wet ingredients into bowl with ham/pork/breadcrumb mixture and combine with hands until it all comes together. If it feel too wet, add the rest of the breadcrumbs.
  • Shape into an oblong loaf onto prepared broiler pan. Let sit for about 30 minutes before putting into oven.
  • Bake for 30 minutes. Baste with 1/2 the glaze. Return to oven and bake for another 15 minutes. Baste with the remainder of the glaze. Return to oven for another 15 to 25 minutes. Top with ketchup, if desired, and pop into oven for another couple of minutes.
  • Let rest for 15 minutes before slicing.
  • Combine all glaze ingredients except ketchup in a small saucepan and heat to boiling. Take off heat and use as directed in the Ham Loaf instructions above.

My husband loves when I make this. I have my local deli grind me fresh pork, and smoked ham...is so yummy with scalloped potatoes, and fresh green beans ...I have also made small ham balls, baked, then crock pot with glaze, and had as an appetizer..never any left.

1 lb ground smoked ham
1 lb ground fresh pork
1 c bread crumbs or cracker crumbs (fine)
2 eggs
3/4 to 1 c milk
1 medium onion diced finely
1 small red bell pepper diced finely (optional) i like the sweetness, and gives nice color
GLAZE
3/4 c brown sugar
1 tsp dry mustard ( i use a little extra, as we like it with a little bite
1/2 c water
1/2 c vinegar

Steps:

  • 1. Ham Loaf : Mix all the ingredients. Shape in a loaf and place in a roasting pan or casserole dish. Bake at 350 degrees for about 1 1/2 hours. After 1/2 hour pour the following sauce over the loaf
  • 2. Glaze: Mix and bring to a boil, reduce heat and simmer till starts to thicken a bit..about 10 min. I sometimes double the sauce, when using it for the meatballs in the crock pot..

2 - 3 lb ham loaf mix or equal parts of ground ham and ground pork
2 eggs, beaten
1/2 medium onion, chopped small
Salt & pepper to taste
1 c crushed saltine crackers
1 c milk
2 Tbsp dried parsley flakes
1 Tbsp mustard
GLAZE
1 1/2 Tbsp prepared mustard
3/4 c brown sugar
3 Tbsp vinegar
2 Tbsp water
1/2 Tbsp dried mustard

Steps:

  • 1. Preheat oven to 350 degree F. In a large bowl, mix milk and cracker crumbs. Let crackers absorb milk a few minutes. Mix all remaining ingredients until well blended. Spray a 9 x13 baking dish. Dump in the mixture and shape into loaf as you would for mess loaf. Place in oven and bake for 1 hour.
  • 2. While baking, place all glaze ingredients into a small saucepan. Bring to a boil, then simmer for a few minutes, stirring often, until sugar is dissolved and starting to thicken some, remove from heat.
  • 3. After hamloaf has baked 1 hour, glaze top and continue baking another 15 minutes. Glaze again, then serve hot. The remaining glaze can be served with.

1 cup dry bread crumbs
1/4 teaspoon pepper
1-1/2 pound ground fully cooked ham
1/2 pound ground pork
GLAZE:
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/2 teaspoon ground mustard
2 tablespoons water

Steps:

  • In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

Number Of Ingredients 17

1 lb ground ham
1 lb ground sausage or 1 lb pork
2 cups soft breadcrumbs
2 eggs
1 cup sour cream
1/3 cup onion, chopped
2 tablespoons lemon juice
1 teaspoon curry powder
1 teaspoon ground ginger
1 teaspoon prepared mustard
1/8 teaspoon nutmeg
1/8 teaspoon paprika
1 cup brown sugar
1/2 cup water
1/2 cup cider vinegar
1/4 teaspoon black pepper
cornstarch, to thicken as needed

Steps:

  • Have meat ground together for one 2 lb.
  • combination mixture; bring to room temperature.
  • (not included in prep time) Preheat oven to 350 degrees.
  • In large bowl, lightly but thoroughly combine meat and bread crumbs; use your hands if necessary.
  • In medium bowl, beat eggs, add sour cream, onion, lemon juice and spices.
  • Mix well, pour over meat mixture and blend together.
  • Form mixture into loaf and place in well oiled shallow baking dish.
  • Bake uncovered for 1 hour.
  • NOTE: This mixture isn't packed into a loaf pan, it is a free standing long loaf shape.
  • Meanwhile, prepare basting sauce.
  • In a small saucepan, mix all ingredients and bring to a boil.
  • Thicken with some cornstarch mixed with water; as needed.
  • When ham loaf has baked for 45 minutes, remove from oven and drain off grease.
  • Spoon sauce over ham loaf and continue baking another 15 minutes.
  • Baste every few minutes with sauce until done cooking.
  • Let sit for at least 10 minutes before cutting to allow loaf to retain shape.
  • Enjoy!

Of course in our area, many of the markets and butcher/meat shops, sell ham loaf meat (already ground and mixed) but I've simplified this by making it possible for all of you outside of the area to create your own! 1 lb ham, ground (or turkey ham)
1 cup breadcrumbs
1 egg
1 teaspoon salt
1/8 teaspoon pepper
3/4 cup milk

1/2 cup water
1/4 cup vinegar

Steps:

  • Grind meat (if necessary).
  • Mix ground meats, breadcrumbs, egg, salt, pepper and milk together.
  • Shape into a loaf.
  • Bake at 350 degrees Fahrenheit for one hour.
  • For the sauce, mix the brown sugar, dry mustard, water and vinegar together.
  • Pour sauce over loaf.
