DELICIOUS PECAN PATTIES
A vegetarian delight. Very versatile I know non-vegetarians who absoulutely love this recipe. Try it!

Steps:
- Crumble tofu and knead all ingredients together.
- Form into patties.
- Fry slowly in pan.
- Cover with mushroom soup and bake @ 350 for 30 minutes. Or serve as is with your favorite gravy.
- If desired you may substitute walnut pieces for pecan meal.
- You may add one handful of Brewer's yeast.
- May add extra oats and water.

BESS LONDON'S PECAN TASSIES
Steps:
- With an electric mixer, beat the 1/2 cup butter and the cream cheese until smooth. Add the flour and beat until fully combined. Cover the bowl with plastic wrap and chill in the refrigerator for 1 hour.
- Preheat the oven to 325 degrees F. Spray a 24-cup mini-muffin pan with cooking spray.
- In a large mixing bowl, whisk together the melted butter, egg, brown sugar, vanilla and salt until smooth. Set aside.
- Shape the chilled dough into 24 balls, about 1 inch in diameter. Press each ball into a cup of the muffin pan, spreading evenly and up the sides, then spoon 1 teaspoon of the pecans into each muffin cup. Fill each cup with the egg mixture until evenly distributed, about 1 teaspoon in each. Bake until the filling is set, about 25 minutes. Cool on a wire rack for 10 minutes, and then remove from the muffin pan.
BILL'S PECAN PATTIES
Steps:
- In large bowl combine beaten eggs and softened cream cheese with fork. Cream cheese should be in pea sized chunks (not blended or whipped). Add remaining ingredients to form a thick mixture. Cracker or bread crumbs may be added to thicken. Form into patties about 1-1/2" in diameter. Heat approx. 1/2" canola oil in frying pan on medium heat. Fry patties in frying pan until browned. Approx. 3 min. on each side. place in 13x9 cassarole dish. Mushroom Sauce: Combine sour cream, mushroom soup and milk in med. sauce pan stir over low - med. heat til' smooth. pour over patties and bake @ 350 til bubbly (approx 30 min.). serve immed.
UNCLE BILL'S SOUTHERN STYLE PECAN PIE
I have been making Pecan Pies for many years. I now bake the pie in a casserole dish and serve it cut into squares.

Steps:
- Preheat oven to 400 F.
- In a mixing bowl, combine graham wafer crumbs, vanilla wafer crumbs and 1/2 cup of chopped pecans; mix well.
- Add 6 tablespoons of butter or margarine and using a pastry blender, work the mixture until crumbs are formed.
- Prepare a 9" x 13" x 2" deep, oven-proof casserole dish by spraying the inside with a vegetable oil.
- Dust inside with 3 tablespoons of all-purpose flour, discarding any excess flour.
- Spoon crumb mixture into casserole dish and using a potato masher that has square slots, press to about 1/4" thickness.
- Using a rounded spoon, press the crumb mixture 3/4 of the way up the sides to about 1/4" thickness.
- In a preheated 400 F oven, bake for 15 minutes to set the crust.
- In the meantime, in a large bowl, combine brown sugar and flour.
- Add eggs one at a time and whisk well until smooth.
- Add corn syrup, melted butter, salt and vanilla extract and whisk well to blend.
- Add raisins and 2 cups of chopped pecans and stir well to mix.
- Layer the bottom with 1 cup of whole pecans in no particular pattern; just random.
- Spoon mixture carefully over the pecans.
- Some of the pecans may float and this is okay.
- Reduce oven heat to 375 F and bake for 35 to 40 minutes or until the filling is slightly puffed and golden brown.
- Remove from oven and cool on a wire rack.
- When cooled, refrigerate until ready to serve.
- Serve with a dollop of whipped cream or a scoop of icecream.

VEGETARIAN COTTAGE CHEESE PATTIES
Delicious addition to any menu. Don't be scared of the name. I hate cottage cheese but love these.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Beat eggs into a large bowl. Stir in cottage cheese, rolled oats, wheat germ, dry onion soup mix, and dried thyme. Form into 8 patties.
- Heat oil in a skillet over medium heat. Place patties in oil, and brown on both sides. Remove patties to a 9x13-inch baking dish.
- Pour condensed soup into a small bowl. Stir in 1/2 can of water (or milk) to dilute, then pour over patties.
- Bake in a preheated oven until the soup is bubbly, about 20 minutes.

WILD-RICE PECAN PATTIES
As per Betty Crocker "These patties are absolutely delicious served in sandwich buns with cranberry sauce". Or can be served with steamed broccoli on the side. Taken from Betty's Quick and Easy cookbook. I haven't tried them yet, but will soon.

- Mix all ingredients together except oil.
- Heat oil in 10-inch skillet over medium heat.
- Scoop wild rice mixture by 1/3 cupfuls into skillet; flatten to 1/2 inch thick.
- Cook about 3 minutes on each side or until light brown.
- Remove patties from skillet; cover and keep warm while cooking remaining patties.

UNCLE BILL'S HAMBURGER PATTIES
I cooked these patties for a Fund Raiser and served over 260 persons, both young and mature. They were a tremendously big hit with all.

Steps:
- In a large mixing bowl, mix together ground round, beaten eggs, onions, soda crackers, garlic powder, salt, pepper and barbecue sauce. Mix until well incorporated.
- Weigh out hamburger patties to 6 - 7 ounce each.
- Press together and flatten to about 3 1/2" in diameter or use a mold.
- The patties should be about 3/4" thick.
- Using a round wooden spoon handle (about 1/4" round), make a hole in the center of the hamburger pattie.
- In a frying pan over medium-high heat, heat olive oil.
- Place 3 patties into the hot oil and fry for about 2 to 3 minutes, the hole will begin to close.
- Turn patty over and continue to fry for about 2 to 3 minutes.
- The hole that was made in the pattie will fill in when the hamburger is cooked through properly.
- Check for doneness to make sure there is no pink showing.
- NOTE: If the burger mixture does not hold together when squeezed, add some milk and mix to blend.
- Serve in a nice large bun that is warmed and buttered with a spread of mayonnaise, Dijon mustard, a slice of sweet onion, a slice of a large tomato, and a leaf of lettuce.
- A slice of Swiss cheese layered on the burger patty is great.
- A pickle of your choice adds an additional touch.
- Fry some mushrooms and spread some over the top of the bun.
- Fried caramalized onions are a good added touch.
- This makes a fantastic hamburger.
MUSHROOM PECAN BURGERS

- In a food processor, mince mushrooms and parsley. Remove and set aside.
- In a sauté pan over medium heat, warm 1 tablespoon (15 ml) olive oil and cook onions and garlic for 5 to 6 minutes. Transfer onion mixture to a large-size bowl, and combine with minced mushrooms and parsley, bread crumbs, tahini, hoisin sauce, chopped nuts, tamari, oregano, sage, salt, and pepper.
- Place mixture in refrigerator for at least half an hour. Mixture will be soft, but you should be able to form patties. Add additional bread crumbs or tahini, if needed.
- Create patties using your hands. In a sauté pan, warm remaining 1 tablespoon (15 ml) oil, and fry patties over medium heat for 3 to 5 minutes on each side, until lightly browned and crispy. Be careful to keep patties intact.
