GREENS WITH PICKLED CRANBERRIES AND BUTTERMILK DRESSING

1/4 cup apple cider vinegar
1 teaspoon sugar
Kosher salt
2/3 cup dried cranberries
3 tablespoons unsalted butter
4 teaspoons finely chopped fresh sage
5 slices pumpernickel bread, cut into 1-inch pieces
Freshly ground pepper
1/3 cup buttermilk
1/3 cup sour cream
2 tablespoons mayonnaise
2 teaspoons dijon mustard
1 small clove garlic, finely grated
1/2 cup fresh dill
1/4 cup fresh parsley
4 scallions, thinly sliced
1 head Bibb lettuce, leaves halved if large
3 heads baby lettuce (such as Little Gem), leaves halved if large

Steps:

  • Combine 1/3 cup water, the vinegar, sugar and a big pinch of salt in a small microwave-safe bowl or liquid measuring cup. Add the dried cranberries. Microwave until the liquid starts to simmer, 1 1/2 to 2 minutes. Let the cranberries sit in the liquid for 30 minutes to pickle slightly, then drain.
  • Meanwhile, preheat the oven to 375 degrees F. Combine the butter and sage in a small microwave-safe bowl and microwave until melted, about 1 minute. Toss with the bread pieces on a baking sheet; season with salt and pepper and spread in a single layer. Bake, tossing halfway through, until crisp, 15 to 20 minutes.
  • Make the dressing: Combine the buttermilk, sour cream, mayonnaise, mustard, garlic, 1/4 cup dill, the parsley, 1 scallion, 3/4 teaspoon salt and a few grinds of pepper in a food processor. Pulse to make a smooth dressing.
  • Gently toss the lettuces and the remaining 1/4 cup dill and 3 sliced scallions with the dressing in a large bowl; season with salt and pepper. Sprinkle with the cranberries and croutons and gently toss.

1/2 cup olive oil
2 tablespoons white wine vinegar
2 tablespoons orange juice
1 tablespoon Dijon mustard
12 Bibb lettuce leaves
2 avocados, peeled, seeded, sliced
1/4 cup dried cranberries
Wedge of Asiago or Parmesan cheese

Steps:

  • Whisk oil, vinegar, orange juice, and mustard in small bowl to blend. Season dressing with salt and pepper.
  • Place 3 lettuce leaves on each of 4 plates. Arrange sliced avocados and cranberries atop lettuce. Using vegetable peeler, shave cheese and sprinkle atop each salad. Drizzle salads with dressing.

2 tablespoons white wine vinegar
1 tablespoon grated orange peel
6 cups mixed baby greens
3 oranges, peel and white pith removed, segmented
3/4 cup pecans, toasted

Steps:

  • Bring 1 cup orange juice to simmer in heavy small saucepan. Remove from heat. Mix in dried cranberries. Let stand until softened, about 30 minutes. Drain well; discard soaking juice.
  • Whisk oil, vinegar, orange peel and remaining 3 tablespoons orange juice in small bowl to blend. Mix in cranberries. Season dressing to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before serving.)
  • Place greens in large bowl. Toss with 2/3 of dressing. Divide greens among 6 plates. Add orange segments to bowl; toss with remaining dressing. Top salads with orange segments and pecans.

Green goddess dressing was invented in the 1920's at San Francisco's Palace Hotel as a tribute to William Archer's hit play, The Green Goddess. It gets it's bright green color from lots of fresh green herbs. This dressing was originally made with tarragon, but has been updated with basil, which actually has more flavor! Delicious on green salad, but also great served with vegetables like asparagus and broccoli. Adapted from the Barefoot Contessa at Home cookbook.

1 cup good quality mayonnaise (Hellman's is good)
1 cup chopped scallion, white and green parts (6-7 scallions)
1 cup chopped fresh basil leaf
1/4 cup fresh lemon juice (about 2 lemons)
2 teaspoons minced garlic (2 cloves)
2 teaspoons anchovy paste (optional-I don't use)
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1 cup light sour cream
3 heads bibb lettuce
2 -3 tomatoes

Steps:

  • Plaace the mayonnaise, scallions, basil, lemon juice, garlic, anchovy paste(if using), salt and pepper in a blender and blend until smooth. Add sour cream and process just until blended. If you are not using immediately, chill the dressing until ready to serve.
  • Cut each head of lettuce into quarters, remove some of the cores and arrange on 6 salad plates. Cut the tomatoes into wedges and add to plates. Pour on the dressing and serve. Enjoy!

1 medium green bell pepper, seeded, deveined, and cut into 1/4-inch dice
1 small onion, cut into 1/4-inch dice
1/2 cup Worcestershire sauce

1/2 cup packed light-brown sugar
2 tablespoons yellow mustard

Steps:

  • Heat oven to 350 degrees. Combine ingredients in a large, shallow baking dish or a bean pot. Stir to combine. Bake uncovered for 45 minutes. Stir, and cook for an additional 30 minutes. Serve warm.
