2 14.5 oz cans chicken broth
2-3 large carrots, peeled and diced
4 medium potatoes, peeled and cubed into small pieces
1 tsp onion powder
2 small heads broccoli (washed and diced small)
3 Tbsp butter
1/3 c flour
3 1/2 c cups milk
4 c shredded cheddar cheese
1 tsp salt
1/2 tsp garlic pepper
6 slice bacon, cooked and chopped

Steps:

  • 1. In a large pot combine chicken broth, carrots potatoes and onion powder. Bring to a boil, cover and simmer for about 10 minutes. Add broccoli, cover and simmer for an additional 10 minutes.
  • 2. While simmering, melt butter in a large sauce pan. Whisk in the flour and cook for another minute (or until golden brown). Whisk in milk and cook for an additional 5 minutes until the sauce thickens. Add cheese and stir until it is all melted. Add salt and garlic pepper.
  • 3. Pour cheese sauce into the large pot and stir until well combined. Add more milk for a thinner consistency and add any additional salt and pepper needed. Top with bacon pieces. Serve warm.

1/4 cup onion, chopped
1/4 cup margarine or 1/4 cup butter
1/4 cup flour
1 teaspoon salt (or to taste)
1/4 teaspoon white pepper (or to taste)
1 cup chicken broth
2 1/2 cups milk
2 cups chopped broccoli, cooked crisp-tender
1 -2 cup shredded cheddar cheese
1/4 cup chopped celery

Steps:

  • Saute onion and celery in butter in saucepan over medium heat until tender.
  • Add flour, and salt and pepper, cooking and stirring until mixture is smooth and bubbly.
  • Add broth and milk (all at once), stirring constantly until mixture comes to a boil and begins to thicken.
  • Add cooked broccoli (I like to steam mine then cool in cold water to preserve color), stirring until all is heated through.
  • Remove from heat and stir in cheese until melted and smooth (place back on heat briefly if necessary).

This outstanding broccoli-cheddar soup is rich, cheesy and packed with flavor. We decided to puree just over half the soup which makes it extra thick and creamy, and left the remainder chunky so there are broccoli bits in every bite. Gild the lily with more shredded cheese on top to satisfy your comfort food craving.

4 tablespoons unsalted butter
1 medium yellow onion, diced
1 large carrot, diced
2 cloves garlic, minced
1/4 cup all-purpose flour
2 cups half and half
4 cups low-sodium chicken broth
4 cups broccoli florets (from about 1 head)
2 bay leaves
1/4 teaspoon freshly grated nutmeg
Kosher salt and freshly ground pepper
1 large russet potato (about 8 ounces)
8 ounces mild yellow Cheddar, shredded (about 2 cups), plus more for serving

Steps:

  • Melt the butter in a large saucepan or Dutch oven over medium-high heat. Add the onion, carrot and garlic and cook, stirring occasionally, until just tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, broccoli, bay leaves, nutmeg, 1/2 teaspoon salt and few grinds of black pepper Bring to a boil, then reduce to medium-low and simmer, uncovered and stirring occasionally, until the broth has thickened and the broccoli is very tender, about 15 minutes.
  • Meanwhile, prick the potato all over with a fork and put on a microwave-safe plate. Microwave on high until tender, flipping halfway through, about 6 minutes. Let cool, then peel. Use a fork or potato masher to mash until crumbly.
  • Reserve 2 cups of the soup in a liquid measuring cup and discard the bay leaves. Let the remaining hot soup cool for 5 minutes or so, then transfer it to a blender, filling no more than halfway. Add the mashed potato. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters, and pulse until very smooth.
  • Stir the pureed soup and reserved 2 cups of soup back into the pot. Whisk in the cheese until melted and smooth. Season with salt and pepper. Ladle into serving bowls and top with more shredded Cheddar.

4 cups frozen hash brown potatoes, cube style
1 cup frozen chopped broccoli
1 (14 ounce) can chicken broth or 1 (14 ounce) can vegetable broth
1 cup water
1 1/2 cups milk
3 tablespoons flour
10 ounces Velveeta cheese, cubed
1 1/2 teaspoons black pepper
crumbled bacon, to garnish
sour cream, to garnish
chopped green onion, to garnish

Steps:

  • Place potatoes, broccoli, broth, and water in large pot.
  • Heat to a boil, then cover and lower temperature to low-med.
  • Simmer for 20 minutes.
  • Combine milk and flour, stirring until smooth.
  • Add milk, cheese and pepper to pot and stir frequently until cheese is completely melted.
  • Transfer soup to individual bowls for serving.
  • Spoon a dollop of sour cream in the center of each bowl.
  • Top with bacon and onion.

Oh, my this is the most wonderful soup!! Can't say enough good things about it. It comes from my church cookbook, FUMC in Alvarado, Texas. Note: it did not say if the cream cheese was 8 oz or 3 oz. size, so you can decide, I used an 8 oz. I really think the cream cheese makes the great taste. This is a very rich soup if made as directed, I use a little bit more milk to thin it some and make it not quite so rich.

1/4 cup onion, chopped
2 cups milk
1 lb Velveeta cheese, cut in cubes
2 cups cooked broccoli
1/4 cup margarine
2 cups chicken broth
2 tablespoons flour
1 (8 ounce) package cream cheese
salt and pepper, to taste
garlic salt, to taste

Steps:

  • Cook broccoli in separate sauce pan. I cooked the onions with the broccoli. Drain and set aside.
  • In a large dutch oven add milk, Velveeta cheese chunks and softened cream cheese. Cook until melted.
  • Note: this is a very rick soup and I use a little more than 2 cups of milk, to thin it some.
  • Mix the flour with the chicken broth and add to the melted cheeses.
  • Add the cooked broccoli and onions to cheese.
  • Season with salt, pepper and garlic salt.
  • Continue to cook until all is well blended.
  • Note: There were no cooking instructions so this is pretty much how I cook it. You may want to change it up the way you put the ingredient together, but this worked well.

This is a yummy and easy soup to throw together. Cheese compliments broccoli and potatoes so well. Ultimate comfort food when the weather starts to get colder. I love to serve it with homemade rolls or bread and a salad. I make it with skim milk to cut back on calories but feel free to substitute whole milk or half-and-half for a creamier soup. If I'm really short on time, I just throw in a can of diced, already cooked potatoes towards the end of the cooking time until they are heated through. If you want a thicker soup, just add desired amount of flour mixed until smooth with an equal amount of water. Mmmmmm....

1 package (12 ounces) frozen broccoli florets, thawed

  • Combine the hash browns and garlic in a 5- or 6-qt. slow cooker. In a large bowl, whisk the sour cream, flour, pepper and nutmeg until smooth; stir in stock. 1/2 lb. red potatoes (about 2), cubed
1/8 tsp. ground red pepper (cayenne)

Steps:
