SIMPLE PERFECT ENCHILADAS

Steps:
- In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
- While the sauce is simmering, brown the ground beef with the onions in a large skillet over medium-high heat. Drain the fat, add the salt and stir to combine. Turn off the heat and set aside.
- In a small skillet over medium heat, heat some canola oil. Lightly fry the tortillas just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
- Preheat the oven to 350 degrees F.
- Spread 1/2 cup of the sauce in the bottom of a 9- by 13-inch baking dish. Next, one at a time, dip each tortilla into the sauce. Set the sauce-soaked tortilla on a plate. Place on some of the meat mixture, chilies, green onions and black olives. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
- Place the tortilla seam side down in the baking dish. Repeat with the rest of the tortillas and pour the remaining sauce over the top. End with a generous sprinkling of cheese and any other bits of chiles, green onions or olives you have left over from the filling.
- Bake the enchiladas for 20 minutes, or until bubbly. Sprinkle chopped cilantro over the top and serve.
BEEF ENCHILADAS
Steps:
- For the filling: In large pot, cook ground beef, black pepper, chili powder, garlic powder and cilantro over medium heat until beef is browned all the way through.
- For the gravy: In a large pot on low heat, add flour and vegetable oil. Cook, stirring often, for 30 minutes, to make a dark brown roux for the gravy. Add 1/4 cup water, the beef bouillon, chili powder, garlic powder, black pepper and salt. Continue to cook until you have the consistency for the gravy, another 5 minutes.
- For the enchiladas: Heat a griddle or grill on medium heat. Spray cooking spray or put oil on griddle. Place tortillas on griddle until pliable for folding, about 15 seconds.
- Place tortillas on a flat surface. Add meat to a tortilla and roll up, keeping the seam side down. Place on a microwave/oven-safe plate. Repeat until all tortillas are used.
- Spoon gravy over enchiladas until covered. Top with Cheddar and place in microwave or oven until cheese melts. Top with onions, if using.

- Spread 2 cups (500 mL) chili in 13 x 9-inch (3 L) baking dish; set aside.
- Spoon 1/2 cup (125 mL) chili onto centre of each of 8 small flour tortillas. Roll up; place seam side down in baking dish. Spoon remaining chili over enchiladas. Sprinkle with 1 cup (250 mL) shredded Cheddar cheese.

CHILI STUFFED ENCHILADAS
Very simple, hearty and delicious take on enchiladas. The last time we made enchiladas, we ran out of the chicken mixture we were using for the filling...but we had some leftover chili, so my resourceful DH used that to stuff the last tortilla. The results were fabulous! Tonight, it was chili filling all the way!!

Steps:
- Preheat oven to 350°F.
- Warm tortillas for about 30 seconds in microwave, enough to make them soft and pliable.
- Pour enough enchilada sauce to just cover bottom of greased 9 x 12 glass baking dish.
- Fill each tortilla with about 1/3 cup chili (no need to warm up if you are using leftovers). Roll each tortilla and place seam side down in the sauce-lined pan.
- Pour remaining enchilada sauce over the stuffed tortillas, being sure to completely cover all of them. Use a spoon to spread over any exposed areas.
- Warm queso slightly then drizzle lightly over tortillas.
- Finish by topping with shredded cheese.
- Bake at 350F for 30 minutes, until sauce is bubbly.
- Serve with a dollop of sour cream, if desired.
CHIPOTLE BEEF ENCHILADAS
Variations of this recipe have been floating around the Internet for awhile. I do not know the original source, but it was a bit different than this. This is how we like it.

- Preheat oven to 375 degrees F. Spray a 13x9 inch pan with cooking spray.
- In a large skillet over medium heat, melt butter. Stir in flour and stir over medium to make a roux. Cook until roux turns brown. Remove pan from heat & slowly stir in broth and enchilada sauce. Add the spices, garlic, chiles, adobo sauce & honey.
- Simmer uncovered or partially covered for 20 minutes. Whisk in sour cream.
- Working one tortilla at a time, soften tortillas in a small amount of hot oil. Place about 1 tablespoon of onions, 1 tablespoon cheese and 1/4 cup chicken in each tortilla. Roll tortillas and place seam side down in prepared dish. Pour sauce over top. Cover with foil and bake for 25 minutes. Remove foil. Sprinkle with remaining cheese and bake another 12-15 minutes or until bubbly.

GARLIC CHILI-BEEF ENCHILADAS
Usually enchiladas are made using corn tortillas, I make this recipe using flour tortillas my family prefers them better. No need to double the sauce recipe this makes lots of sauce, and can be prepare the enchilada sauce early in the day to use later but it will thicken on standing just heat slightly, stirring over low heat before using, if you prefer a thinner sauce then you might want to give recipe#168653 a truy! For the beef mixture I really don't even bother to measure, if you prefer a more beefy flavor then increase the beef bouillon powder, the success of this recipe will depend on your taste, the amounts stated are only a guideline, start with the amounts listed and adjust all ingredients to taste. I like to also add in drained black beans to the ground beef mixture but that is only optional.

Steps:
- Butter a 13 x 9-inch baking dish.
- To make the sauce; heat butter in a saucepan over medium-low heat; add in garlic, chili powder, cumin, orgeano, 2 teaspoons seasoned salt and cayenne pepper and flour, cook stirring for 2 minutes.
- Add in canned beef broth and bring to a boil; whisking/stirring until bubbly and thickened.
- Add in tomato sauce; simmer for about 4-5 minutes over low heat.
- Adjust all seasonings to taste; remove from heat.
- Spread about 1-1/2 cups of the sauce into the buttered baking dish; set the remaining sauce aside.
- For the filling; in a skillet cook the ground beef with onions, garlic and jalapeno pepper until no longer brown; drain all fat.
- Add in flour, chili powder, cumin, oregano, beef bouillon powder, Worcestershire sauce, seasoned salt and black pepper; cook for 2 minutes.
- Add in stewed tomatoes then break up the tomatoes with a fork; bring to a simmer; cook uncovered for about 25 minutes (adjusting seasoning to taste).
- After the 25 minutes cooking time add in 1 cup shredded cheddar cheese; stir until melted then remove from heat.
- To assemble the enchiladas; spread about 1/4-cup pf the beef mixture down the center of each flour tortilla, then sprinkle with 2-3 tablespoons shredded cheddar cheese (or to taste).
- Roll up tightly and place seam-side down over the sauce in the baking dish.
- Drizzle the remaining sauce over the enchiladas.
- Cover and bake in a 350 degree oven for about 12-15 minutes or until heated through (do not overcook or the tortillas will become soggy).
- Remove from oven and sprinkle with about 1 cup grated cheddar cheese and return to bake uncovered for another 8 minutes or until the cheese has melted.
- Let stand for about 20 minutes or more before serving.

- To prepare enchilada sauce, in medium saucepan, combine sauce ingredients.
- Simmer 30 minutes.
- (Cast iron skillets work well for following) To prepare beef filling, in large skillet, cook ground beef and onion (you may sprinkle with additional chili powder) and drain.
- Add 3/4 cup enchilada sauce to meat and cook low 10 minutes or until sauce absorbed.
- To assemble enchiladas, in ungreased skillet, heat each tortilla low heat, ~15 seconds per side, dip in sauce, fill with ~2 Tbsp beef filling and roll up.
- Place seam side down in 12 x 8 inch baking dish.
- Cover enchiladas *evenly* with remaining sauce. Sprinkle with cheeses and bake uncovered at 350 for 30 minutes.

- Preheat oven to 350.
- Brown ground beef drain put back in pan.
- Add about 3/4 can of chili to ground beef.
- Add i little bit of water to the 1/4 chili thats left in the can and stir should be a little runny put aside.
- Add cubed velveeta to ground beef and chili.
- Add about 1 cup of shredded cheese to ground beef, chili and velveeta.
- Heat mix in large skillet on medium until all the cheese is melted.
- Grease lightly a 9 x 13 casserole pan.
- Spoon meat chili cheese mix into tortillas ( about 2 spoonfuls in each).
- Roll them up and place in casserole dish ( should fit 8 to 10).
- If anything was left of ur meat chili cheese mix add to the can of chili u had set aside, stir and if needed add little mre water to remake runny not to thin ( to cover tortillas).
- Spoon that over all tortillas should cover all of them.
- Sprinkle remaining shredded cheese on top.
- Put in oven and Bake for 15 mins or until cheese on top is melted.
