SLIDERS

Sliders image

Provided by Ina Garten

Categories     appetizer

Time 35m

Yield 4 to 5 servings

Number Of Ingredients 13

2 pounds premium ground beef (80 percent lean and 20 percent fat)
1 tablespoon good Dijon mustard
3 tablespoons good olive oil, plus extra for brushing the grill
1 teaspoon chopped thyme leaves
3 teaspoons chopped garlic
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
6 ounces grated Gruyere
12 small Brioche buns
4 ounces baby arugula
3 medium tomatoes, sliced in 1/8-inch-thick rounds
2 small red onions, sliced in 1/8-inch-thick rounds
Ketchup, for serving

Steps:

  • Build a charcoal fire or heat a gas grill.
  • Place the ground beef in a large bowl and add the mustard, olive oil, thyme, garlic, salt, and pepper. Mix gently with a fork to combine, taking care not to compress the ingredients. Shape the meat into 12 (2-inch) patties of equal size and thickness.
  • When the grill is medium-hot, brush the grill grate with oil to keep the sliders from sticking. Place the sliders on the grill and cook for 4 minutes. Turn the sliders over with a spatula and cook for another 4 to 6 minutes, until medium-rare, or cook longer if you prefer the sliders more well done. For the last 2 minutes of cooking time, place 1/2-ounce Gruyere on the top of each burger and close the grill lid. Remove the sliders to a platter and cover with foil.
  • Slice the buns in half crosswise and toast the halves cut side down on the grill.
  • Divide the baby arugula among the 12 bottom buns, top each with a slider, and finish with a slice of tomato and red onion. Cover with the top of the bun and serve hot with ketchup.

CLASSIC BEEF SLIDERS

Classic Beef Sliders image

Beef sliders get a sweet upgrade on soft Hawaiian rolls, which are both kid- and adult-friendly. Add thin slices of grilled pineapple to complement the bread, if you like.

Provided by Food Network Kitchen

Categories     main-dish

Time 25m

Yield 4 to 6 servings (12 sliders)

Number Of Ingredients 10

1 1/2 pounds ground beef
Kosher salt and freshly ground black pepper
Vegetable oil, for brushing the grill grates
3 slices Cheddar, cut into quarters
12 Hawaiian sweet rolls, such as King's Hawaiian, split
2 tablespoons ketchup
2 tablespoons mayonnaise
1 tablespoon yellow mustard
12 small pieces romaine or iceberg lettuce (about the same size as the rolls)
12 dill or bread-and-butter pickle chips

Steps:

  • Prepare a grill or grill pan for medium-high heat.
  • Divide the ground beef into 12 portions (about 2 ounces each). Pat each into a 1/2-inch-thick patty and make an indentation in the center with your thumb so the patties keep their shape while cooking. Sprinkle with salt and a few grinds of pepper.
  • Brush the grill grates or grill pan with oil. Grill the patties, turning once, until nicely browned but still a bit pink inside, 2 to 3 minutes per side. Top each patty with a piece of cheese and grill until melted, about 1 minute.
  • Arrange the sweet rolls cut-side up on a cutting board or large serving platter. Spread some ketchup, mayonnaise and mustard on each roll bottom. Top with a piece of lettuce and a burger patty. Put a pickle on each patty and sandwich with the remaining roll tops.

BEEF SLIDERS

Beef Sliders image

A real-deal beef slider isn't just a tiny hamburger, which is what you get at the vast majority of restaurants. To be authentic, it has to be steamed over a bed of onions, bread, and all. You can change up the toppings, but I love them best with the traditional pickles and onions.

Categories     Appetizers and Snacks     Meat and Poultry     Beef

Time 1h25m

Yield 3

Number Of Ingredients 15

4 tablespoons mayonnaise
2 tablespoons Sriracha sauce
1 tablespoon pickle juice
1 teaspoon prepared yellow mustard
1 teaspoon garlic powder
1 teaspoon white sugar
½ teaspoon salt
1 tablespoon olive oil, or as needed
1 white onion, thinly sliced
1 pound ground beef
1 tablespoon hamburger seasoning
1 teaspoon Worcestershire sauce
3 slices American cheese
1 dill pickle, sliced
6 slider rolls, halved

Steps:

  • Mix mayonnaise, Sriracha, pickle juice, mustard, garlic powder, sugar, and salt together in a bowl for comeback sauce. Refrigerate for 1 hour. Set aside 6 teaspoons for sliders; refrigerate remaining sauce for another use.
  • Coat the bottom of a deep pan with a thin layer of oil. Heat over medium heat. Add onion in about a 1/2-inch layer across the whole pan. Cover and let cook until fragrant, 3 to 4 minutes. Reduce heat to medium-low, stir, and re-cover.
  • While onion is cooking, combine beef, seasoning, and Worcestershire sauce in a bowl. Shape into 6 small patties.
  • Toss onion around the pan so as not to burn one side. Place patties over the bed of onion and cover the pan. Cook for 2 minutes.
  • Flip burgers. Place 1/2 a slice of American cheese on top of each burger and several pickle slices on the cheese. Place both halves of buns stacked face-down on top of each burger. The top bun should be the one touching the cheese and pickles. Cover to steam the buns and cook burgers until no longer pink in the centers, 3 to 5 minutes more.
  • Remove the buns and burgers from the pan. Spread comeback sauce on the bottom half of each bun, then load some onions onto it. Place burger and top bun on top. Serve hot.

BEEF SLIDERS FOR A CROWD

Beef Sliders for a Crowd image

We're redefining sliders with this easy press-in-a-pan recipe - no forming and cooking individual patties! And we took a cue from our favorite burger joints: onions on the bottom, beef on the top. You can prepare the meat mixture on the cookie sheet a few hours ahead, refrigerate and cook just before serving.

Provided by Food Network Kitchen

Categories     appetizer

Time 40m

Yield 8 servings (3 sliders per person)

Number Of Ingredients 13

1 medium onion
1 1/2 pounds 90/10 ground beef
1 large egg
1/4 cup plain breadcrumbs
Kosher salt
2 teaspoons vegetable oil
Freshly ground black pepper
6 slices American cheese, quartered
24 thin plum tomato slices (from 2 to 3 tomatoes)
24 dill pickle slices
24 mini potato buns
4 large iceberg lettuce leaves, cut into 24 even pieces
Ketchup and yellow mustard, for serving

Steps:

  • Special equipment: a 10-by-15-inch rimmed baking sheet
  • Preheat the oven to 425 degrees F. Cut the onion in half, and shred each half on the large holes of a box grater. Squeeze the shredded onion dry between 2 towels, and scatter around a 10-by-15-inch rimmed baking sheet.
  • Put the ground beef, egg, breadcrumbs and 1 teaspoon salt in a large bowl, and mix gently, just enough to incorporate evenly. Drop mounds of the mixture all around the baking sheet, and press them into an even layer without disturbing the onions too much (but expect some of the onions to move around and peek through the meat). Brush the top of the meat with the vegetable oil, then season it evenly with 1/2 teaspoon salt and several grinds of fresh pepper. Score the meat into 24 squares, cutting completely through with a spatula.
  • Bake until browned and no longer pink in the middle, 8 to 9 minutes. Put a small square of cheese on each patty, and return to the oven to melt, about 30 seconds. Let rest a few minutes, then recut along the scores to separate.
  • Top each patty with a slice of tomato and pickle. Slide a spatula into the pan, and let guests serve themselves. Serve alongside a platter with the buns and lettuce. Don't forget the ketchup and mustard.

SLIDERS

Sliders image

Provided by Ree Drummond : Food Network

Yield 16 sliders

Number Of Ingredients 11

2 pounds ground beef
4 tablespoons heavy whipping cream
6 dashes Worcestershire sauce (less if you prefer)
1 teaspoon kosher salt
Freshly ground black pepper
8 whole dinner (or slider) rolls, split
1 pound thick-cut peppered bacon
3 yellow onions, halved and sliced
3 tablespoons butter
8 ounces gorgonzola
Cooked sliders and/or macaroni and cheese, for serving

Steps:

  • Preheat the grill to medium heat.
  • Mix the ground beef, heavy cream, Worcestershire and the salt and some pepper in a bowl. Use your hands to thoroughly mix the ingredients. Form 1/4 cup of the meat mixture into patties, making 16 patties total. Make an indentation with your thumb to keep the patties from plumping too much when they cook.
  • Grill the sliders until just cooked through, 2 to 3 minutes per side. Remove from the grill and pile on a platter.
  • Toast the halved buns on the grill. Place the sliders between the buns and serve immediately.
  • Fry the bacon in a skillet over medium-high heat until slightly crisp, about 8 minutes. Remove from the pan and cut into bite-size pieces.
  • In a separate pan, cook the onions in the butter over a low heat until caramelized, 20 to 30 minutes, stirring occasionally.
  • Use a fork to crumble the gorgonzola.
  • Put the bacon, caramelized onions and crumbled gorgonzola into separate bowls. Serve as delicious toppings for both sliders and macaroni cheese.

  • All-American Sliders. When you think of a slider, you're probably thinking of a snack-sized hamburger on a mini bun. There's a reason they're a classic—they're a true crowd-pleaser.
  • Asian BBQ Pulled Pork Slider Sandwich with Apple Slaw. Shredded slow-cooked pork makes an ideal filling for sliders, especially when it's topped with Asian apple slaw and crispy, tangy pickles.
  • Slow Cooker Barbecue Chicken Thigh Sandwiches. Cooked low and slow, chicken thighs become super tender and flavorful. After quickly browning, this recipe simply cooks all day in the slow cooker.
  • Pepperoni Pizza Sliders. Quick and easy, these pizza sliders are a delicious appetizer for game days, birthday parties, and other gatherings. Pepperoni is a classic, but add thinly sliced bell pepper and onion if desired, or make part of the batch vegetarian.
  • Vegetarian Loaded Sweet Potato Sliders. For another meat-free option, mini black bean burgers are a tasty alternative. A mix of spices add zesty flavor (though you'll have to leave the Worcestershire sauce out for a truly vegetarian dish).
  • The Cheesiest Mozzarella Meatball Sliders. Homemade meatballs and tomato sauce are what make these cheesy sliders stand out. Meatballs are simple to make, but the key to success is not over-working the meat.
  • Tex-Mex Taco Beef Sliders. Tacos are a fun party food, but they can be hard to assemble and hard to eat. For an appetizer that's easy to prepare ahead of time and make in bulk, make Tex-Mex sliders.
  • Pulled Chicken Shawarma Sliders. Try something different at your next grill-out and make chicken shawarma sliders. Typically roasted on a spit, shawarma is a Middle Eastern meat dish that's cooked with a flavorful blend of spices.
  • Copycat Big Mac Pull Apart Sliders. Everyone will love these mini copycat Big Mac burgers. With beef patties, homemade sauce, onion, cheese, lettuce, and pickles, they'll have the familiar flavors everyone loves with a special homemade touch.
  • Vegetarian Sloppy Joes with Pickled Radish and Cucumber. Sloppy Joes are a family favorite, but the vegetarian version is just as satisfying. Made with a mix of barley and vegetables like mushrooms and bell pepper, they're a healthier option that still delivers.
