JALAPEñO POPPERS
There are many delicious versions of jalapeño poppers: Some are breaded and deep-fried, others use two kinds of cheese, and another, called armadillo eggs, calls for enrobing the cheese-stuffed peppers with ground meat and bacon. These easy-baked poppers are filled with tangy cream cheese - brightened with scallions, cilantro, garlic and lime zest - then wrapped with bacon for looks, salt and crunch. For a vegetarian variation, sprinkle the stuffed jalapeños with finely crumbled tortilla chips before baking to complement the crisp-tender chiles and the molten-cheese filling.

Steps:
- Heat the oven to 400 degrees. Line a large baking sheet with aluminum foil, then top with a wire rack.
- Halve jalapeños lengthwise. (Do your best to halve them through their stems for added visual appeal.) Using the tip of a small spoon, scoop out and discard the seeds. Set the halved jalapeños aside.
- In a medium bowl, stir together the cream cheese, cilantro, scallions, garlic and lime zest, if using; season generously with salt and pepper.
- Season the inside of each halved jalapeño with salt and pepper, then fill each with about 2 teaspoons of the cream cheese mixture. (Fill until there's a slight dome on top.) Wrap each stuffed jalapeño with 1 piece of bacon, setting one tip of bacon on top of the cream cheese filling, then wrapping the bacon under and over the popper at an angle, so the bacon covers the filling on top in two layers. (The bacon will shrink as it cooks, so you want to make sure the top of the popper is well covered.) Arrange poppers evenly on the wire rack, nestling each popper between two parallel wires to keep it upright so the cream cheese doesn't spill during baking.
- Transfer to the oven, and bake until bacon is cooked through, about 25 minutes. Broil on the rack closest to the broiler until crisp, about 2 minutes. Let cool for 5 minutes, then serve warm.

My cousin shared this recipe with me after we had the sauce at a restaurant on Coronado Island. I've never made it at home, but know I enjoyed it at the restaurant. My cousin's advice: don't count the calories in this!!!!!

- Heat whipping cream in a heavy saucepan over high heat. Stir in sour cream when it's ready to boil. After sour cream dissolves, reduce heat to medium.
- Stir in chicken broth and jalapeno sauce and simmer.
- Meanwhile, make a roux by heating butter and flour. Whisk until mixture turns a pale gold.
- Increase heat on cream mixture until almost boiling and then add roux. Whisk briskly and constantly until roux is incorporated.
- Remove from heat, stir in minced jalapeno and the cheeses.
- Can be served with tortilla chips or as a sauce for dishes.

CREAMY JALAPENO DIPPING SAUCE
For those who love spicy appetizers! I usually have no use for any of the usual dips that are served with spicy appetizers like chicken wings. Sour cream takes the edge off the spice (which for me is defeating the purpose) but this dip is one that I can enjoy because it accents the heat as opposed to just reducing it. Sure the sour cream still reduces the bite but it has a unique kick of its own now! Bring it on!

- Just as it is ready to boil, stir in sour cream until completely blended.

- If no high-power blender: place cashews in the blender cup, pour boiling water over the cashews, replace lid and let soak for 30 minutes up to 2 hours (until plump). Drain, rinse and continue with recipe.
- With a high-power blender, you can get away without pre-soaking. Just boil the 1/3-1/2 cup water, pour over the 1/2 cup cashews in the blender cup, add the other ingredients, replace the lid and puree until smooth.

- Slice the stem end of you jalapenos off discard, slice the jalapenos in half. At this point you can remove all, or some of the seeds and membrane from the jalapenos, or keep them in. - There are so many ways you can use this jalapeno sauce. We really love it as a dip with tortilla chips for an appetizer, or a side dish. However, I know it would be delicious as a sauce drizzled on almost any Mexican dishes: tacos, enchiladas, quesadillas, burritos etc. I also think it would be good on eggs and chicken.
