- Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
- In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.

This Apple Crisp, or Apple Crumble, is the best one that I have ever made. It has become a staple for every gathering that we hold. I hear about it if it is missing from the food line-up! I also frequently take it to potlucks, BBQ's and get-togethers. It has the perfect blend of ingredients for a true homemade, down home, apple dessert flavor. This is very comforting in the winter months served warm, yet refreshing in the summer months served at room temperature with a dollop of sour cream, cinnamon or vanilla ice cream.NOTE: Prep time does not include the 15 minute resting time after baking. Do not skip this step or the crisp will have to much unabsorbed liquid and will become messy on the plate.

- Preheat the oven to 350 degrees F.
- Butter a 9 by 13 by 2-inch baking dish.
- Zest the orange and the lemon and squeeze the juices from both.
- Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.
- To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas.
- Scatter evenly over the apples and cut the 4 table spoons of butter into slices. Place the slices all over the top of the topping. If you skip this step, you may find that you have dry spots in the topping.
- Place the crisp in its baking dish on a sheet pan to catch anything that may spill over and bake for 1 hour until the top is brown and the apples are bubbly.
- Allow to rest for 15 minutes before serving.
- COOKS NOTES: This can be made the day before. To store, let cool to room temperature, lightly place a paper towel on top of the crisp to absorb condensation. Cover tightly with foil, plastic wrap, or a lid. To reheat, place leftovers in the oven at 350 degrees for 15 minutes. Or, microwave single servings for 30-40 seconds at a time until warmed through.

- For the filling: Peel and core the apples, and cut them into 1/2-inch-thick slices. Toss them with the granulated sugar and lemon juice. Melt the butter in a large skillet over medium-high heat. Add the apples, and cook, stirring occasionally, until the firmer apples soften but still hold their shape, 15 to 18 minutes. Add the cream, flour, cinnamon and salt, and stir until the juices thicken, about 2 minutes. Remove the skillet from the heat, and let the filling cool completely. Transfer it to a 9-by-13-inch baking dish.
- For the topping: Mix the flour, oats, walnuts, granulated sugar, butter and salt together in a medium bowl, using your fingers to work the butter into the flour, until the mixture comes together and holds its shape when squeezed.
- Drop small clumps of the topping over the filling, and wrap the baking dish well with plastic wrap. Label and date, and freeze for up to 2 weeks.
- To serve: Position an oven rack in the top third of the oven, and preheat to 350 degrees F. Unwrap the crisp, and bake, frozen and uncovered, until the filling is hot and bubbly and the top is golden brown, 50 minutes to 1 hour. Dust the crisp with confectioners' sugar, and serve warm with scoops of vanilla ice cream if you like.

This is the crisp my mom always made when I was growing up. We like it with vanilla ice cream on top--yummm! You can also make it with peaches instead of apples, although I'd suggest reducing or omitting the cinnamon and increasing the nutmeg when making peach crisp. This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference.
