INDIAN-SPICED CAULIFLOWER "RICE"



Indian-Spiced Cauliflower

Cauliflower rice is cauliflower that is chopped up really tiny and then sautéed on the stove. It's a great replacement for rice if you are going low carb! This recipe uses Indian spices to give it even more flavor, and goes perfectly with your curry.

1 head cauliflower
1 tablespoon butter
1 tablespoon olive oil
1/2 teaspoon cumin
1/4 teaspoon turmeric
1/4 teaspoon ground ginger
1/8 teaspoon cardamom
1/8 teaspoon cinnamon
1/8 teaspoon ground cloves
1/2 teaspoon salt
black pepper to taste
3-4 tablespoons chopped cilantro (to garnish)

Steps:

  • Rinse your cauliflower. Slice it in half down the middle, then slice each half again along the stem. Hold the quarter of a cauliflower upright and slice off the stem; this should separate the florets. Chop them roughly into 1 or 2 inch pieces. (See photos below.)
  • Place half or 1/3 of the cauliflower (depending on how big it is) into a food processor with the blade attachment. Pulse in one-second intervals until the cauliflower pieces are about the size of grains of rice, more or less. Repeat with remaining cauliflower.
  • In a large saucepan, heat 1 tablespoon of butter and 1 tablespoon of olive oil. When it is hot, add all the cauliflower, and stir occasionally for 5-8 minutes, or until tender.
  • While it cooks, season with cumin, turmeric, ginger, cardamom, cinnamon, cloves, salt and pepper. None of these measurements or even the spices themselves are hard and fast--go with what sounds good to you.
  • Remove from heat and add chopped cilantro to taste.
  • Serve with your favorite curry, grilled chicken, lamb, beef, pork, etc.

SPICED STEAK WITH CAULIFLOWER RICE



Spiced Steak with Cauliflower Rice image

Number Of Ingredients 12

6 cups cauliflower rice (or 1 large head, grated)
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
4 1/2-inch-thick boneless rib-eye steaks, trimmed
1 teaspoon paprika
1/2 teaspoon ground cinnamon
1/4 cup sliced celery
1/4 cup sliced almonds
1/4 cup dried cranberries
2 large cloves garlic, thinly sliced
1 tablespoon white wine vinegar
1/4 cup chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F. Combine the cauliflower rice, 2 tablespoons olive oil, 1/2 teaspoon salt and a few grinds of pepper in a large bowl; toss to coat. Spread in a single layer on 2 baking sheets and bake, stirring once, until slightly browned and tender, 20 to 25 minutes.
  • Meanwhile, season the steaks with salt and pepper and rub all over with the paprika and cinnamon. Heat a large skillet over high heat; add 1 tablespoon olive oil. Add the steaks, in batches if necessary, and cook until browned, 1 1/2 to 2 minutes per side for medium rare. Remove to plates.
  • Reduce the heat to medium. Add the remaining 1 tablespoon olive oil, the celery, almonds, dried cranberries and garlic to the skillet and cook, stirring, until golden, 2 to 3 minutes. Add the vinegar and cook until the skillet is almost dry. Transfer the mixture to a large bowl. Add the cauliflower and parsley, season with salt and pepper and toss. Add to the plates with the steaks.

2 tbsp sunflower oil
1 onion , chopped
2 carrots , chopped
200g basmati rice
50g red lentil
3 tbsp korma paste
1 head cauliflower , cut into florets
100g frozen pea
few toasted cashew nuts, to serve
natural yogurt , to serve
mango chutney , to serve

Steps:

  • Heat the oil in a pan, add the onion and carrots, then fry for 5 mins until lightly coloured. Stir in the rice and lentils, cook for 1 more min, add the curry paste and 900ml water, then bring to the boil. Cover, then simmer for 10 mins.
  • Stir in the cauliflower, then cook for 10 mins more until the rice and lentils are tender. Add the peas 2 mins before cooking time is up, stirring through. Top with the nuts, then serve with yogurt and mango chutney in bowls.

1 cauliflower , broken into florets
2 red peppers , cut into chunky pieces
1 red onion , 1/2 quartered, 1/2 sliced
3 tbsp olive oil
1 tbsp ras el hanout
1 garlic clove , crushed
200ml vegan coconut yogurt (such as Coconut Collaborative or COYO)
125g basmati rice
400ml vegan vegetable stock (such as Marigold Vegan Bouillon Powder)
small pack coriander , chopped
pomegranate seeds , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Spread out the cauliflower, peppers and onion quarters on a very large baking tray. Drizzle with 2 tbsp olive oil and sprinkle with the ras el hanout. Toss together, season and roast for 30 mins.
  • Meanwhile, stir the garlic into the yogurt and set aside. In a medium saucepan, heat the remaining oil. Add the sliced onion, season and fry for 5 mins. Add the rice and coat well in the oil. Pour over vegetable stock so that it covers it by about 2cm. Bring to the boil, then turn down to the lowest heat and cover with a lid. Check after 5 mins and add most of the coriander. Cook for 4 mins more until al dente.
  • Remove from the heat and let it sit with the lid on for 10 mins. Serve the roasted vegetables with the rice, remaining coriander, the pomegranate seeds and the yogurt sauce to share.

1 medium cauliflower
good handful coriander, chopped
cumin seeds, toasted (optional)

Steps:

  • Cut the hard core and stalks from the cauliflower and pulse the rest in a food processor to make grains the size of rice. Tip into a heatproof bowl, cover with cling film, then pierce and microwave for 7 mins on High - there is no need to add any water. Stir in the coriander. For spicier rice, add some toasted cumin seeds.

6 tbsp vegetable oil
large piece ginger, finely chopped
2 tsp chilli flakes
2 tbsp cumin seed
2 tsp turmeric
1¼ kg (after trimming and removing leaves) cauliflower, broken into pieces
small bunch coriander, chopped

Steps:

  • Heat the oil in a big pan or wok with a lid, then add the ginger and spices. Swirl everything around for a few secs until the spices are aromatic. Reduce the heat, then stir in the cauliflower and some seasoning. Put the lid on and cook for 10 mins or until softened, stirring occasionally. Sprinkle over the coriander before serving.

1 small head cauliflower (500g), broken into medium florets
150g baby spinach
1 tbsp rapeseed oil
1 red onion, sliced
120g halloumi, cut into cubes
1 garlic clove, crushed
1 thumb-sized piece ginger, finely grated
1 tsp ground turmeric
1 tbsp medium curry powder
2 x 250g pouches brown basmati rice
1 red chilli, finely sliced

Steps:

  • Bring a large pan of salted water to the boil and cook the cauliflower for 5 mins over a high heat, adding the spinach for the final 2 mins. Drain and set aside.
  • Heat the oil in a large frying pan or shallow casserole dish and fry the onion over a medium heat for 5 mins. Turn up the heat, add the halloumi, cook for a further 5 mins, then add the garlic, ginger, turmeric and curry powder, and cook for 1 min more. Stir through the rice, cauliflower and spinach to warm everything through, adding 1 tbsp water if it looks a little dry. Season and scatter over the chilli.
