Pineapple, bananas and marshmallows are folded into orange Jell-O in this refreshing salad. Frosted with a creamy topping, pecans and coconut, this yummy dish is a real crowd-pleaser. I have been making it for years. -Anna Jean Key, Muskogee, Oklahoma

3 packages (3 ounces each) orange gelatin
3 cups boiling water
1 can (20 ounces) crushed pineapple
3 cups cold water
4 medium firm bananas, sliced
2-1/2 cups miniature marshmallows
1/2 cup sugar
1 tablespoon all-purpose flour
1 egg, lightly beaten
1 package (8 ounces) cream cheese, softened
1 cup heavy whipping cream, whipped
3/4 cup chopped pecans, toasted
1/2 cup sweetened shredded coconut, toasted

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Drain pineapple, reserving juice. Stir the cold water, bananas, marshmallows and pineapple into gelatin. , Pour into a 13-in. x 9-in. dish coated with cooking spray; refrigerate until firm., Meanwhile, in a large saucepan, combine sugar and flour. Stir in reserved pineapple juice until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer., Remove from the heat. Stir a small amount of hot filling into the egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Cool., In a large bowl, beat cream cheese until smooth. Beat in, cooled filling. Fold in whipped cream. Spread over gelatin (dish will be full). Sprinkle with nuts and coconut.

2 (6 ounce) packages orange jello
4 C boiling water
1 (12 ounce) container frozen orange juice concentrate
2 (15 ounce) cans mandarin oranges, drained
2 (3.4 ounce) boxes instant lemon pudding mix
3 C milk
1 C cool whip

Steps:

  • 1. Grab 2 (6 ounce) packages of orange jello and pour them into a 9x13 pan.
  • 2. Heat 4 cups of water in the microwave until it's boiling.
  • 3. Pour the hot water over the jello and stir it until all the jello has dissolved.
  • 4. Grab 1 (12 ounce) can of frozen orange juice concentrate. Spoon it into the hot jello and stir it in until all of the juice has dissolved.
  • 5. Drain 2 (15 ounce) cans of mandarin oranges and pour them carefully into the pan. Cover and refrigerate for 4 hours, or until set.
  • 6. To make the pudding topping place 2 (3.4 ounce) boxes of instant lemon pudding into a large mixing bowl or stand mixer. Add 3 C milk (I used 1%, but 2% or whole milk would be great as well). Beat on medium-high speed with the whisk attachment until the pudding is thick. Add 1 C thawed cool whip and stir to combine.
  • 7. Carefully spoon the lemon topping onto the set jello. Spread it out evenly with a knife.
  • 8. Pop it into the fridge allow it to chill for at least 1 hour and up to 24.

One 6-ounce packet orange gelatin
One 8-ounce can crushed pineapple in juice
One 11-ounce can mandarin oranges in light syrup
1 cup orange sherbet
1 cup sour cream

Steps:

  • Spray a 6-cup gelatin mold or bundt pan with nonstick cooking spray. Place the gelatin in a medium bowl.
  • Strain the pineapple and mandarin oranges, reserving the liquid in a large measuring cup. Set the fruit aside. Add enough water to the fruit juices to equal 2 cups. Transfer the juice mixture to a small saucepan and bring to a simmer over low heat. Pour the hot juice mixture over the gelatin and whisk to dissolve. Add the orange sherbet and stir until fully melted and combined.
  • Add the sour cream and beat with an electric mixture until smooth, 1 to 2 minutes. Pour the mixture into the mold and add the reserved mandarins and pineapples, making sure to distribute the fruit evenly throughout. Refrigerate until fully set, at least 3 hours up to overnight.
  • Carefully dip the mold in hot water for 15 to 30 seconds. Remove and place a platter over the top of the mold. Invert onto the platter and serve.

20 oz pineapple, crushed (save the juice)
2 bananas, sliced
1 cup Kraft Jet-Puffed Miniature Marshmallows
Frosting:
2 Tablespoons flour
1/2 cup sugar
1 cup pineapple juice (from above)
1 cup whipped cream
1/2 cup Kraft Grated American Cheese

Steps:

  • Dissolve Jell-O in 2 cups of hot water. Add soda pop, and cool. When partly set, add pineapple, bananas, and Kraft Jet-Puffed Marshmallows to Jell-O. Pour into 9 x 13 inch glass Pan.
  • Frosting: Mix flour and sugar well. Add pineapple juice and cook until thick. Cool.
  • Add whipped cream to frosting and spread on Jell-O salad.
  • Sprinkle on grated cheese for color, or you may use chopped nuts if desired. Must set in fridge for 24 hours.

  • Drain pineapple and save juice.
