THREE BEAN SALAD WITH BACON DRESSING
If you like beans, you'll love this salad! Cook time does not include time for overnight soaking of the beans.

- Drain the soaked black and red beans separately in a strainer. In two medium saucepans, bring 5 cups of water (2 1/2 cups in each) to a boil. Add the black beans to one pot and the red beans to another, reduce the heat under both to medium, and simmer for about 45 minutes, until the beans are tender but not soft.
- Drain the beans separately in a colander and set aside, covered. Bring the remaining 3 cups of lightly salted water to a boil in one of the saucepans, and fill a large bowl with cold water and add several ice cubes to it. Cook the string beans for 3 to 4 minutes, depending on their size, until they are tender but still bright green.
- Immediately drain them and plunge them into the ice water to retain their green color. Drain and dry on paper towels.
- In a medium heavy skillet cook the bacon strips over medium heat until crisp. Remove the bacon with a slotted spoon and drain briefly on paper towels.
- In a small bowl, measure 1 tablespoon of the bacon fat and whisk it together with the remaining ingredients (except lemon wedges).
- In a large serving bowl, combine all the beans and drizzle the dressing over. Toss gently just to coat all the ingredients evenly, crumble the bacon over the top and serve while still slightly warm, Garnish with lemon wedges.

- Drain and rinse canned beans in a colander.
- Cook bacon in a large skillet until crisp; set aside. Reserve bacon grease in skillet.
- Add the chopped onion and garlic to the skillet and cook until light golden.
- While onion cooks, whisk together the vinegar, oil, cornstarch, mustard and brown sugar.
- Stir dressing into skillet with the onions and cook, stirring, until mixture thickens. Allow to cool slightly.
- Place beans in a salad bowl and add crumbled bacon.
- Stir cooled dressing into beans, cover and chill several hours or overnight.

- Wash the beans and remove and discard any damaged ones or any foreign material. Place the beans in a pot with the cold water and 1 teaspoon of the salt. Bring to a boil, cover, reduce the heat to low and cook until tender, 1 to 1 1/2 hours. Let cool to lukewarm. (There should be only a little water remaining.)
- Place the lardons in a saucepan and saute over low heat, covered, for about 8 minutes. Add the onion and garlic and cook, stirring, for about 5 seconds. Add the contents of the saucepan, fat and all, to the beans with their remaining cooking liquid. Add the parsley, vinegar, oil, salt and pepper to tastes and mix well. Serve at room temperature.

- Drain and rinse navy beans and set aside.
- Place potatoes in a steamer basket over boiling water.
- Cover pan and steam 10 minutes or until tender.
- Remove potatoes and place snow peas in steamer basket, steam for 10 minutes or until tender.
- Cool potatoes and peas.
- Cook bacon in a dry pan, stirring occasionally, until browned. (** or roast the bacon; place on baking sheet, single spaced, and brown in 400ºF oven for about 15 minutes.).
- Remove to paper towel-lined plate and cool.
- Combine lettuce, beans, potatoes and snow peas and bacon in a bowl and toss well.
- Take quartered peppers and remove seeds and membranes.
- *Grill peppers in 400ºF oven, skin side up, until skin blisters and blackens. (About 20 to 25 minutes.).
- Peel off skin and discard.
- Process peppers until smooth.
- Combine peppers and next 3 ingredients in a jar with a tight-fitting lid and shake well.
- Taste both the salad and the dressing for seasoning, and add if needed.
- Sprinkle with onions, if desired and then drizzle salad with dressing and cheese.

FRISEE SALAD WITH BEANS, GOAT CHEESE AND WARM BACON DRESSING

- Drain and rinse off the beans. In a medium saucepan, combine beans, garlic, fresh thyme sprigs, and 4 cups cold water. Bring to a boil and skim off any foam. Simmer until tender. About 10 minutes before they are done, add the salt (about 1 teaspoon). Drain the beans and allow to cool room temperature. Throw away garlic and thyme.
- Preheat oven to 350 degrees F.
- Toss the bread cubes with 2 tablespoons or more of olive oil, salt, and pepper. Toast until golden. Fry bacon until crisp. Transfer to paper towels and drain. Add 2 teaspoons of olive oil to bacon pan. Saute the shallots in the olive oil until just colored light golden. Whisk in the vinegar and season with salt and pepper. Keep the dressing warm.
- In a big bowl, toss the frisee, beans, bacon, toasted croutons, and tomatoes together. Add the dressings and toss. Plate each salad and sprinkle the crumbled goat cheese over top.
PASTA SALAD WITH STEAK, BELL PEPPER, GREEN BEANS AND BACON

- Salad Dressing: In a mixing bowl, combine all ingredients. Process in food processor until smooth. Makes 2/3 cup.
- Salad: Drain beans in colander. Place in large bowl with peppers. Add 1/2 cup of prepared salad dressing and toss gently. Cover and refrigerate at least 1 hour, preferably overnight.
- Reserve and refrigerate remaining salad dressing.
- Onion Garnish: In another bowl, toss the onion with the vinegar sugar and 1/2 teaspoon salt. Cover and refrigerate.
- At serving time, adjust seasoning on beans. Add remaining salad dressing, if desired.
