GRILLED OLD BAY SALMON WITH CORN QUINOA



Grilled Old Bay Salmon with Corn Quinoa image

1 cup quinoa, rinsed and drained
4 6-ounce skin-on salmon fillets, preferably wild
2 tablespoons extra-virgin olive oil
4 teaspoons Old Bay Seasoning
1/2 teaspoon finely grated lemon zest, plus 2 tablespoons juice
Kosher salt and freshly ground pepper
2 ears of corn, shucked
1 cup packed fresh basil, chopped
1 scallion, thinly sliced

Steps:

  • Preheat a grill to medium. Cook the quinoa as the label directs. Meanwhile, rub the salmon with 1 tablespoon olive oil, then rub with the Old Bay and lemon zest; season lightly with salt and pepper.
  • When the quinoa is almost done, cut the corn kernels off the cobs and then run the back of the knife down the cobs to extract all the corn pulp and juices. Scatter the corn and its liquid on top of the quinoa, cover again and set aside off the heat to steam, 10 to 15 minutes.
  • Grill the salmon, skin-side down, until the skin is crisp and the salmon is cooked about a third of the way up the sides, 4 to 7 minutes. Gently flip the salmon and grill until just cooked through but still a little rosy in the thickest part, 5 to 7 more minutes depending on the thickness.
  • Uncover the quinoa and fluff the corn and quinoa together. Add the remaining 1 tablespoon olive oil, the lemon juice, basil and scallion and stir to combine; season with salt and pepper. Serve the salmon with the quinoa.

1/4 cup KRAFT Sweet Honey Barbecue Sauce
1 Tbsp. A.1. Original Sauce
4 skinless salmon fillets (1 lb.)
1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 cup quinoa, uncooked
2 cloves garlic, minced
1 zucchini, cut lengthwise into quarters, then crosswise into 1/2-inch-thick slices
2 green onions, diagonally sliced

Steps:

  • Mix barbecue sauce and A.1. Reserve 2 Tbsp. for later use. Brush fish with half the remaining barbecue sauce mixture; place, sauce sides down, in large nonstick skillet. Cook on medium-high heat 2 min., turning and brushing with remaining sauce after 1 min. Remove from skillet; cover to keep warm.
  • Add broth, quinoa and garlic to skillet; stir. Bring to boil; cover. Simmer on medium-low heat 5 min. Stir in zucchini; top with fish.
  • Simmer, covered, 7 min. or until quinoa is tender and fish flakes easily with fork. Remove from heat. Brush fish with reserved sauce. Let stand, covered, 5 min. Top with onions.

SALMON WITH SESAME-GINGER QUINOA

1 1/2 tablespoons toasted sesame oil
1 tablespoon grated peeled ginger, plus 1 inch thinly sliced
1 cup quinoa, rinsed
Kosher salt
3 heads baby bok choy (about 12 ounces), trimmed and thinly sliced
1 red jalapeno pepper, seeded (1/2 minced, 1/2 thinly sliced)
3 scallions, thinly sliced
4 6-ounce skinless center-cut salmon fillets (preferably wild)
3 tablespoons low-sodium soy sauce
Juice of 1 lemon
1/4 cup fresh cilantro, torn

Steps:

  • Heat 1/2 tablespoon sesame oil in a medium saucepan over medium heat. Add the grated ginger; cook until slightly softened, 1 minute. Add the quinoa; cook, stirring occasionally, until lightly toasted, 2 minutes. Add 1 1/4 cups water and 1/4 teaspoon salt. Bring to a boil, then reduce the heat to medium low. Cover and cook until the water is absorbed and the quinoa is tender, about 12 minutes.
  • Add the bok choy, minced jalapeno and half of the scallions to the quinoa. Cook, covered, until the bok choy wilts, about 7 minutes.
  • Meanwhile, bring 3/4 cup water, the sliced ginger and sliced jalapeno to a boil in a large skillet over medium heat. Add the salmon. Cover and cook until just cooked through, 5 minutes. Transfer to a plate using a slotted spatula. Stir the soy sauce, lemon juice, remaining scallions and 1 tablespoon sesame oil into the poaching liquid.
  • Fluff the quinoa; season with salt. Serve with the salmon; drizzle with the soy sauce mixture and top with the cilantro.

GRILLED SALMON WITH TZATZIKI



Grilled Salmon with Tzatziki image

Grilled Salmon served over optional quinoa (or rice) with greens, grilled vegetables, fresh veggies and Tzatziki Sauce. Feel free to substitute chicken or tofu for the salmon ( see notes). If going grain-free, leave out the quinoa and add more grilled veggies.

8-12 ounces salmon (serves 2)
olive oil for brushing
salt and pepper
one lemon- sliced in half
one large tomato sliced in half
one small eggplant, sliced (or sub zucchini)
Everyday Quinoa (tastes great here) or rice,
Greens -arugula, spinach or mixed greens.
Fresh veggies- radishes, cucumber, microgreens, sprouts
Fresh herbs- dill, mint or Italian parsley

Steps:

  • Preheat heat grill to medium-high.
  • Set the quinoa or rice to cook on the stove, according to directions. (Quinoa only takes roughly 20-30 minutes)
  • Brush salmon with olive oil and season with salt and pepper. Set aside. Brush the eggplant or zucchini with olive oil and season with salt and pepper.
  • Make the optional Tzatziki Sauce, or use store-bought.
  • Place salmon on a well-greased grill, along with the lemon (open side down), the tomato (open side down) and the sliced eggplant. Grill salmon on both sides for 3-4 minutes, shorter or longer depending on the thickness of the cut. Grill the lemon and tomato until deep grill marks appear, and flip the eggplant, grilling till tender and translucent. (You will use the grilled lemon to squeeze over the salmon before serving.)
  • When veggies and salmon are done, assemble the 2 bowls.
  • Divide quinoa among two bowls. Top with a handful of greens. Add any fresh veggies you like and drizzle with a little olive oil, sprinkle with salt and pepper and a squeeze of the grilled lemon. Arrange the grilled vegetables and salmon over top. Squeeze more of the grilled lemon over the whole bowl. Spoon a few generous spoonfuls of tzatziki sauce over top of the salmon. Scatter with fresh dill or other herbs.
  • Pour yourself a glass of white wine. Enjoy!
