BBQ CHICKEN BAKED POTATOES

4 pounds boneless, skinless chicken thighs
1 1/2 cups BBQ sauce
1/4 cup honey
1 tablespoon vinegar
1 teaspoon kosher salt
3 chipotle peppers in adobo
2 cloves garlic, minced
1 onion, sliced
4 medium russet potatoes
Vegetable oil, for baking potatoes
2 cups sour cream
2 cups shredded Cheddar
1 cup diced green onion

Steps:

  • For the chicken: Add the chicken, BBQ sauce, honey, vinegar, salt, chipotles, garlic and onion to a multi-cooker along with 1/4 cup of water and toss to combine. Cover and position the vent to Sealing. Set to pressure cook on high and set the timer to 12 minutes.
  • When the time is up, quick-release the steam, then remove the lid. Remove the chicken to a large bowl and shred with 2 forks. Add the sauce to the meat in 1/4-cup increments until it has become saucy but not soupy. Reserve the remaining sauce for serving or freeze for future use (see Cook's Note).
  • For the potatoes: Preheat the oven to 400 degrees F.
  • Prick each potato all over with a fork. Rub vegetable oil on each potato and bake on a baking sheet for 1 hour. Slice the potatoes lengthwise three-quarters of the way through. Add 2 cups chicken, 1/2 cup sour cream, 1/2 cup Cheddar, 1/4 cup green onion and drizzle of reserved sauce to each potato. Serve immediately.

Steps:

  • Slice the potatoes to the thickness of your little finger, discarding the rounded end pieces. Tip into a pan of cold salted water and bring to the boil. Simmer for 3 mins until just cooked, then drain. This can be done a day ahead.
  • Rub each slice with a little oil and barbecue until golden and charred on each side. Place in a dish and sprinkle with rosemary and garlic, if using. Drizzle with a little more olive oil, season with salt and serve.

Steps:

  • In a small bowl, mix mayonnaise, garlic, oregano, salt , and pepper. Set aside.
  • Bring a large pot of salted water to a boil. Add potatoes, and cook until almost done, about 10 minutes. Don't overcook otherwise the potatoes will break apart. Drain, and cool.

1/4 large Spanish onion

Steps:

  • Scrub potato and make 4 slits almost through to bottom.
  • Slice onion into 4 slices to fit into slits in potato.
  • Dot with butter or margarine.

  • Wrap tightly in foil, as if to freeze.
  • Place package on rack in BBq and close the lid.

2 sprigs thyme (fresh, left whole)
1 sprig rosemary (fresh, left whole)

Steps:

  • Place all ingredients in a bowl, toss well.
  • Put potato mixture in the centre of a piece of aluminum foil.
  • Fold the foil in half to cover the potatoes.
  • Crimp the edges to create a sealed pouch. Fold all the edges over one more time to ensure that all steam will stay in the pouch.
  • Place the pouch flat side down on a pre-heated barbeque grill or on a grill over a campfire at medium temperature and close the lid for four minutes.
  • Open the lid and continue cooking the pouch for another 15-20 minutes.
  • Remove the pouch and don't open until ready to serve.

1 -2 onion (I usually use 3 because I LOVE them)

  • Slice potatoes about 1/4 inch thick and place on tinfoil sprayed with cooking spray. sSlice onions on top then top with butter, salt and pepper.

1 1/2 pounds baby red potatoes (or baby gold potatoes)
1 teaspoon dried rosemary
1 teaspoon garlic powder
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon dried oregano
2 tablespoons extra virgin olive oil
Grated parmesan (optional for serving)
Chopped fresh herbs such as parsley (rosemary, or basil, optional for serving)

Steps:

  • Rinse and dry the potatoes (no need to peel). Cut crosswise into ½-inch slices (if your potatoes are smaller than a golf ball, you can halve or quarter them). Place in a large bowl.
  • In a small bowl, stir together the rosemary, garlic powder, salt, pepper, and oregano.
  • Drizzle the potatoes with the oil, then sprinkle the spices over the top. Toss to evenly coat.
  • Preheat the grill to medium-high (about 375 to 400 degrees F).
  • Place two large (about 22 to 24 inches long) sheets of heavy-duty foil down on a large baking sheet (you'll use the baking sheet for easy transport) so that the foil pieces are slightly overlapping down the center to create a wider sheet. Coat with non-stick spray. Spread the potatoes onto the foil in a single layer (if you prefer not to have the food touch the foil, you can add a layer of parchment in between). Place two more overlapping sheets of foil on top, then fold up the edges all the way around to seal and create a packet. Leave some space towards the top of the packet to allow the air to circulate.
  • Using the baking sheet, carry the potatoes out to the grill, then with tongs slide the packet onto the grill. Cover then cook for 15 minutes.
  • Carefully open the foil then use the tongs to flip the potatoes over. They should be deeply golden on the first side (if not, continue to cook them for 3 to 5 minutes more). Place the foil loosely back over the top, close the grill, and cook for 5 to 10 additional minutes, until the potatoes are tender when pieced with a fork.
  • Slide the potato packet back onto the baking sheet, then transfer them to a serving bowl (or serve them right off of the foil). Serve warm, with a sprinkle of Parmesan and chopped fresh herbs as desired.

For the Aioli:

Pinch of salt

Steps:

  • Gather the ingredients.
  • Preheat grill for medium-high heat.
  • Use either a mandolin slicer or sharp knife to cut potatoes lengthwise into very thin slices.
  • Place in a large bowl and coat with olive oil and salt.
  • Place a grill pan on grill and allow to heat.
  • Place potatoes on pan forming a single layer.

2 tbsp olive oil

Steps:

  • If your barbecue hasn't already been heated, light and heat until the ashes turn grey. Put the potatoes in a large saucepan of cold water and bring to the boil. Once boiling, cook for 5 mins until slightly tender.
  • Drain and leave to steam-dry for 2 mins. Transfer to a large sheet of foil, coat in the olive oil and season well. Make sure the potatoes are sitting flat against the foil so each one gets charred when grilled. Wrap in the foil like a parcel, and wrap again to ensure the potatoes are completely covered. Cook on the barbecue for 10 mins.
  • Check they are cooked by inserting a skewer into one of the potatoes. Carefully remove from the foil and serve in a dish.

¼ cup hickory smoke-flavored barbecue sauce

  • Thoroughly wash and scrub 1-2 large sweet potatoes. Dry with a towel and cut the sweet potatoes into rounds. The rounds should be roughly 1/4" thick. Try to make sure the rounds are all relatively the same size so they cook evenly.
  • Place the sweet potato rounds into a large bowl or cake pan. Drizzle 2 Tbsp. olive oil over the top. Toss until completely coated.
  • Sprinkle 2 tsp. smoked paprika, 2 tsp. garlic powder, 2 tsp. onion powder, 1 tsp. Italian seasoning, and 1/4 tsp. each of kosher salt and pepper over the potatoes. Toss until completely coated.
  • Heat your grill and place the oiled and seasoned rounds directly on the surface of the grill. Cook for 5 minutes on the first side. Flip and cook for another 5 minutes on the second side.
