Smokehouse Pork Chops with Mac and Cheese image

Provided by Jernard Wells

Categories     main-dish

Time 2h5m

Yield 4 servings

Number Of Ingredients 21

4 cups chicken stock
1 pound macaroni
Kosher salt
1 stick (8 tablespoons) unsalted butter
1 1/2 cups heavy cream
2 tablespoons all-purpose flour
4 cups shredded cheese, such as Cheddar, Monterey Jack, provolone or mozzarella
1 tablespoon ground nutmeg
1/4 teaspoon dry mustard
Cooked chopped bacon or lobster, optional
One 7-ounce can chipotles in adobo sauce
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon liquid smoke
1/2 teaspoon ground ginger
1/2 teaspoon onion powder
2 cloves garlic, minced
Sea salt and freshly ground black pepper
Four 2-inch-thick bone-in pork chops
Vegetable oil
4 sprigs fresh rosemary

Steps:

  • For the mac and cheese: Bring the chicken stock and 12 cups water to a boil in a pasta pot over high heat. Add the macaroni and 1 tablespoon salt. Cook until al dente, following package instructions. Drain and set aside.
  • Melt the butter in a saucepan over medium heat and add 1 cup of the heavy cream. Whisk together the flour and remaining 1/2 cup heavy cream in a small bowl until free of lumps. When you start to see tendrils of steam rising from the warming cream, whisk in the flour-cream mixture. Cook, whisking gently, until the sauce has returned to the consistency of heavy cream, 3 to 4 minutes.
  • Turn the heat to low and begin mixing handfuls of cheese into the sauce. Stir in the nutmeg, mustard and 1/2 teaspoon salt. Cook until all the cheese has melted and the sauce is creamy. Fold in the bacon or lobster if using. Taste and adjust the seasoning as needed. Remove the sauce from the heat.
  • In a large serving bowl, combine the pasta and half of the cheese sauce, stirring to coat the pasta evenly. Stir in the remaining sauce.
  • For the pork chops: In a bowl, mix together the chipotles, brown sugar, Worcestershire, liquid smoke, ginger, onion powder, garlic, 2 tablespoons sea salt and 2 tablespoons black pepper. Pour half the mixture into a large bowl; add the pork chops, turning to coat in the marinade. Let sit at room temperature for at least 10 minutes, turning occasionally, or for maximum flavor, cover and refrigerate for 30 minutes to 1 hour. Refrigerate and reserve the remaining marinade.
  • Preheat a cast-iron skillet over high heat. Remove the pork chops from the marinade, shaking off any excess; discard the marinade. Lightly oil the skillet, then immediately add the chops. Cook, using the rosemary sprigs to baste with the reserved marinade, until the meat is well-browned and crisp on the outside and no longer pink inside, 8 to 10 minutes per side -- a meat thermometer inserted into the thickest part of a chop should read at least 145 degrees F.
  • Pour the remaining reserved marinade into a saucepan and bring to a boil over medium heat. Reduce to a simmer and cook, stirring constantly, until slightly thickened, about 5 minutes.
  • Serve the chops with the sauce and the mac and cheese.

ONE-POT PULLED PORK MAC AND CHEESE

One-Pot Pulled Pork Mac and Cheese image

Add pulled pork to this Cheddar-and-mozzarella mac and cheese; top it with barbecue or hot sauce if you're feeling bold.

Provided by Food Network

Time 20m

Yield 6

Number Of Ingredients 12

4 cups whole milk
12 ounces elbow macaroni (about 3 cups)
8 ounces mild Cheddar, shredded (about 3 cups), plus more, for sprinkling
3 ounces part-skim mozzarella, shredded (about 1 cup)
3 ounces cream cheese, cut into small pieces
3 tablespoons unsalted butter, cut into small pieces
1 teaspoon Dijon mustard
Large pinch of cayenne pepper
Kosher salt
1 cup leftover pulled pork, warm
3 scallions, sliced, plus more, for sprinkling
Barbecue or hot sauce, for serving, optional

Steps:

  • Combine the milk and macaroni in a medium saucepan. Bring to a boil over medium heat, stirring frequently to keep the macaroni from clumping, then cook, stirring frequently, until the macaroni is tender and the milk has thickened to the consistency of heavy cream, 4 to 5 minutes.
  • Remove the saucepan from the heat, add the Cheddar, mozzarella, cream cheese, butter, mustard, cayenne and 1 1/2 teaspoons salt and stir until smooth, thick and creamy. Stir in half the pulled pork. (The dish will thicken as it cools; thin it out with a little hot water if desired.) Spoon the remaining half of the pork over the mac and cheese and sprinkle with additional Cheddar and scallion.
  • Serve hot with barbecue sauce or hot sauce if using.

  • Prepare your smoker and heat to 235-240 degrees F using your choice of wood chips. I use hickory as my wood of choice in this recipe.
  • Cook the pasta 1 minute less than the packaged directions so it is very al dente. Make sure you don't overcook the pasta! Remember it is going to cook for another 2 hours. Strain and rinse with cold water, set aside.
  • In a large skillet melt 4 TBSP of butter over medium heat, add the onions and cook until they are just softened. Add the garlic and whisk in the flour, continue whisking, cook for 2 minutes. Reduce the heat to low and slowly add the milk stirring constantly. Once combined add the Dijon mustard, salt, and pepper.

  • Cook the macaroni. Bring a large pot of salted water to a boil and cook macaroni noodles until they are al dente, meaning they still have a bit of chew and texture (not too soft).
  • Preheat the smoker and heat the meat. Preheat your smoker to 225 degrees F using a mild hardwood. My favorite is cherry or apple. Place your pulled pork in an aluminum pan and place on the smoker to reheat while you prepare your mac and cheese.
  • Make a roux. Heat a 14-inch cast iron skillet over medium heat. Melt 6 Tablespoons of butter and whisk in the flour until a smooth, thin paste forms. Then whisk in the mustard powder.
  • Make the cheese sauce. Carefully pour in the half and half and milk and bring up to a boil while whisking. Reduce the heat to low and whisk in the cream cheese until smooth. Next, add in the Beef Seasoning. Finally, whisk in the cheddar cheese and gouda cheese and stir until melted. Turn off the heat and pour in the cooked macaroni noodles. Stir gently until the noodles are coated by the cheese sauce.
