FISH SKEWERS WITH BASIL CHIMICHURRI

Steps:
- For the marinade: In a medium glass bowl, mix together the
- onions, garlic, oil, vinegar, lemon juice and salt and pepper to taste.
- Add the fish and squash and marinate at room temperature,
- about 15 minutes.
- For the chimichurri: Combine the basil, parsley, onions,
- garlic, olive oil, vinegar, lemon juice, red pepper flakes and salt and pepper
- to taste in a food processor bowl, and pulse until the ingredients are just
- combined and chunky.
- Preheat the grill on high. Oil the grates well.
- For the fish skewers: Thread the marinated fish and squash
- onto the soaked skewers, 2 pieces of fish per skewer. Place 1 cherry tomato on
- the end of each skewer. Place on the grill and cook until lightly charred on
- the outside and the fish is just cooked through, 3 to 4 minutes per side.
- While the fish is still warm, drizzle with a little basil
- chimichurri and serve more on the side for dipping.
CHIMICHURRI SAUCE
This bright sauce, filled with herbs, has some jalapeno in it for an added punch. Use this Argentinian condiment to top grilled meats and fish or toss with vegetables to make a simple dinner special.

Steps:
- Combine the vinegar, garlic and a generous pinch of salt in a blender and blend on low until smooth. Add the parsley, cilantro, oregano, ice and jalapeno and blend on medium speed. With the blender running, slowly drizzle in the olive oil and puree until smooth, about 1 minute, stopping to scrape down the sides if necessary. Season the chimichurri with more salt and pepper and transfer to a serving bowl, cover with plastic and refrigerate until ready to serve.

This is the simplest way to make authentic Argentinean chimichurri. The greatest thing about authentic Argentinean food is that it is easy to make and hard to screw up!

- Heat grill or grill pan to medium-high. Clean and lightly oil hot grill. Meanwhile, in a food processor, combine oil, herbs, vinegar, garlic, and 1 teaspoon salt. Pulse until finely chopped.
- Season sliced onions with salt. Grill, turning frequently, until charred and tender, 10 to 14 minutes. Brush with chimichurri sauce and cook 1 minute more, flipping once. Transfer onions to a plate. Season patties with salt. Grill 3 1/2 minutes per side for medium-rare. Serve burgers on buns with onions, tomato, and arugula; top with chimichurri sauce.

- Add the basil and parsley leaves (no stems) to a blender then process until the herbs are finely chopped. Pause as needed to scrape the herbs from the sides of the blender. (note: a food processor may also be used)
- Next add the olive oil, vinegar, lemon juice, salt, red pepper flakes to the blender. Grate in the garlic and continue processing until it still has some chunky texture.
- Transfer the chimichurri to a jar or storage container, mix in the minced red onion by hand then taste and adjust salt as necessary. If you prefer a thinner consistency, drizzle in about 1 tablespoon of olive oil.
