Steps:
- Preheat oven to 400 degrees F. Spray a 2 1/2 quart baking dish with nonstick cooking spray.
- Brown ground beef; add the dry onion soup mix during the browning process. Drain excess grease if needed.
- To the ground beef, add all remaining ingredients and stir.
- Pour into prepared dish.
- Bake for 30 - 45 minutes or until bubbly and hot.
BROWN SUGAR BAKED BEANS

- Preheat the oven to 350 degrees F.
- Put the bacon in a large, cold skillet and cook over medium heat until the fat renders and the bacon is almost crisp, about 8 minutes. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add 1 of the cans of beans with their liquid. Drain and rinse the remaining beans, then add them to the skillet. Add the ketchup, sugar, mustard, vinegar, Worcestershire, 1/2 teaspoon salt and pepper to taste. Bring to a low simmer, then transfer to a small baking dish. Bake uncovered until thickened and bubbly, about 50 minutes. Serve warm.
BBQ BAKED BEANS
BBQ baked beans are a summer staple. This shortcut version relies on ordinary canned baked beans, which we dress up with fresh peppers, onions, cider vinegar and barbecue sauce. The sweet and tangy side dish is perfect for a summer barbecue, picnic, potluck or weeknight dinner. The beans taste even better the next day, so they can be prepared ahead of time and reheated or served at room temperature.

- Preheat the oven to 350 degrees F.
- Heat an oven-proof heavy-bottom pot or Dutch oven over medium heat. Add the bacon and cook, stirring often, until the fat has started to render and the bacon is beginning to crisp, about 5 minutes. Add the onions and bell pepper and continue to cook, stirring often, until the vegetables are slightly softened, about 3 minutes.
- Stir in the canned beans, barbecue sauce, molasses, vinegar, Worcestershire, brown sugar, mustard powder, cayenne, 1 teaspoon salt and several grinds of black pepper. Bring to a simmer and let cook over low heat, stirring occasionally, until the sauce has thickened slightly, about 5 minutes.
- Transfer the pot to the oven and bake (uncovered) until the sauce thickens and the beans on top begin to brown, about 40 minutes. Remove from the oven and let cool for at least 15 minutes before serving warm or at room temperature.

BARBEQUE BAKED BEANS

- Preheat oven to 275 degrees F.
- In a large Dutch oven, heat oil over medium heat. Saute the red pepper, onion and garlic until softened, about 2 minutes. Add the baked beans and remaining ingredients and bring to a low simmer. Cover the beans and place in the preheated oven. Bake for 45 minutes.
- Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
- In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to a simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
NACHO BAKED VEG WITH CRISPY BLACK BEANS
Steps:
- Preheat the oven to 425 degrees F (220 degrees C).
- Transfer the potatoes, cauliflower and red onion to a large, rimmed baking sheet and drizzle with the olive oil.
- In a small bowl, combine the chili powder, ground cumin, garlic powder, smoked paprika, dried oregano and onion powder. Sprinkle over the vegetables and season with salt. Toss to coat and spread into an even layer. Bake for 25 minutes.
- Add the black beans and stir. Continue to bake for another 10 to 15 minutes, or until the veg are tender and golden and the black beans have begun to split and get crispy.
- Top with the grated cheese and return to the oven for another 5 to 10 minutes, or until the cheese is melted and lightly golden brown.
- Top with feta, avocado, green onions, pickled jalapeños and cilantro, if desired. Serve with salsa and yogurt or skyr on the side as well as a few lime wedges and hot sauce.
BAKED BEANS
This is a recipe my mother made when we were kids. I don't know how old it is or where it came from. Delicious, comfort food with beans, bacon, brown sugar and tomatoes. I have also made this with canned beans.......use 4 or 5 cans beans, rinsed and drained instead. We always serve this with cornbread. I have put in the amount of brown sugar I usually use but you can either add more or less, depending on your personal taste.

- Look through the beans for any rocks or irregular looking beans and discard those. Put beans in large pot and rinse with cold water, then cover with cold water and cook till done. Drain.
- Preheat oven to 325.
- In medium sized bowl combine tomato paste and juice from the canned tomatoes. Set aside.
- In bottom of greased Dutch oven layer half the cooked beans. Next cover that with half the onions and bacon. Sprinkle brown sugar over this generously. Repeat the layers ending with another generous sprinkling of brown sugar.
- Top this with canned tomatoes that you have cut up or squished with your hand. Then top this with the reserved tomato paste mixture.
- Cover the beans and bake for 2 to 3 hours.
- Before you bake it the original recipe states that you can add a little syrup to the mixture but I never do this.

- Heat the oil in a non-stick saucepan over a low heat and fry the onion for 5 mins until golden. Add a drop of water if it looks like it's starting to burn.
- Stir in the garlic, then tip in the passata, dates, vinegar, bouillon and bay leaf. Grind in plenty of black pepper and simmer for 5 mins.
- Tip in the beans and 400ml water, then simmer for 10 mins, stirring every now and then until thick. To freeze, leave to cool completely, then divide between freezer bags and freeze for up to three months. Defrost thoroughly in the fridge overnight and reheat in a pan until piping hot. Serve over jacket potatoes.

- •Place the beans in large bowl or pan, cover with cold water and leave to soak overnight.
- •Next day rinse the beans and place in a large ovenproof pan or deep roasting tin, with enough cold water to cover.
- •Pierce the peeled onion with the cloves and add to the beans with 2 tsp of the tomato concentrate, black peppercorns, bay leaf, sage, the garlic and the canned tomatoes. Bring to the boil on the stove top then place in the oven for approx 2-3 hours until the beans are quite soft. From time to time during the cooking, check that the beans aren't drying out, if they appear to be lower the heat and add a little boiling water.
- •Remove the bay leaf and cloves and onion. Add the diced tomato and the remaining tomato concentrate, stir, then cook for 30 minutes more. Season to taste and serve sprinkled with fruity olive oil, if using.
