You can use any kind of vegetables for this casserole, whatever you have in your fridge - zucchini, broccoli, tomatoes. Don't dice the vegetables too small, all the vegetables should be about the same size.

SHRIMP AND DICED POTATO CASSEROLE
Ready, Set, Cook! Special Edition Contest Entry: This recipe is a kind of surf and turf, blending the earthiness of potatoes with the ocean tang of shrimp. It is adapted from elements of shrimp croquettes of Fannie Farmer, with a Red Pepper sauce borrowed from Jacques Pepin, modified by adding sun dried tomatoes.

Steps:
- Put the sun dried tomatoes in a bowl with 1 cup of hot water. Let them sit for 30 minutes to plump and soften.
- Zest and juice the lemons and finely chop the cilantro.
- Cut the frozen shrimp into ½ inch pieces. Combine in a bowl with lemon juice, zest and cilantro. Cover with plastic wrap and set in a bowl of hot water to thaw while marinating. Stir occasionally.
- Over a hot stove burner roast the red bell peppers until the skins are blackened. Wrap in plastic wrap and let cool.
- To make the cream sauce, melt the butter or ghee in a heavy bottomed sauce pan. Add the flour and stir until flour is cooked, but not brown, about 2 minutes. Add the hot milk, stirring constantly.Bring the cream sauce to a boil. Add salt and pepper to taste and grate nutmeg into sauce. Simmer for 2 -3 minutes until sauce thickens.
- Thoroughly drain the shrimp and reserve the marinade. Combine the Simply Potatoes Diced Potatoes with Onions, the marinated shrimp, salt, cayenne pepper, and cream sauce. Mix well. Cover with plastic wrap and refrigerate until chilled.
- Preheat oven to 350°F.
- Peel the peppers and remove the seeds and ribs. Roughly chop the peppers and the tomatoes and put in a food processor. Process until smooth. Add the liquid the tomatoes were soaked in along with ¼ cup of the reserved marinade and season with salt, pepper and red pepper flakes. Let boil to thicken the sauce. Remove from heat and add the butter. Swirl to melt and incorporate. Adjust seasoning to taste. Keep warm until needed for service.
- Oil an 8" X 12" casserole and fill with the shrimp and potato mixture. Coat with Panko bread crumbs.
- Bake on the middle rack at 350°F for 45 minutes. Broil for 3 minutes to toast bread crumbs. Serve on a warm platter in a ring of Roasted Red Pepper/Sundried Tomato Sauce. Garnish with a few leaves of cilantro.

SHRIMP-STUFFED MIRLITONS
I have seen people who saved the mirliton shells and stuff those with the shrimp mixture, but this is the fuss-free version of the dish. Mirlitons (also chayote pears) are pretty expensive in supermarkets, and it takes several to make a good casserole. In New Orleans, however, these vegetable pears grow on vines in every third backyard making them fairly easy to come by. In general, any recipe that calls for cooked eggplant or cooked winter squash can be prepared with mirlitons.

Steps:
- 1. Boil whole mirlitons in water until tender, about 40 minutes. Drain mirlitons in a colander and let stand until cool enough to handle. Split the mirlitons in half lengthwise, remove the seeds, and scoop the pulp into a bowl. Using a potato masher or fork, mash the mirliton pulp.
- 2. In a skillet, melt 2 tablespoons butter over medium-high heat. Saute onions, celery bell pepper, garlic, half the parsley, and the green onions. Cook 3 minutes. Add 4 more tablespoons butter and the shrimp. Saute just until shrimp turn pink. Add ham.
- 3. Add the mashed mirliton pulp to the skillet and stir until heated through. Add the bread to the mixture and stir to blend. Slowly pour the eggs into the skillet while stirring quickly. Add salt and pepper to taste. Stir in remaining parsley.
- 4.Spoon mirliton mixture into a baking dish. Sprinkle with bread crumbs or cracker crumbs and dot with remaining butter. bake at 350 degrees F for 45 minutes or until dish is set and nicely browned.
EASY SEAFOOD AND TOMATO CASSEROLE
A delicious, light casserole that can be made even healthier using Ezekiel bread, omega 3 eggs, low sodium diced tomatoes, unsalted fresh organic butter, fresh cooked diced shrimp, reduced fat cheese, and real wine instead of "cooking wine" loaded with sodium./My tastiest version, however, used whole wheat bread (Sarah Lee's), full fat aged sharp cheddar cheese (although Colby's is a tasty reduced fat cheddar cheese), diced small-medium sized fresh cooked shrimp, and the optional omega 3 egg, green pepper, Holland's cooking wine, and lemon juice. Do use a full 16 ounces of shrimp or other seafood and measure liquids carefully so the casserole doesn't become too watery. Then enjoy! It's good!

- Prepare all the ingredients: rinse and chop the sweet potatoes, dice the onion, drain and rinse the kidney beans and corn. Clean the shrimp.
- In a medium bowl, combine the cleaned shrimp with 1 teaspoon of Cajun seasoning. If your Cajun seasoning doesn't have salt, add a generous pinch of salt. Stir well. In a large skillet heat 1 tablespoon of olive oil, and then add the shrimp. Cook shrimp about 2-3 minutes on each side, or until fully cooked. Set aside onto a clean plate.
- Heat 2 tablespoons of olive oil to the same skillet and add the diced onion and cubed sweet potatoes, and the rest of the Cajun seasoning and stir well (or add a little bit of Cajun seasoning if you're afraid of the spice).
- Cook over medium heat for about 15 minutes, or until the sweet potatoes are full cooked, stirring frequently to prevent burning. Cover the skillet with a lid when not stirring to keep the heat in so the potatoes cook faster.
