These Barbecue-Cheddar Meatballs were made for cocktail parties and home entertaining. They're also a great way to make family movie night extra special.

Steps:
- Heat oven to 375ºF.
- Combine tomatoes, onion powder and 3/4 cup barbecue sauce in slow cooker sprayed with cooking spray; cover with lid. Cook on HIGH until ready to add the meatballs.
- Meanwhile, cover 2 rimmed baking sheets with foil; spray with cooking spray. Mix meat, eggs, cracker crumbs, cheese and remaining barbecue sauce just until blended. Shape into 72 small meatballs, using about 1 Tbsp. meat mixture for each meatball. Place on prepared baking sheets. Bake 15 min. or until done.
- Add meatballs to slow cooker; stir to evenly coat with sauce. Reduce heat to LOW to keep meatballs warm until ready to serve right from the slow cooker.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine the beef, bread, onion, milk, salt and eggs. Shape into little meatballs, about 1 inch in size. Place the meatballs into a 9x13 inch baking dish.
- Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes. Pour barbecue sauce over the meatballs and bake for 35 more minutes.

- Mix first 4 ingredients in large bowl until blended. Mix in pepper. Shape half of meat mixture into eight 1/2-inch-thick patties. Shape remaining meat mixture into four 1-inch-thick patties. (Can be made 8 hours ahead. Cover and chill.)
- Prepare barbecue (medium-high heat). Grill patties to desired doneness, topping with cheese for last minute of cooking, about 4 minutes per side for medium-rare 1/2-inch-thick patties, and about 6 minutes per side for medium-rare 1-inch-thick patties. Place burgers on bottom halves of buns. Top with lettuce, tomatoes and upper halves of buns.

- Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
- In a large bowl, mix the ground beef, garlic powder, onion powder, pepper, salt, bread crumbs, garlic, diced onion, parsley, egg, ketchup, mustard, Worcestershire sauce, and honey until evenly combined. Set aside in the refrigerator.
- Cut the 4 onions vertically on cutting board. Remove the stem and root from each piece. The layers of each onion will act as "shells" to wrap around each meatball.
- Remove the meatball mixture from the refrigerator and pinch off golf ball-sized pieces of meat. Press a small cube of cheddar cheese into the middle of each meat portion, then form into a meatball shape with your hands.
- Wrap each meatball in 2 onion "shells", then with 2 strips of bacon, and transfer to the prepared baking sheet.
- Brush the meatballs with barbecue sauce, covering them completely.
- Bake for 45 minutes, brushing again with BBQ sauce halfway through, until deep brown with a nice crust on the outside.

- Preheat the oven to 425 degrees F (220 degrees C). Place a cooking rack on top of a baking sheet.
- Combine ground beef, bread crumbs, onion, egg, Worcestershire sauce, steak seasoning, salt, and pepper in a bowl; mix until combined. - Cut three 18x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 3-qt. slow cooker. - Heat oven to 375 degrees.
- While oven is warming, mix together the tomatoes, 1 1/2 cups bbq sauce, and onion powder. Set aside.
- Cover a cookie sheet with foil and lightly spray with non stick cooking spray.
- In a medium bowl combine the meat, egg, crushed crackers, cheese, and 1/2 cup of barbecue sauce. Mix together well.
- Roll hamburger mixture into 1 inch balls and place on prepared baking sheet.
- Bake for 15 minutes or until cooked through.
- While the meatballs are cooking, place the tomato/bbq sauce mixture in a saucepan and bring to a boil over med/low heat.
- We like to serve these meatballs over a bed of rice or mashed potatoes. Place on rice and spoon bbq sauce over the meatballs.

I've been tweaking my old meatball recipe over the years, and finally came up with a version everyone loves. And as we all know---everything's better with CHEESE! This also makes a great burger, just omit the parsley and oregano and try substituting the cheddar for pepper jack cheese.

- Preheat oven to 350 degrees.
- Saute onion in olive oil on low-med heat until translucent, about 5 minutes Add minced garlic and saute one minute more. Set aside.
- In large bowl, beat egg. Add the cracker crumbs, seasonings, onion and garlic and mix well with fork. Crumble the ground beef into the bowl and gently mix with hands, being careful not to "overwork" it, as this can cause tough meatballs.
- Place a cooling rack in a cookie sheet with sides or large baking pan. shape mixture into 1 1/2 inch balls and place on rack. Bake at 350 for 25 minutes.
GRANDMA'S BARBECUED COCKTAIL MEATBALLS
As long as I can remember, my Grandma Audrey made these meatballs on Christmas Eve. A few years back, she shared the recipe with me. These are great for any party, but at my house, Christmas Eve just wouldn't be the same without them! These can be made ahead, and just heated when ready to serve.
