This is out of an old Pillsbury cookbook called "Real Home Cooking" dated 1991...it say's that strips of chicken and chunks of pineapple bake in a sweet-sour sauce.

- Heat oven to 375°.
- In medium saucepan, combine onion, sugar, garlic powder, ketchup, 3/4 cup reserved pineapple liquid, lemon juice and soy sauce,.
- Bring to a boil.
- Reduce heat: cover and simmer 15 minutes. stirring occasionally.
- In plastic bag or shallow bowl, toss chicken strips with flour to coat.
- In large skillet over medium heat, cook chicken in hot oil 4 to 5 minutes or until lightly browned.
- Arrange cooked chicken and pineapple in 12X8-inch (2 qtr) baking dish.
- Top with sauce; sprinkle with sesame seeds.
- Bake for 20 to 25 minutes or until chicken is hot and sauce is bubbly.
- Serve over hot cooked rice.

- Drain pineapple, reserving juice. Dissolve cornstarch in 2 Tbsp. reserved juice; set remaining juice aside for later use. Cook chicken in Dutch oven or deep large skillet on medium heat 5 min. or until evenly browned, turning occasionally. PINEAPPLE CHICKEN
Mmmmmmmmm, this turned out really good. Make sure the pineapple chunks don't get burned. The gravy at the end is not really gravy, it's more like a thickened sauce from all the juices in the pan. I just call it gravy because after thickening it you can pour it over the chicken like you would any other regular gravy.

- Preheat oven 350 degrees F.
- In a small bowl mix together soy sauce, honey, pineapple juice (reserved from the can of the pineapple chunks), cinnamon, and balsamic vinegar.
- Lay the chicken on a large roasting pan and dump the pineapple chunks all around the chicken. Pour the sauce over the chicken and pineapple and bake for 45-55 minutes.
- After baking take the juices from the pan reserve half in a smal bowl and pour the other half into a small saucepan and cook on medium high until it boils and then. With the reserved juice combine with cornstarch and mic well. Add this half to the sauce pan. Cook it for 10 minutes or until thickened. Make sure to put the chicken in a warm place to leave it warm.

STICKY PINEAPPLE CHICKEN

- 2 minutes - Cut the chicken breasts into small, bite-sized cubes and place into a gallon zipper bag.
- 1 minutes - Scoop flour, salt and pepper into the bag with the chicken. Shake to cover.

- Place a large skillet over medium-high heat. Add the oil and butter. When the butter is melted and the oil is hot, add the chicken, bell peppers and the whites of the scallions. Cook, stirring occasionally, until the chicken is browned and cooked through, about 5 minutes.

- Add the chicken, salt, and Shaoxing cooking wine in a medium-size bowl, mix well. Let marinate while preparing other ingredients.
- Combine all the sauce ingredients in a medium-size bowl. Stir until the sugar is dissolved and set aside.
- When you're ready to cook, add the cornstarch to the marinated chicken and toss it to coat it completely.
- Heat the oil over medium-high heat in a large nonstick (or carbon steel) skillet until hot. Shake the excess cornstarch off the chicken and spread the pieces into the pan without overlapping. Cook without touching until the bottom is browned, 2 minutes or so. Flip to cook the other side until browned, another 2 minutes. Transfer the chicken to a big plate to let it cool.
- Use a few layers of paper towel held in a pair of tongs to wipe the extra oil from the pan and leave only 1 tablespoon in it. If your pan doesn't have enough oil, add 1 tablespoon of oil. Heat the skillet over high heat and add the pineapples and peppers. Add the ginger on top of the veggies. Allow them to cook undisturbed for 1 to 2 minutes, until the pineapples caramelize and the peppers begin to blister. Stir a few times.
- Stir the sauce again to dissolve the cornstarch completely, and pour it into the pan. Cook until the sauce is fully thickened.
- Take the pan off the heat and add the chicken. Toss to coat the chicken with sauce.
- Serve hot as a main with steamed rice.

- Combine crushed pineapple + juice, chicken stock, apple cider vinegar, soy sauce, brown sugar, ginger, minced garlic, red chili flakes, cornstarch & water in a medium bowl, whisk - set aside.
- Toss chicken chunks with oil in a large bowl.
- Sprinkle with salt & pepper, and stir to combine. Set aside.
- Place cornstarch for the chicken in a zip-top bag, add the chicken to the bag & close. Shake to coat & then set aside.
- Heat oil to 350 degrees in a wok or large skillet.
- Carefully drop several pieces of chicken into the hot oil, working in batches to not overcrowd the chicken.
- Fry until golden. Scoop out the chicken & drain on a paper towel-lined baking sheet.
- Continue frying & draining the remaining chicken.
- Carefully transfer the hot oil into a Pyrex measuring cup so it can cool.
- Add the garlic & pineapple sauce to a medium saucepan & bring to a simmer.
- Cook mixture, stirring constantly until it starts to thicken.
- Add the chicken, toss to combine.
- Serve with fried or steamed rice.
CHINESE PINEAPPLE CHICKEN
Steps:
- Remove meat from bones of chicken. Cut meat, onion and celery into 3/4" cubes. Cut water chestnuts into quarters. Cut pineapple slices into eighths. Mix cornstarch, soy sauce, salt and water. Smear chicken with mixture. Heat 1 tablespoon lard or cooking oil in frying pan. Add onion and stir half minute. Add celery and water chestnuts and cook, stirring, 1 minute. Remove. Heat remaining 3 tablespoons lard or cooking oil. Add chicken meat and cook 2 minutes only (overcooking the diced chicken will ruin the dish). Return vegetables; add pineapple pieces. Stir until heated. Add pineapple syrup. Bring to a boil.
PINEAPPLE THRONE CHICKEN TACOS
We channeled the flavors of al pastor in our seasonings for this chicken that roast standing upright on the core of a pineapple--you get even cooking all around and the spices play to the sweet juicy fruit's taste. The trickiest part of this dish is making sure you cut the pineapple base flat, so the chicken doesn't tip over once it begins to cook. If it does, you can prop the bird up on the grill with a brick or other heatproof anchor.

- For the chicken: Combine the chile powder, cumin, oregano, garlic powder, cloves and 1 teaspoon salt in a small bowl. Rub all over the outside of the chicken and sprinkle a little in the cavity. Let sit at room temperature 1 hour or refrigerate up to overnight.
- When you are ready to cook, prepare a grill for medium (350 to 375 degrees F) indirect heat (for a gas grill, leave one or two burners on low or off; for a charcoal grill, bank the coals on one side of the grill). Fold a double thickness of aluminum foil to about 10 inches square and place in the center of the indirect heat (or use a disposable aluminum pan).
- Cut the top from the pineapple and cut a small slice from the bottom, if needed, so the pineapple stands up firmly on its own. Use a serrated knife to cut down vertically, along the core to make a plank, stopping a little more than an inch from the base of the pineapple. Cut horizontally above the base to remove 1 plank of pineapple. Remove 3 more planks in the same manner--ending up with a firm base holding up the pineapple core. Cut the flesh from the pineapple. Coarsely chop 1 cup and set aside for the sauce. Cube the remaining pineapple for salsa, about 1 1/2 cups, and set aside.
- Stuff the pineapple core in the cavity of the chicken to make it stand up straight. Place on the foil on the grill and cover the grill. Cook the chicken for 1 hour.
- For the sauce: Meanwhile, melt the achiote paste in a small skillet over low heat, adding 1 to 2 tablespoons water if it is too thick to melt (different brands have different textures). Once melted, add the garlic and cook until sizzling, about 1 minute. Stir in the cumin, oregano, cloves and 1/2 teaspoon salt and remove from the heat. Transfer to a blender with the reserved 1 cup chopped pineapple, vinegar and agave. Blend to make a smooth sauce about the consistency of BBQ sauce. Season with salt. You will have about 1 1/2 cups. Divide the sauce between 2 bowls, reserving one bowl for basting and one for serving.
- After 1 hour, brush the chicken with some of the basting sauce and re-cover the grill. Continue to cook, basting every 10 minutes, until the skin is deep golden brown and the chicken is cooked through and tender (an instant-read thermometer should read 165 degrees F in the thickest part of the thigh), 30 to 40 minutes more. Remove the chicken to a cutting board to rest for 10 minutes and remove the pineapple core.
- For the salsa: While the chicken rests, toss the reserved 1 1/2 cups pineapple cubes in a medium bowl with the lime juice, oil, plum tomato, jalapeno, red onion and 1 teaspoon salt. Toss well. Add the cilantro and toss just to combine.

Steps:
- For the pineapple ginger sauce: Blend pineapple and ginger and add to a rice cooker. Bring to boil, then add brown sugar. Mix cornstarch in a bowl with 1 cup water, then add cornstarch slurry to the sauce.
- For the pineapple mojo chicken: Preheat a smoker or grill for cooking at 250 degrees F.
- Combine lime juice, brown sugar, cumin, paprika, salt, onion, oregano and 1 cup pineapple ginger sauce in a bowl. Add chicken and mix together. Cover with banana leaves and put in smoker. Cook overnight.
- For the cilantro noodles: Soak noodles in warm water for approximately 10 minutes while you bring salted water to a boil. When water boils, add noodles and cook for 5 minutes. Strain and chill. Blend cilantro, garlic, lime juice, white vinegar and salt together. Mix with the noodles.
- For the pineapple mojo chicken bowl: Arrange noodles in a bowl. Top with chicken, then arrange Pico de Gallo, Beans, Pickled Red Onions, potato sticks, carrots barbecue sauce and Cilantro Aioli around the top.
- Combine the tomatoes, cilantro, onion, lime juice, vinegar, garlic and salt together in a bowl.
- Bring olive oil to heat in a rice cooker. Add onions, garlic, peppers, carrots and celery to oil and cook for approximately 5 minutes. Add sherry wine and reduce by half. Add the beans, cumin, salt, browning sauce, granulated sugar, pepper, bay leaves and oregano and cook for 20 minutes.
- Combine vinegar, sugar and 1 cup water in a rice cooker and bring it to boil. Add the red onions and cook until translucent. Remove from the heat and refrigerate 1 day before using.
- Mix cilantro stems, garlic, lime juice, vinegar and salt in a blender. Whisk together blended items with mayo.
