Turkey-Meatloaf Burgers image

Using dark meat makes these burgers extra-juicy and flavorful.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Turkey Recipes     Ground Turkey Recipes

Time 1h45m

Number Of Ingredients 16

2 jars (12 ounces each) red-pepper relish, such as Fourth Creek
1 small onion, chopped
2 cloves garlic, chopped
1 tablespoon plus 1 teaspoon extra-virgin olive oil, plus more for brushing
2 tablespoons low-sodium soy sauce
2 pounds ground dark turkey
4 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1 slice soft white bread, torn into pea-size pieces (1 cup)
Coarse salt and freshly ground pepper
3 tablespoons Heinz Chili Sauce, plus more for brushing
1/2 cup mayonnaise
2 cups packed finely shredded kale
1/2 teaspoon balsamic vinegar
8 potato rolls, split
4 tablespoons unsalted butter, melted

Steps:

  • Drain 1 jar relish in a sieve; discard liquid. Pulse 2/3 cup drained relish with onion and garlic in a food processor until finely chopped.
  • Heat 1 tablespoon oil in a skillet over medium-high; add relish mixture. Cook, stirring, until a thick paste forms, about 7 minutes. Stir in soy sauce. Transfer to a bowl; let cool 5 minutes. Stir in turkey, Worcestershire, mustard, bread, 1 1/2 teaspoons salt, and pepper to taste. Form into 8 patties, each about 4 inches in diameter. Refrigerate, covered, at least 1 hour and up to 8 hours.
  • Preheat grill to medium. Brush both sides of burgers with oil, then brush grates. Grill 5 minutes. Flip; lightly brush tops with chili sauce and grill until a thermometer inserted into centers registers 165 degrees, 5 to 6 minutes more.
  • Combine chili sauce and mayonnaise. Drizzle kale with vinegar and remaining 1 teaspoon oil; season with salt and pepper. Brush split sides of rolls with butter; grill until lightly toasted. Sandwich burgers in rolls with chili-sauce mixture, remaining relish, and kale.

TURKEY MEATLOAF BURGERS

Turkey Meatloaf Burgers image

A meatloaf style turkey burger that's moist and flavorful. My kids love these burgers and don't realize it's a lighter alternative to beef burger. My kids just slap on some mayo and head to town. Great served with lettuce, tomato, and your choice of condiments, with a side of chips or raw crispy veggies.

Categories     Meat and Poultry Recipes     Turkey     Ground Turkey Recipes

Time 40m

Yield 8

Number Of Ingredients 10

2 pounds ground turkey
1 ⅓ cups seasoned bread crumbs
1 small onion - grated, and juice drained
2 eggs
3 tablespoons applesauce
2 teaspoons chili powder
1 teaspoon paprika
1 teaspoon kosher salt
2 tablespoons olive oil
8 hamburger buns, split

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix the turkey, bread crumbs, onion, eggs, applesauce, chili powder, paprika, and kosher salt in a large bowl until thoroughly combined. Divide mixture into 8 equal portions, then shape into patties.
  • Heat olive oil in a large skillet over medium-high heat. Arrange the patties in the skillet and cook until browned, 3 to 5 minutes on each side. Place the browned patties on a paper towel-lined plate to drain. Transfer the patties to a 9x13-inch baking dish.
  • Bake the turkey burgers in the preheated oven until no longer pink in the center and the juices run clear, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve the turkey burgers on the hamburger buns.

TURKEY STUFFING MEATLOAF

Turkey Stuffing Meatloaf image

Provided by A Family Feast

Categories     leftovers

Time 1h20m

Number Of Ingredients 16

4 cups dry stuffing mix, divided (we used Pepperidge Farms Herb Seasoned Classic Stuffing Mix)
1 quart turkey stock, divided (boxed is OK, our homemade recipe is better)
6 tablespoons butter
1 ½ cups onion, diced
1 cup celery, diced
2 teaspoons minced garlic
1 tablespoon Bell's Seasoning
4 whole eggs, beaten
2 pounds ground turkey (we used 85% lean from Shady Brook Farms, which is a mix of white and dark meat)
1 ½ teaspoons kosher salt (taste your stock. If salty, cut back on adding salt)
½ teaspoon freshly ground black pepper
Half of stock from above
3 ½ tablespoons butter
5 tablespoons all-purpose flour
½ teaspoon browning and seasoning sauce, such as Kitchen Bouquet
Cranberry sauce, for serving on the side

Steps:

  • Preheat oven to 375 degrees F.
  • In a large bowl, add 3 cups of the stuffing mix and stir in two cups of the stock. Let sit to soak up the liquid and soften.
  • In a medium saute pan over medium heat, add butter to melt. Once melted, add onion, celery, garlic and poultry seasoning. Cook until the vegetables are starting to get soft. Set aside to cool.
  • Pour the remaining cup of stuffing mix in a food processor and process to crumbs. Set this aside.
  • Add the eggs, ground turkey, salt and pepper to the bowl with the three cups of stuffing mix and gently combine
  • Add the now-cooled celery and onions along with the cup of ground stuffing mix to the bowl and stir in to combine.
  • In a small saute pan in some melted butter, fry up a small piece of the meatloaf to sample a taste. Adjust the seasonings as needed.
  • Line a medium sheet tray with parchment and spray with pan spray.
  • Scrape the meatloaf mixture into the center of the prepared sheet tray. Fill a bowl with water and using wet hands, form the meatloaf into a log, wetting hands often to shape and smooth top and sides. This will also help keep it from cracking.
  • Bake for 55-60 minutes to an internal temperature of 155 degrees F. (It's best to use a probe thermometer connected to a device that will alarm at 155 degrees F). If you use an instant read thermometer instead, as soon as you withdraw the probe, insert a fat toothpick into the hole to stop the juices from leaking out. (Leave the hole plugged for 15 minutes after the meatloaf comes out of the oven.)
  • Once the internal temperature reaches 155 degrees F, remove the meatloaf from the oven, tent with foil and let rest 15 minutes before slicing.
  • While the meatloaf is cooking, make the gravy by heating the two remaining cups of stock in a medium sauce pan.
  • In a small saute pan, melt the butter over medium low and add the flour. Cook for 2-3 minutes until raw flour smell is gone.
  • Slowly add this mixture to the hot stock while whisking until you reach your desired thickness.
  • Add the Kitchen Bouquet and cook on low for a few minutes. Taste for seasoning and add salt and pepper if needed.
  • To serve, place a thick slice of meatloaf on a serving dish, cover with hot gravy and serve cranberry sauce on the side.

THANKSGIVING FLAVORED TURKEY BURGERS

Thanksgiving Flavored Turkey Burgers image

Thanksgiving on a bun any time of year! Use stuffing mix and cranberry sauce to turn ground turkey into an easy and delicious dinner. Serve with sweet potato fries with chipotle ketchup.

Provided by Hez

Categories     Meat and Poultry Recipes     Turkey     Ground Turkey Recipes

Time 55m

Yield 16

Number Of Ingredients 9

¼ cup butter
1 onion, finely chopped
½ cup finely chopped celery
3 pounds ground turkey breast
1 (6 ounce) package chicken-flavored dry bread stuffing mix
2 eggs
16 hamburger buns, split
1 (16 ounce) can cranberry sauce
whipped cream cheese

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Heat the butter in a skillet over medium-low heat, and cook and stir the onion and celery until the onion is soft and translucent, about 5 minutes.
  • Place the cooked onion and celery in a large bowl with the ground turkey, stuffing mix, and eggs; mix to thoroughly combine. Form the mixture into 16 patties. Unlike hamburger, these patties will not change shape while cooking, so make them even in size.
  • Grill the turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Place each patty on a hamburger bun, and top with cranberry sauce and a dollop of whipped cream cheese to serve.

Here's what you need: unsalted butter, unseasoned stuffing mix, chicken stock, yellow onion, celery, carrot, kosher salt, freshly ground black pepper, McCormick® Rubbed Sage, ground turkey, large egg, jellied whole-berry cranberry sauce, ketchup, dijon mustard, kosher salt

Provided by McCormick

  • Bake the turkey and stuffing loaf for 25 minutes.
  • While the meatloaf loaf bakes, make the glaze: In a medium bowl, mix together the cranberry sauce, ketchup, and mustard.
  • Pour the glaze over the meatloaf, then return to the oven and bake for another 20 minutes, or until the internal temperature 165°F (75°C).
