- Preheat oven to 350°F. Lightly grease a mini muffin pan with non-stick cooking spray. Set aside.
- Make a well in the center and add the pumpkin, applesauce, mashed banana and mashed avocado. Stir until well combined.
- Scoop batter evenly among the 24 mini muffin cups, filling each one completely full. Bake for 10-12 minutes or until set. Avoid over-baking them. You don’t want the tops to be too crisp or browned. They should be set and soft enough for your baby to easily eat.

- Place the trivet in the pot and add 1 cup of water. Spray 2 egg bite molds with nonstick cooking spray and set them aside.
- Combine the bananas, oats, cinnamon, vanilla extract and salt in a large bowl. Use a fork to mash the ingredients together, then fold in the chocolate chips (if using).
- Fill each of the cups in the egg bite molds with the banana-oat mixture and then cover the molds with foil. Place both egg bite molds in the pot, ensuring the cups aren't stacked directly on top of one another.
- Close and lock the lid, then turn the steam release valve to sealing (closed). Select Pressure Cook High (Manual or Steam for Crockpot Express) and set the cook time for 8 minutes. Press Start/Stop (again, for Crockpot Express models). When the cook time is complete, quick release the pressure and remove the lid. Use oven mitts to grasp the trivet handles and carefully remove the molds from the pot. Remove the foil and set the bites aside to cool for 10 minutes.

- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper, silicone mat, or lightly grease with oil.
- Mix: In a medium size bowl, mash bananas to a fairly smooth consistency (a few small chunks is ok). Add oats and mix well. Add in chocolate chips, mix again. If the mixture is really wet, add a few tablespoons of oats (see notes).
- Scoop: Using a 1 tablespoon measuring spoon or trigger scooper, scoop heaping scoops of mixture and place on cookie sheet. Leave in a dome shape or flatten it out a bit with your fingers to make a flatter shape. Depending on the size you scoop, you should get anywhere from 12 – 16 cookies.
- Bake: Place in oven, on the center rack, and bake for 15 – 20 minutes. If you make your scoops dome shaped and on the larger side, bake for 20 – 25 minutes. Remove from oven, let cool a few minutes before eating.

- Line a platter or small baking sheet with parchment paper. Place about 1/2 teaspoon of peanut butter on a banana slice and top with another banana slice to make a little banana peanut butter sandwich. Keep doing this until all banana slices are used and you have about 30 bites. Place bites on two parchment lined platters or plates and place in the freezer to harden for about 1 hour.
- Once banana bites have been in the freezer for over an hour, melt your chocolate by adding chocolate and coconut oil to a microwave-safe bowl. Microwave for 1 minute, stir and microwave in additional 30 second increments until chocolate is completely melted. This shouldn't take more than 2 minutes of microwave time.
- Once chocolate is melted, remove one platter of your frozen banana bites from the freezer. Dip each frozen banana bite into the melted chocolate so that half of each bite is coated. You can coat the full bite with chocolate, but you'll need more chocolate chips if you want to do this.

- Place the banana in a large bowl and mash well with a fork. Add the almond milk, egg, maple syrup, vanilla extract, coconut oil, lemon zest and juice, and whisk until smooth and well combined. In a separate bowl, combine the oats, cinnamon, salt and baking powder. Add the dry ingredient to the wet ingredients and whisk to combine. Stir in the blueberries.
- Spoon the oatmeal mixture into the prepared mini muffin tin. Filling the wells almost to the top. You should have enough oatmeal for 20 bites.
- Bake for 18-20 minutes until the oatmeal has set and the tops of the bites are lightly browned. (At this point you can simply let your bites cool, but I like to sprinkle the bites with a little brown sugar and then pop them under the broiler for a couple minutes until they get nicely browned and crispy on top.)

- In a small cooking pot add oats, 1/2 banana and some water to cover the oats. Start stirring at medium heat. While stirring mash the banana. If needed, add some more water to make the oatmeal the consistency you want. In the end I added about a cup water to achieve the consistency I wanted.
- Turn off heat, transfer into a breakfast bowl and top with the almond butter, the rest of the banana and some chopped almonds. Voila - you're ready and you just read a French word.

- Mash the bananas with a fork, add the oats plus other add-ins and stir. Once it’s all incorporated, drop 1 1/2 inch balls on the baking sheet and press down (like peanut butter cookies but without the fork). They won’t rise or change shape in the oven so make them the size and shape you want now. About 2 inches across works best. Bake for 12 minutes.
