BAKED SPICED SWEET POTATOES AND PEARS (CREOLE)
This recipe was found on the internet at gumbopages.com. The original recipe called for peeling the sweet potatoes, but I much prefer them unpeeled.

Steps:
- Preheat oven to 400 degrees F & butter a 13"x9" glass baking dish.
- In a small saucepan over medium-low heat, stir butter, cane syrup, pear nectar, vanilla, Bourbon & OJ until butter melts.
- Increase heat & boil until mixture is slightly reduced, about 5 minutes, then remove from heat & whisk in the cinnamon, nutmeg & salt.
- Arrange1/3 of the potato slices in the prepared baking dish, then top with half of the pear slices, & then with another 1/3 of the potato slices. Finally, arrange the remaining slices of potato & pear on top & on their edge, alternating potato & pear, & overlapping slightly.
- Sprinkle lightly with salt, then pour the cane syrup mixture over everything.
- Cover the dish tightly with aluminum foil & bake until sweet potatoes are nearly tender, about 1 hour.
- Uncover & bake until completely tender, basting occasionally with the syrup, for about 20-30 minutes longer, checking with a toothpick or knife point to make sure the potatoes are completely tender.
- Spoon the syrup over the sweet potatoes & pears one last time & serve hot.

ROASTED SWEET POTATOES WITH PECANS AND SPICED MAPLE SAUCE

- Heat oven to 450 degrees F and arrange rack in the middle.
- While oven heats, place pecans on a baking sheet to toast until they smell nutty and are slightly darker, about 5 minutes. Remove from oven and set aside.
- Place sweet potatoes on a baking sheet, drizzle with oil. Season well with salt and freshly ground black pepper, and toss to coat. Roast until golden brown and tender when pierced with a knife, about 40 to 45 minutes.
- Meanwhile, melt butter in a small saucepan over medium heat. When it foams, stir in maple syrup and cayenne and let cook briefly, about 1 minute. Serve sweet potatoes with a drizzle of maple butter and a scattering of pecans.
SPICY SWEET POTATOES
The sweetness of the potatoes is offset by the spiciness of the Cajun pepper. Adjust the pepper to taste. My family absolutely loves this recipe!

- Butter a 2-quart baking dish or four 1-cup ramekins and set aside.
- Preheat oven to 350°F.
- Scrub the sweet potatoes and boil or steam until very tender. Remove from heat and let stand until cool enough to handle.
- Peel the sweet potatoes.
- Put them in a bowl and mash with salt, brown sugar, butter, ginger, coriander and coconut milk until very smooth.
- Spoon sweet potatoes into baking dish or ramekins.
- Top with coconut and marshmallows. Bake until marshmallows and coconut are lightly browned, 10 to 15 minutes.

- Preheat an oven to 425 degrees F (220 degrees C).
- Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil, then sprinkle the brown sugar, paprika, black pepper, onion powder, garlic powder, poultry seasoning, chili powder, and cayenne pepper overtop. - Place the pears, wine, and water in a small saucepan and bring to a boil over high heat. Turn heat to medium-low and simmer until pears are soft, about 5-10 minutes. Remove pears from wine and reserve.
- Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to potatoes to steam dry for a minute or two.

- Pierce sweet potatoes and place on a microwave-safe plate. Microwave, uncovered, on high for 13-15 minutes or until tender. Cool. Peel and cut into 1/4-in. slices; set aside. , In a large microwave-safe bowl, combine the brown sugar and cornstarch. Stir in the orange juice and pear juice until smooth. Stir in butter and salt. SPICED AUBERGINE, SWEET POTATO AND SPINACH CURRY
A lovely fragrant curry, good with plain basmati rice and a cucumber and mint salad dressed with fresh lime juice.

- Cut Aubergines into 1 inch cubes, peel sweet potato and cut also into 1 inch cubes.
- Bruise the lemongrass and cut off the dry top half. Put lemongrass into processor with the coriander root and stems, garlic, ginger, chilli, lime leaves and 2 tbsp water. Blend to a paste.
- In a large fry pan heat 3 tbsp oil until almost smoking. Fry Aubergine in small batches until golden, remove and drain on kitchen paper.
- Place a large saucepan over a medium heat and add the remaining 1 tbsp oil, when hot add onions and cook, stirring from time to time for about 5 mins until translucent. Add the paste together with the roasted spice mix and cook, stirring for 3-4 mins to release the flavours.
- Pour in the coconut milk, then add the tamarind water, fish sauce and sugar. Stir well, bring to the boil, than add the sweet potato.
- Turn down the heat and simmer for 10 mins, then add the browned aubergine and cook for a further 5 minutes.
- In a separate pan cook the spinach quickly until just wilted. Tip into a sieve and refresh under cold running water and squeeze dry.
- Just before serving add the spinach to the curry and gently warm through. Taste and adjust seasonings if necessary with sugar or fish sauce. You are looking for a balance of sweet, sour, hot and salty flavours.
