1 cup white sugar
1 ⅓ cups peanut butter
1 cup white corn syrup
4 cups high protein crisp rice and wheat cereal
1 teaspoon vanilla extract
1 pinch salt

Steps:

  • Blend syrup, sugar, vanilla and salt in a 2 quart microwave-safe dish. Cook on high 4 minutes, or until mixture boils and sugar dissolves.
  • Stir in peanut butter, then add the cereal.
  • Drop by teaspoonfuls onto waxed paper. Let cool before storing.

3 tablespoons unsalted butter, plus more for baking dish
4 cups miniature marshmallows
1/3 cup creamy peanut butter, preferably natural
1/2 teaspoon coarse salt
6 cups puffed-rice cereal
Nonstick cooking spray or vegetable oil, for pressing
1 package (12 ounces) semisweet chocolate chips, melted
1/4 cup chopped, roasted salted peanuts

Steps:

  • Butter an 8-inch square baking dish. In a large pot, combine marshmallows, peanut butter, butter, and salt. Cook over medium, stirring, until melted, about 4 minutes. Add cereal and stir to combine. With a wooden spoon greased with cooking spray or oil, press half the cereal mixture into dish. Spread half the melted chocolate on top. Repeat with remaining cereal mixture and chocolate; sprinkle with peanuts.

Currently I am obsessed with no bake cookies. #34401 are some of my favorites, but I was looking for ones without chocolate and came across this recipe in my "More With Less" cookbook. Really easy and fast and taste quite wonderful. My child who hates coconut even liked them!

1/2 cup brown sugar
1/3 cup light corn syrup
1 teaspoon vanilla
3/4 cup peanut butter
3 cups flake cereal
1 cup coconut

Steps:

  • In a large pan mix the brown sugar and the syrup.
  • When it starts to boil add the vanilla and the peanut butter, stirring well.
  • Take it off the heat and add the cereal and coconut. Mix well and drop by teaspoonfuls onto a cookie sheet you have sprayed with non stick spray.
  • Let cool.

250 ml Rice Krispies
375 ml corn flakes
50 ml brown sugar
125 ml peanut butter
125 ml corn syrup
2 ml vanilla

Steps:

  • Put double boiler on to start water boiling.
  • In a large bowl, mix corn flakes and rice krispies.
  • Melt sugar, peanut butter and syrup in top of double boiler. Make sure the sugar has melted. Add the vanilla.
  • Add dry ingredients and stir until they are well coated.
  • Using two teaspoons, drop spoonfuls onto a cookie sheet and let stand until firm.

Edited to add: After having this as my breakfast for a few days, I've noticed that I get hungry less throughout the day AND my snack cravings have decreased substantially. I'm not ready to call it any kind of diet miracle, but at least in the short term it appears that it may help my dieting efforts considerably. I'm going to try replacing the peanut butter with other types of flavorings and will note those as I go along. EDITED AGAIN: A little research confirms that flax in any form is a natural appetite suppressant. Yay!! I've tried this with only 1 tablespoon of peanut butter and enjoy it just as much, and with fewer calories and fat.

20 frosted mini-wheats cereal
2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup butter, soft
1 cup peanut butter

2 eggs

Steps:

  • Oven@ 350 Crush cereal into shreds.
  • Set aside.
  • Mix flour, soda and salt; set aside.
  • Mix rest of ingredients.
  • Beat until light and fluffy.
  • Fold in dry ingredients; mix well.
  • Drop by tablespoons full onto ungreased cookie sheat.
  • Criss-cross flatten with a fork.

6 cups cereal, mixture (Rice Krispies, Corn Flakes and Honey Nut Cheerios work best)
1 cup corn syrup
1 cup peanut butter
1/3 cup white sugar

Steps:

  • Measure cereal into large bowl. Set aside.
  • Boil corn syrup in microwave. Add white sugar and stir well. Return to microwave and reheat until boiling.
  • Add peanut butter to sugar/syrup mixture and stir well.
  • Quickly pour peanut butter/syrup/sugar mixture into mixing bowl with cereal. Stir well (but fast!) and then transfer to a pan or baking sheet. *NOTE: This step, and the one following, must be done as quickly as possible because as the corn syrup cools the cereal mixture becomes harder to spread.*.
  • Form mixture into one big rectangle about 3/4 inch thick. Cool in fridge for 1 hour.
  • After its cooled the cereal rectangle may be cut into bars or squares. An alternative is to break the rectangle up by hand into pieces.
  • Please note that cheerios should not make up more than 1/3rd of the mix as they absorb the corn syrup. If you need to use more cheerios (or other absorbent cereal) then add a bit more corn syrup.

I also used 1/4 cup applesauce for 1/4 cup margarine to lower fat. They were super easy to mix and are sturdy enough to travel well (I mailed some to an avid fan!). Hope you enjoy.
