Keep Sybil Brown's zippy jambalaya mix on hand, and a full-flavored meal is never far away. The Highland, California, cook adds shrimp, smoked sausage and a few other easy ingredients to the nicely seasoned rice mix to create a speedy skillet sensation.

- Combine the first 10 ingredients. Divide into three equal batches; store in airtight containers in a cool, dry place for up to 6 months. Yield: about 3 batches (3-1/3 cups total). , To prepare jambalaya: In a small saucepan, bring water and green pepper to a boil. Stir in 1 cup jambalaya mix; return to a boil. Reduce heat; cover and simmer until rice is tender, 18-20 minutes. , In another saucepan, heat tomato sauce and sausage. Cook shrimp in boiling water until pink; drain. Stir into sausage mixture. Serve with rice mixture.

AUTHENTIC JAMBALAYA RECIPE (EASY & HEALTHY JAMBALAYA)

Steps:
- Heat the oil on medium in a large Dutch oven on the stove top.
- Add onion, celery, and bell pepper and cook about 5 minutes.
- Add garlic, basil, oregano, and thyme and stir. Cook for about 5 more minutes.
- Add the chicken and sausage and let brown for 5-10 minutes, stirring often.
- Add cayenne pepper and paprika to the meat mixture and blend lightly.
- Pour in the crushed tomatoes, chicken broth, and rice and mix. Bring to a light boil, then lower the heat to 1-2 and cover.
- Cook covered on low for 45 minutes, stirring a couple times to make sure the rice isn't sticking to the bottom.
- During the last 5-10 minutes of cooking, add the shrimp to the top of the mixture and cover. Check again after about 5 minutes and flip shrimp over, making sure not to cover it deeply so you can keep an eye on its doneness. Cover and cook 5 more minutes or until shrimp is opaque pink and white.
- Serve right away with a side salad and crusty bread if desired.

JAMBALAYA MIX
I found a version of this recipe on recipelion.com, but have tweaked it a bit (especially in regards to the cooking day ingredients). Not only will this make a great gift, but it's an extremely fast way to cook jambalaya (and has, after one cooking, become my go to recipe). I think you could probably even use canned chicken and it would still be excellent. I am posting this for the $70/week meal challenge

- Combine through cayenne pepper in a jar or baggy to make as a gift. Attach ingrdients and the following instructions to the gift. (Or, simply make the mix to use at home.).
- Place mix, water (or broth), and tomatoes (with juice) and bring to a boil. Reduce heat to simmer. Add sausage and cook 20 minutes or until almost all the liquid is absorbed (It will probably take more, closer to 30 minutes). Add chicken and cook five minutes more. Remove and discard bay leaf.
JAMBALAYA MIX IN A JAR
Here's an unusual gift idea. After all the cookies and cakes in a jar here's a good tasting, easy gift giving idea. I put the ingredients in a small jar with instructions tied around the lid with a festive ribbon. I always list the ingredients on the back of the instructions. Cook time is just to make the jars of mix, not the making of the actual jambalaya.

- In a large bowl, combine all the ingredients.
- Divide evenly among three airtight containers (there will be alittle over 1 cup in each container).
- Store in a dry, cool place for up to 6 months.
- HERE'S THE INSTRUCTIONS TO MAKE THE JAMBALAYA.
- In a saucepan bring 2 cups water and 1/2 cup chopped green bell pepper to a boil.
- Stir in the contents of one jar of the dried mix, return to a boil.
- Reduce heat, cover and simmer for 19 to 20 minutes or until rice is tender.
- In another saucepan heat 8 ounces of tomato sauce and one pound of fully cooked smoked sausage that has been cut into 1/4 inch slices.
- Add one pound of medium, peeled, deveined shrimp and cook until shrimp is pink.
- Combine both pans.
- More tomato sauce may be added if mixture is dry.

ONE PAN JAMBALAYA
This Chicken and Sausage Jambalaya dinner is healthy comfort food that is made in just one pan!

- In a large skillet with a fitted lid, add the oil over medium high heat. Add the kielbasa and chicken and brown well, flipping once or twice to brown on all sides.
- Remove to a plate. (The chicken doesn't need to be cooked all the way through).
- Add butter and flour to the pan and stir well, scraping up any leftover browned bits from the pan.
- Add onion, garlic, celery, and bell peppers and saute for a few minutes.
- Add basil, cajun seasoning, diced tomatoes and sugar and stir well to combine. Simmer for 1-2 minutes.
- Add chicken broth, rice, and reserved meat. Bring mixture to a boil. Reduce heat, cover pan with fitted lid and cook for about 20-25 minutes or until water is absorbed and rice is tender.
- Remove from heat, stir gently just to toss, and then allow to cool for 5 minutes before serving.

- Combine the butter and sausage in a Dutch oven or heavy-gauge pot over high heat, and saute for about 6 minutes, stirring occasionally. Add the bell pepper, onion, celery, and garlic, and season with Creole seasoning, salt, and black pepper. Saute, still over high heat, for about 8 minutes, or until the natural sugars in the vegetables have browned and caramelized.
- Add the tomatoes, shrimp, fish, and bay leaf, and stir. Add the rice, stir gently, and add the water. Gently move a spoon across the bottom of the pot, making sure that the rice is not sticking. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes or until the rice has absorbed most of the liquid. Turn off the heat, then fold in the oysters, cover, and let sit for about 8 minutes, during which time the jambalaya will continue cooking from residual heat.
- To serve, transfer to a serving bowl, and mix in the green onions. Season with hot sauce.
- Thoroughly combine all ingredients in a blender, food processor, or mixing bowl, and pour the mixture into a large glass or plastic jar. Seal it so that it's airtight. It will keep indefinitely.
CHICKEN JAMBALAYA

- In a deep lidded non-stick pan/wok fry the onion and pepper until coloured to your liking - remove and set aside
- Mix the flour and paprika and then dust the diced chicken with the mix. Fry the chicken in the same pan for about 5 minutes until coloured all over - remove and set aside.
- Fry the chorizo and chilli together until the chorizo starts to release it's oils.
- Stir in the rice so that it is coated in the oils. Return the onions, pepper and chicken to the pan and then pour over the stock and give everything a good stir.
- Bring to the boil then cover and gently simmer for 20 minutes or until the rice is cooked (avoid stiring if possible).
- Serve with a dollop or creme fraiche.

- Heat over to 375 degrees F. Empty bag of cauliflower rice onto a sheet pan and drizzle with 1 Tbsp olive oil and 1 tsp Cajun spice. Mix together with your hands and place in the oven for 10 minutes. Remove from oven after 10 min. and set aside.

- Add the sausage coins to the pot for 2-4 minutes to cook through. Then add the tomatoes and the chicken broth and heat all the way through, stirring everything together as it cooks. If you want the stew to be more of a soup, add additional chicken broth.
