AUTHENTIC JAMBALAYA RECIPE (EASY & HEALTHY JAMBALAYA)

Authentic Jambalaya Recipe (Easy & Healthy Jambalaya) image

An authentic jambalaya recipe is savory, spicy, meaty, and oh so flavorful! And it's very easy to make as well! Let me share with you my favorite healthy jambalaya with lots of meat, crushed tomatoes, and jambalaya seasoning.

Provided by Savory With Soul

Categories     Main Course

Time 1h30m

Number Of Ingredients 18

3 Tbsp olive oil ((or oil of choice))
1 medium onion, (chopped)
2 large stalks celery, (chopped)
1 medium bell pepper ((any color, but I used red))
4 Tbsp garlic, (minced)
1 pound chicken breast, (cut into 1/2-inch pieces)
9-10 ounces sausage, ((link type) cut into bite-size medallions (andouille or any sausage of choice))
1 tsp cayenne pepper ((more or less to taste))
2 tsp paprika ((more or less to taste))
salt (to taste)
black pepper (to taste)
1 tsp thyme (, dry )
1 Tbsp oregano (, dry)
1 Tbsp basil (, dry)
1 can crushed tomatoes, (undrained (28 ounces))
3 cups chicken broth ((or stock))
1 cup rice, (uncooked (I used Lundberg Jubilee, a wild mixed rice))
½ pound shrimp (medium size, tail on or off, raw or cooked)

Steps:

  • Heat the oil on medium in a large Dutch oven on the stove top.
  • Add onion, celery, and bell pepper and cook about 5 minutes.
  • Add garlic, basil, oregano, and thyme and stir. Cook for about 5 more minutes.
  • Add the chicken and sausage and let brown for 5-10 minutes, stirring often.
  • Add cayenne pepper and paprika to the meat mixture and blend lightly.
  • Pour in the crushed tomatoes, chicken broth, and rice and mix. Bring to a light boil, then lower the heat to 1-2 and cover.
  • Cook covered on low for 45 minutes, stirring a couple times to make sure the rice isn't sticking to the bottom.
  • During the last 5-10 minutes of cooking, add the shrimp to the top of the mixture and cover. Check again after about 5 minutes and flip shrimp over, making sure not to cover it deeply so you can keep an eye on its doneness. Cover and cook 5 more minutes or until shrimp is opaque pink and white.
  • Serve right away with a side salad and crusty bread if desired.

JAMBALAYA MIX

Jambalaya Mix image

I found a version of this recipe on recipelion.com, but have tweaked it a bit (especially in regards to the cooking day ingredients). Not only will this make a great gift, but it's an extremely fast way to cook jambalaya (and has, after one cooking, become my go to recipe). I think you could probably even use canned chicken and it would still be excellent. I am posting this for the $70/week meal challenge

Provided by JanieTeachGal

Categories     White Rice

Time 40m

Yield 1 huge pot of goodness, 8 serving(s)

Number Of Ingredients 15

1 cup raw long-grain rice
1 tablespoon onion flakes
1 teaspoon dried celery flakes
1 tablespoon green pepper flakes (I know Zatarain's puts these out, and they can sometimes be found in bulk spice bins)
1 tablespoon parsley flakes
1 bay leaf (I used 3 small ones)
2 teaspoons beef bouillon granules (I used 2 bouillon cubes)
1/2 teaspoon garlic powder
1/2 teaspoon black pepper (always use freshly ground)
1/2 teaspoon thyme (I used leaves, not the ground)
1/4-1/2 teaspoon cayenne
3 cups water (low sodium if chicken broth) or 3 cups chicken broth (low sodium if chicken broth)
1 (14 ounce) can petite diced tomatoes (I used tomatoes with chilies and some complained about the spice)
12 ounces cooked smoked sausage, chopped
8 ounces cooked boneless skinless chicken breasts, chopped

Steps:

  • Combine through cayenne pepper in a jar or baggy to make as a gift. Attach ingrdients and the following instructions to the gift. (Or, simply make the mix to use at home.).
  • Place mix, water (or broth), and tomatoes (with juice) and bring to a boil. Reduce heat to simmer. Add sausage and cook 20 minutes or until almost all the liquid is absorbed (It will probably take more, closer to 30 minutes). Add chicken and cook five minutes more. Remove and discard bay leaf.

JAMBALAYA MIX IN A JAR

Jambalaya Mix in a Jar image

Here's an unusual gift idea. After all the cookies and cakes in a jar here's a good tasting, easy gift giving idea. I put the ingredients in a small jar with instructions tied around the lid with a festive ribbon. I always list the ingredients on the back of the instructions. Cook time is just to make the jars of mix, not the making of the actual jambalaya.

ONE PAN JAMBALAYA

One Pan Jambalaya image

This Chicken and Sausage Jambalaya dinner is healthy comfort food that is made in just one pan!

Provided by Lauren Allen

Categories     Main Course

Time 55m

Number Of Ingredients 16

1 Tablespoon oil ((vegetable or canola oil))
1 pound andouille sausage (, cut into thin slices*)
1/2 pound boneless skinless chicken breasts (, cut into bite-size pieces)
2 Tablespoons all-purpose flour
2 Tablespoons butter
1 small onion (, chopped)
3-4 green onions (, chopped)
2 cloves garlic (, finely minced)
3 ribs celery (, chopped)
1 medium bell pepper ((green or red), chopped*)
1 teaspoon dried basil
1 teaspoon cajun seasoning
14.5 ounce can diced tomatoes
1/2 teaspoon granulated sugar
2 cups low-sodium chicken broth
1 cup long grain white rice

Steps:

  • In a large skillet with a fitted lid, add the oil over medium high heat. Add the kielbasa and chicken and brown well, flipping once or twice to brown on all sides.
  • Remove to a plate. (The chicken doesn't need to be cooked all the way through).
  • Add butter and flour to the pan and stir well, scraping up any leftover browned bits from the pan.
  • Add onion, garlic, celery, and bell peppers and saute for a few minutes.
  • Add basil, cajun seasoning, diced tomatoes and sugar and stir well to combine. Simmer for 1-2 minutes.
  • Add chicken broth, rice, and reserved meat. Bring mixture to a boil. Reduce heat, cover pan with fitted lid and cook for about 20-25 minutes or until water is absorbed and rice is tender.
  • Remove from heat, stir gently just to toss, and then allow to cool for 5 minutes before serving.

SEAFOOD JAMBALAYA

Seafood Jambalaya image

Provided by Food Network

Categories     main-dish

Time 1h19m

Yield 8 large servings

Number Of Ingredients 26

2 tablespoons butter
1 pound andouille sausage, cut into 1/4-inch slices
1 large bell pepper, any color, cut into large dice
1 large onion, cut into large dice
3 ribs celery, cut into large dice
1 small head garlic, cloves peeled and minced
Creole Seafood Seasoning, recipe follows, or any Creole seasoning, to taste
Kosher salt and freshly ground black pepper
2 large tomatoes, cored, peeled, seeded, and chopped
1 pound medium shrimp, peeled
1/2 pound fish fillets, diced (trout, catfish, redfish, bass, and bluefish would work well)
1 bay leaf
3 cups long-grain rice, rinsed 3 times
6 cups water
1 pint shucked oysters, with their liquor
2 bunches green onions, thinly sliced
1/4 teaspoon hot sauce, or to taste
1/3 cup table salt
1/4 cup granulated or powdered garlic
1/4 cup fresh ground black pepper
2 tablespoons cayenne pepper, or to taste
1 tablespoons dried thyme
2 tablespoons dried basil
1 tablespoons dried oregano
1/3 cup paprika
3 tablespoons granulated or powdered onion

Steps:

  • Combine the butter and sausage in a Dutch oven or heavy-gauge pot over high heat, and saute for about 6 minutes, stirring occasionally. Add the bell pepper, onion, celery, and garlic, and season with Creole seasoning, salt, and black pepper. Saute, still over high heat, for about 8 minutes, or until the natural sugars in the vegetables have browned and caramelized.
  • Add the tomatoes, shrimp, fish, and bay leaf, and stir. Add the rice, stir gently, and add the water. Gently move a spoon across the bottom of the pot, making sure that the rice is not sticking. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes or until the rice has absorbed most of the liquid. Turn off the heat, then fold in the oysters, cover, and let sit for about 8 minutes, during which time the jambalaya will continue cooking from residual heat.
  • To serve, transfer to a serving bowl, and mix in the green onions. Season with hot sauce.
  • Thoroughly combine all ingredients in a blender, food processor, or mixing bowl, and pour the mixture into a large glass or plastic jar. Seal it so that it's airtight. It will keep indefinitely.
