4 cups torn assorted salad greens
4 medium carrots, julienned
1-1/2 cups cooked macaroni shells
2 cups frozen peas, thawed
1 medium red onion, diced
3/4 pound fully cooked ham, cubed
1/3 cup shredded Swiss cheese
1/3 cup shredded cheddar cheese
DRESSING:
1 cup mayonnaise
1/2 cup sour cream
2 teaspoons Dijon mustard
1-1/2 teaspoons chopped fresh basil or 1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
2 hard-boiled large eggs, cut into wedges, optional

Steps:

  • In a 3-1/2-qt. glass bowl, layer greens, carrots, macaroni, peas, onion, ham and cheeses. In a small bowl, combine the first six dressing ingredients; spread over salad. Garnish with eggs if desired. Cover and chill for several hours.

3 cloves garlic
1 (8 oz.) pkg. cream cheese (​softened)
1 cup grated Parmesan cheese
dash of freshly ground black pepper
1 cup chopped walnuts
1/2 cup olive oil
Optional: 4 leaves basil (for garnish)

Steps:

  • Gather the ingredients.
  • In ​a food processor , combine the basil and garlic. Process until finely chopped. Add cream cheese, Parmesan cheese, walnuts, olive oil, and a few turns of ground black pepper. Process until smooth.
  • Transfer spread mixture to a serving dish and garnish with fresh basil leaves.
  • Serve with assorted crackers or baguette rounds.

1/2 cup chopped fresh mushrooms
1 container (8 ounces) soft cream cheese with garden vegetables
1/4 cup chopped fresh basil leaves
1 container (8 ounces) Swiss-almond cold-pack cheese spread
1/4 cup chopped red and/or yellow bell peppers
1/4 cup chopped fresh parsley
48 crackers

Steps:

  • Spread Cheddar cheese into 5-inch round, about 1/2 inch thick, on serving platter; smooth side and top with small metal spatula. Sprinkle mushrooms over cheese; press lightly.
  • Spread cream cheese over mushrooms; smooth side and top. Sprinkle with basil; press lightly.
  • Top with Swiss-almond cheese; smooth side and top. Sprinkle bell peppers over top. Press parsley into side. Serve with crackers.

1/4 cup sun-dried tomatoes in olive oil
2 tablespoons chopped fresh Thai basil (you can use fresh sweet basil if you do not have Thai available)
Kosher salt and freshly ground black pepper
Toasted bagels, for serving

Steps:

  • Put the cream cheese, sun-dried tomatoes and basil in a food processor. Process until smooth and the ingredients are evenly incorporated. Season to taste and pulse 3 times to mix evenly. Serve with toasted bagels. Can be made 1 day ahead.

2 cloves garlic, chopped
3 tablespoons olive oil
1 package Keebler® Town House® Original cracker

Steps:

  • 1. Line 3 1/2-to 4-cup bowl or mold with plastic wrap, allowing excess wrap to extend over sides. Set aside.2. In medium bowl gently stir together cream cheese and tomato. Set aside.3. In food processor bowl combine basil, Parmesan cheese, parsley, pine nuts and garlic. Cover and process until very finely chopped. With food processor running, slowly add oil through feed tube. Process until mixture is consistency of soft butter.4. Spread one-third of cream cheese mixture in prepared bowl. Top with one-half of basil mixture. Repeat layers. 1/4 cup roasted red peppers
5 pitted black olives, chopped
1 tub (12 oz.) PHILADELPHIA Cream Cheese Spread
1/4 cup lightly packed fresh basil
1 clove garlic, peeled
2 Tbsp. sliced almonds, toasted
round buttery crackers

Steps:

  • Cut star shape from 1 pepper, using 1/2-inch cookie cutter; set aside. Chop pepper trimmings and remaining peppers; mix with olives.
  • Blend cream cheese spread, basil and garlic in blender until smooth. Wash cream cheese tub; line with plastic wrap, with ends extending over side of tub.
  • Spoon 1/2 cup cream cheese mixture into tub; top with olive mixture and remaining cream cheese mixture. Press firmly into tub with back of spoon.
  • Refrigerate 1 hour. Unmold cheese spread onto plate; discard plastic wrap. Top cheese spread with nuts and pepper star. Serve with crackers.

1 1/3 cups sun-dried tomatoes packed in oil, drained
2 (3 ounce) packages cream cheese, softened and divided
1/3 cup tomato paste
4 garlic cloves, chopped
1 1/2 cups firmly packed fresh basil
1/4 cup pine nuts
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1/4 cup grated parmesan cheese
vegetable oil cooking spray
fresh rosemary sprig
sun-dried tomato
crackers or baguette, slices

Steps:

  • Beat 2 (8-ounce) packages cream cheese, butter, 1/2 teaspoon salt, and pepper at medium speed with an electric mixer until creamy. Set aside.
  • Process dried tomatoes in a food processor until chopped. Add 1 (3-ounce) package cream cheese, tomato paste, and 1/4 teaspoon salt; process until smooth, stopping to scrape down sides. Spoon into a bowl, and set aside. Wipe container of food processor clean.
  • Process garlic and next 4 ingredients in food processor until chopped. Add Parmesan cheese, remaining 3-ounce package cream cheese, and remaining 1/4 teaspoon salt; pulse just until blended, stopping to scrape down sides.
  • Spray a 6-inch springform pan with cooking spray. Spread 1/2 cup butter mixture evenly on bottom of springform pan. Layer with half of tomato mixture, 1/2 cup butter mixture, and half of basil mixture; top with 1/2 cup butter mixture.
  • Repeat layers with remaining tomato mixture, 1/2 cup butter mixture, and remaining basil mixture. Top with remaining butter mixture. Cover with plastic wrap; chill at least 8 hours.
  • Run a knife gently around edge of pan to loosen sides. Remove sides of pan; carefully remove bottom of pan, and place layered spread on a serving tray. Garnish, if desired. Serve with crackers or baguette slices.

It makes for a lovely starter and is made a day ahead, so you may concentrate on other things! **Overnight refrigeration is NOT included in cook/prep time!

8 ounces mascarpone cheese, softened
8 ounces cream cheese, softened
1 cup basil pesto (drained of excess liquid)
1 cup sun-dried tomato pesto (drained of excess liquid)
2 tablespoons pine nuts, toasted
1 sprig fresh basil
cracker, and toasted baguette slices

Steps:

  • In a mixer or with wooden spoon, blend softened cheeses until smooth.
  • Line a 7-inch loaf pan with enough dampened cheese cloth to hang over each side of the pan.
  • With moist spatula, spread 1/3 cheese mixture in pan until evenly covered. Top with basil pesto, careful not to blend with cheese.
  • Top with 1/3 cheese mixture by dropping small spoonfuls over previous layer and carefully spreading.
  • Then spread the sun-dried tomato pesto and top with the remaining 1/3 of cheese mixture until evenly covered.
  • Fold cheese cloth over top of cheese.
  • Wrap in foil and refrigerate overnight.
  • To serve, remove foil and cheese cloth carefully and invert onto serving platter.
  • Top with pine nuts and fresh basil sprig.
  • Serve at room temperature with plain crackers and toasted baguette slices.
