1 1/2 lbs sweet Italian sausage, cut into 1/2 inch slices (or use both sweet and hot sausages)
1/2 cup water
2 large green bell peppers, seeded and cut into 1-inch pieces (or use 1 red and 1 green)
2 onions, cut into 1-inch pieces
2 teaspoons dried oregano
6 crusty French rolls, halved horizonally
1/2 lb sliced provolone cheese

Steps:

  • Cook sausage in a large skillet over medium heat until brown (10 minutes). Reduce heat to low and add water, cover and simmer for 10 minutes.
  • Add peppers, onions and oregano to skillet and saute until tender (10 minutes). Pour off liquid.
  • Spoon sausage mixture into rolls, topping off with a few slices of cheese.
  • If desired, can be heated under broiler so cheese melts.

But before you grill the meat, get some peppers and onions soft and dark and fragrant in the heat, and use these as a bed on which to serve the links. Italian sausage works beautifully here, as do hot links and bratwurst. If cooking brats, think about simmering them first in beer and onions, then finishing them on the fire.

1 pound sweet peppers (green, red and yellow, if available) seeded and cut into eighths
2 large yellow onions, peeled and cut into large coins
3 to 4 tablespoons extra-virgin olive oil, more to taste
1/4 teaspoon salt, more to taste
2 pounds sweet or hot Italian sausages, or bratwurst or other fresh sausage

Steps:

  • Build a fire in your grill, leaving one side free of coals. When coals are covered with gray ash and the temperature is medium (you can hold your hand 5 inches above the coals for 5 to 7 seconds), you are ready to cook. (For a gas grill, turn all burners to high, lower cover and heat for 15 minutes, then turn burners to medium.)
  • Meanwhile, toss peppers and onions with oil and sprinkle with salt. Lightly prick sausages all over so that they do not burst.
  • Put peppers and onions in a grill basket or directly on the grill, turning occasionally until they are softened and dark at the edges, 10 to 12 minutes. Move them to the side of the grill without coals.
  • Place the sausages on the hot side of the grill, cover and cook, turning occasionally until they are cooked through, 8 to 10 minutes.
  • Transfer the peppers and onions to a platter and top with the sausages. Drizzle with olive oil and serve.

1/2 Red Onion (sliced)

Steps:

  • Heat up your grill. Get it as high as you can for charcoal and about 500°F for gas
  • In a skillet, add olive oil, mushrooms and onions and cook until softened
  • Add your sausages to the grill and cook until done, turning them every couple minutes
  • Cut your baguette down the middle. (Toast it on the grill a little if you like)
  • Layer the sandwich with onions and peppers first, add your mustard and top with the sausages. Cut into four mini sandwiches and serve.

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
  • Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.

  • Place the peppers in a paper bag, close, and cool slightly. Remove and discard the charred skin from the peppers; slice peppers into strips. Slice the onion halves. 1 large sweet yellow onion
2 red bell peppers
2 green bell peppers
¼ cup olive oil
salt and freshly ground pepper to taste
8 links of Italian Sausage, sweet, hot, or a combination of the two
4 club, hero or wedge rolls, split

Steps:

  • Peel the onions, cut them in half and slice, thinly, cross-wise.
  • Cut the peppers in half, remove the stems and seeds, and slice into thin strips.
  • In a large skillet, preferable cast iron, heat the olive oil over medium-high heat. Add the peppers and onions and season with salt and pepper.
  • Lower the heat to medium-low, and cook stirring frequently until onions are translucent and peppers are soft, 15-20 minutes.
  • Meanwhile, if using a gas grill turn the burners on one side to high. If using a charcoal grill, pile the coals on one side if the grill and light them.
  • Place the sausage directly over the fire and cook, turning until browned on all sides. Then move to the side of the grill with no fire, cover the grill and cook, turning once until sausage is done, 8-10 minutes.
  • Slice the club rolls open and place two links of sausage in each roll and cover with a heaping portion of the peppers and onions. Serve with a cold beer to wash it down!

  • Heat grill to medium-high heat. Place a grill pan on grill and allow to heat, approximately 5 minutes.

8 hot Italian Sausages, (you can choose mild if you prefer)
2 large sweet onions
4 red bell peppers
1 teaspoon coarse salt, divided (or to taste)
1/2 teaspoon freshly ground black pepper, divided (or to taste)
2 tablespoon extra virgin olive oil
8 hoagie rolls (or bratwurst buns)
8 oz sliced provolone cheese (optional)

Steps:

  • To make the foil packs, tear two ~12" x 20" sections of foil. Fold each in half. For each piece, roll the sides adjacent to the fold tightly 3-4 times to make a pouch.
  • Mix the sliced onions and peppers. Divide approximately between the two foil pouches. Add 1/2 teaspoon of salt, 1/4 teaspoon of freshly ground black pepper, and 1 tablespoon of oil to each pouch. Fold the top of the pouch several times to seal. Refrigerate until use.
  • Prepare charcoal grill for indirect heat. When the coals are hot and completely ashed over (white), add the sausages directly over the coals. Place the pepper-onion packs on the indirect heat side of the grill.
  • Grill the sausages for 3-5 minutes each on 2 sides, or until browned (check to be sure they don't burn; see Recipe Note #1). Continue grilling, turning as necessary, until thoroughly cooked, an additional 8-9 minutes (total 15-18 minutes) to cook through. 1 red onion, peeled
2 tbsp. olive oil
1 1/2 tsp. kosher salt
1/2 tsp. ground black pepper

Steps:

  • Cut the sides off of the bell peppers and remove the stem and seeds. Cut the bell peppers into 1-inch wide strips.
  • Quarter the onion by cutting through the root end, then cutting each quarter in half, lengthwise. Trim the root end from the onion wedges and break apart the pieces.
  • In a large bowl, combine the peppers, onions, olive oil, salt and pepper. Mix well to combine.
  • For the grill: Heat a grill over medium heat (about 375˚). Oil the grill grates well. Place the sausages on one side of the grill and a grill basket on the other. Add the onions and peppers to the grill basket in a single layer. Cover and cook until the sausages have grill marks on one side and the peppers and onions are slightly charred, 5 to 7 minutes. Turn the sausages and give the onions and peppers a stir.   • For the stovetop: Heat a large cast-iron skillet over medium heat. Place the sausages in a single layer, evenly spaced. Cover and cook until golden brown on one side, 5 to 7 minutes. Flip the sausages, cover and cook until the sausages internal temperature reaches 160˚, 5 to 7 minutes more. Remove from the heat and transfer to a plate. Return the skillet to medium-high heat and add the peppers and onions. Cook, stirring occasionally, until charred in spots and softened, 8 to 10 minutes.
  • Serve immediately with toasted rolls, if desired.

1 yellow bell pepper, top and bottom removed, cut into 4 planks

Steps:

  • Combine the olive oil, vinegar, oregano, garlic, 1/2 teaspoon salt and several grinds of pepper in a small jar or other lidded container. Shake to combine. Soak 2 long wooden skewers in water for 15 minutes (alternatively, use metal skewers).
  • Preheat a small grill to medium-high heat and brush with olive oil. Brush the peppers and onions with 2 to 3 tablespoons of the dressing. Stick the skewers through the sausage ring at a perpendicular angle to each other (in an X). Place the sausage ring in the middle of the grill and cook until the underside is charred, 5 to 6 minutes.
  • Flip the sausage ring with tongs and a spatula and arrange the peppers around the ring. Grill the sausage until browned and crispy in places and cooked through, 5 to 6 minutes more. Transfer to a cutting board. Add the onion rings to the empty space on the grill. Cook the peppers and onions until crisp-tender and charred on the edges, about 4 minutes per side (the peppers will come off first, since you put them on first). Transfer the vegetables to a cutting board as they finish cooking.
  • Brush the cut sides of the rolls with olive oil and grill, cut-side down, until toasted, about 1 minute. Flip and lay 2 slices of cheese on the grilled cut sides of each roll and cook until the cheese just begins to melt, moving as needed so they don't burn, 1 to 2 minutes.
