Steps:
- Heat the oven to 230C/210C fan/gas 8. Chop the sweet potatoes into 2-3cm cubes.
- Tip into a large, shallow roasting tin, drizzle with the oil and season with salt and pepper. If you're adding additional veg or herbs, such as sliced red onions, garlic cloves and thyme, tip these in as well. Toss everything together to coat in the oil, then roast for 20 mins. Toss again to ensure the potatoes cook evenly, and roast for another 15-20 mins until the potatoes are lightly browned on the outside and tender when pierced with a fork or knife.

Steps:
- Place sweet potato cubes and garlic in a saucepan and pour in chicken or vegetable broth to within a half inch of the top of the potatoes. Boil until very soft (the potatoes will sink down into the liquid as they cook), 12-15 minutes. Drain, reserving cooking liquid.
- Return potatoes to saucepan and mash with potato masher. Slowly add some of the cooking liquid, stirring until you get the consistency of a loose puree. It need not be perfectly smooth. Stir in thyme and butter, adding more to taste if needed, and season with salt and white pepper to taste. Keep warm in a double boiler. Drizzle aged balsamic vinegar over each portion just before serving.
BALSAMIC, HONEY & THYME ROASTED SWEET POTATOES
Easy and delish. Sweet and tangy and the thyme adds a great savory flavor. Just oven roasted. I do like to peel mine which is really the only work needed for this dish. Just toss with the dressing and roast. I serve these with just about anything. They are so simple and good.

THYME-ROASTED SWEET POTATOES
This slightly spicy, moist side dish is both deeply satisfying and nutritious. Sweet potatoes are rich in complex carbohydrates and fiber, giving them a low glycemic index (this means that they slow the body's absorption of sugar and help regulate blood-sugar levels). A bonus for weight watchers: All those complex carbs will make you feel fuller longer than white potatoes do.

THYME ROASTED SWEET POTATOES
Sweet potatoes at their easiest! The potatoes slices need to be in single layer against the pan, not on top of one another. Great for a dinner party! Herbes de Provence with thyme or rosemary sprigs can be used instead of just thyme leaves. Serve warm or at room temperature with sprigs for garnish.

HERB ROASTED SWEET POTATOES
Holidays are coming and here is yet another sweet potato recipe. The thyme, garlic and red pepper gives great flavor to the sweet potatoes. Instead of olive oil try using Pam or No Oil. Just spray the slices on both sides then shake them in the zip lock bag with the herbs. Use Yams if you prefer.
