4 slices bacon, chopped
3 bunches mustard greens, trimmed and chopped
2 tablespoons white vinegar
2 teaspoons sugar
Coarse salt
2 cups chicken broth

Steps:

  • In a large skillet over medium high heat brown bacon and render its fat. Add chopped greens to the pan in batches and turn until they wilt, then add more greens. When all of the greens are in the pan, add vinegar and cook a minute. Season greens with sugar and salt. Add chicken broth to the pan and cover. Reduce heat to medium low and simmer greens 15 to 20 minutes then serve.

2 tablespoons olive oil
1 medium onion, sliced thin (about 2 cups)
6 garlic cloves, smashed and peeled
2 bay leaves
2 sprigs thyme
1 1/2 cups red wine vinegar
1 cup chicken stock
1 bunch collard greens (about 6 packed cups) or 1 bunch mustard greens, washed and torn into 1-inch pieces (about 6 packed cups)
1/4 cup creme fraiche, plus extra for garnish

Steps:

  • Using paper towels, pat the chicken pieces dry; season liberally with salt and pepper.
  • In a Dutch oven, brown chicken in oil over medium high heat, about 5 minutes per side; transfer to a platter.
  • Reduce heat to medium and cook onions and garlic, scraping up any browned bits, 3 to 5 minutes; add in bay leaf and thyme.
  • Deglaze pot with vinegar and simmer until reduced by half, about 5 minutes.
  • Pour in chicken stock and bring to a boil; add greens, stirring until wilted, about 30 seconds.
  • Return chicken pieces, skin side up, and any accumulated juices, to pot until cooked through, about 10-12 minutes (occasionally baste with juices).
  • Transfer chicken to a serving platter and bring saue to another boil; reduce heat to medium low and stir in creme fraiche.
  • Cook, while stirring until sauce thickens slightly, about 3 minutes.
  • Spoon sauce and greens over chicken; serve with additional creme fraiche, if desired.

Salt and freshly ground black pepper

1 carrot, peeled and diced
1 celery stalk, diced
1 onion, diced
1 tablespoon butter
1 tablespoon olive oil
Splash of brandy
2 bay leaves, crumbled
4 garlic cloves, chopped
A few black peppercorns
3 cups chicken stock, heated
1 tablespoon chopped Italian parsley
1 onion, diced
1 tablespoon olive oil
1 tablespoon butter
1 bunch rapini or broccoli rabe
1 salt-packed anchovy, filleted, rinsed, and finely minced
2 garlic cloves, finely chopped
Salt and freshly ground black pepper
Salt and freshly ground black pepper
Ground cayenne pepper
Freshly squeezed lemon juice

Steps:

  • To prepare the chicken: The day before serving, season the chicken legs well with salt and pepper. Refrigerate overnight.
  • The next day, preheat the oven to 350 degrees F. Saute the carrot, celery, and onion in the butter and oil. Caramelize lightly, then deglaze the pan with the brandy. Transfer to the bottom of an ovenproof pan that will just hold the chicken legs. Arrange the legs skin side up. Add the bay leaves, garlic, peppercorns, and chicken stock. The bottom half of the meat should be immersed in the liquid, but the skin should be exposed. Braise on the top rack of the oven, checking after 45 minutes, until the meat is tender and the skin crispy.
  • Before serving, pour off some of the braising liquid with the vegetables. Degrease the liquid and reduce by a third. Taste as it is reducing to ensure that the salt doesn't intensify too much. If it is too salty, add a little plain reduced stock. Finish with the parsley.
  • To prepare the greens: Lightly brown the onion in the oil and the butter. Chop the greens into manageable pieces and saute slowly until wilted. Add a little water to prevent sticking if necessary. When the greens are cooked through, add the anchovy and garlic and cook a minute more. Turn off the heat and season with salt, pepper, cayenne, and lemon juice.
  • Serve the braised chicken with the greens.

2 lemons, sliced 1/2-inch thick
2 medium yellow onions, sliced 1/2-inch thick
6 chicken leg quarters
1 teaspoon dried oregano
1 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper
1/4 cup olive oil
2 cups chicken stock, preferably homemade
2 cups dry white wine
3 cups whole milk
1 cup polenta (not quick-cooking)
1 cup grated white Cheddar
1 tablespoon red wine vinegar
8 ounces sauteeing greens, such as kale, beet greens or chard, hand-torn into 3- to 4-inch pieces

Steps:

  • Preheat the broiler.
  • Place the lemon and onion slices in a baking pan large enough to hold them in a single layer. Place the chicken on top and sprinkle with the oregano, 1/2 teaspoon salt and 1/2 teaspoon pepper. Drizzle 2 tablespoons olive oil over the chicken. Rub the chicken to coat evenly with seasonings. Place under broiler to lightly brown the chicken skin, 5 to 10 minutes.
  • Remove chicken from broiler and set oven temperature to 325 degrees F. Pour the stock and wine into the pan and cover tightly with foil. Braise chicken in the oven until internal temperature reaches 165 degrees F, 30 to 35 minutes. Allow chicken to rest in baking pan, uncovered, for 30 minutes.
  • Meanwhile, place a large saucepan over high heat. Add the milk and 3 cups water and bring to a boil. Slowly add the polenta, whisking constantly to prevent lumping. Reduce the heat to low and cook, whisking occasionally to prevent sticking, until polenta is done, approximately 45 minutes. Add the cheese, vinegar, 1/2 teaspoon salt and 1/2 teaspoon pepper.
  • Place a large saute pan over medium-high heat. Once the pan is preheated add remaining 2 tablespoons olive oil and the greens. Season lightly with some of the remaining 1/2 teaspoon salt and 1/2 teaspoon pepper. Toss with tongs, lowering heat if necessary to prevent burning, until wilted and tender, then check the seasoning and adjust to your taste.
  • Preheat the broiler. Remove chicken from roasting pan and place on an ovenproof sheet pan. Remove and discard the onions and lemons. Pour the liquid from the roasting pan into a small saucepan and cook over medium-high heat until reduced to 1 cup. Place chicken in broiler and cook until skin becomes golden and very crispy, 5 to 10 minutes.
  • Spoon 3/4 cup polenta onto each of 4 to 6 large plates, then place 1/2 cup greens on top of each followed by a chicken leg. Spoon 2 tablespoons of the reduced chicken cooking liquid over the top of the chicken.

1 1/2 to 2 pounds bone-in, skin-on chicken thighs (about 4 to 6)
Kosher salt and black pepper
2 tablespoons canola or grapeseed oil
1 cup thinly sliced shallots (2 to 3 medium shallots)
2 tablespoons roughly chopped fresh sage leaves
3 garlic cloves, minced
3/4 cup fresh apple cider
2 tablespoons apple cider vinegar, plus more to taste
2 tablespoons Dijon mustard
3/4 to 1 cup chicken broth, preferably low-sodium
1 bunch curly kale (10 to 12 ounces), stemmed, leaves torn into bite-size pieces
1 crisp red apple, such as Fuji, cored and thinly sliced

Steps:

  • Pat the chicken thighs dry and season generously with salt and pepper.
  • In a Dutch oven or heavy pot, heat the oil over medium. Cook the chicken thighs skin-side down, undisturbed, until the skin is golden brown, 6 to 8 minutes. Flip and cook until lightly browned on the other side, about 4 minutes. Transfer to a plate.
  • Pour off all but about 3 tablespoons of fat from the pot, turn the heat to medium-low, then add the shallots and sage. Cook, stirring occasionally, until the shallots are translucent, about 3 minutes. Add the garlic and stir until fragrant, about 30 seconds. Be careful not to let the garlic burn.
  • Add the cider, cider vinegar, mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper and cook, scraping up any browned bits from the bottom of the pan, until the cider has reduced slightly, 2 to 3 minutes. Return the chicken and any accumulated juices to the pot, skin-side up. Pour just enough broth around (not on!) the chicken to cover the sides of the thighs but not cover the skin on top.
  • Bring to a boil, then turn the heat to low. Partly cover and gently simmer until the thighs are cooked through and tender, 20 to 25 minutes. Transfer the chicken to a clean plate or sheet pan (if you'd like to broil the chicken in the next step), raise the heat to medium, and add the kale and apple to the pot. Cook, tossing often, until all the kale is wilted, the apples are just softened and the liquid has reduced slightly, about 5 minutes. While the greens cook, if you'd like to crisp the skin on the chicken, pop it under the broiler for 2 to 3 minutes.
  • Taste for seasoning, and stir in 1 or 2 more teaspoons cider vinegar to taste. Divide the chicken and kale mixture among shallow bowls; serve with crusty bread to mop up broth.

1 ounce unsalted butter

1 lb green seedless grape
2 teaspoons cornstarch, mixed with a little cold water

Steps:

  • 1. Preheat oven to 350°F Toss the chicken pieces in the seasoned flour. Next, heat the butter and oil together in a frying pan and, when really hot, fry the chicken pieces in two or three batches until well browned all over. Place the chicken in a flameproof casserole dish.
  • Brown the shallots in the frying pan, stir in the garlic, then put them in the casserole. Now add the vinegar, bring it to the boil, add the stock, then pour over the chicken. Tuck in the bay leaves and thyme. Cover and cook for 35 mins, then add the grapes and cook in the oven for 15 minutes Now transfer the chicken pieces, shallots and grapes to a warmed serving dish.

1 (3 1/2-lb) chicken, cut into 8 serving pieces
1 lb shallots, thinly sliced
1 head garlic, cloves separated and peeled
1/4 cup balsamic vinegar

Steps:

  • Cook bacon in a deep 12-inch heavy skillet over moderately low heat, stirring, until crisp, about 8 minutes. Transfer with a slotted spoon to paper towels to drain and reserve bacon fat in skillet.
  • While bacon is cooking, pat chicken dry and season with salt and pepper. Brown, beginning with skin sides down, in 2 batches in bacon fat over moderately high heat, turning, about 8 minutes. Transfer chicken as browned with tongs to a plate and pour off all but 2 tablespoons fat from skillet.

When browning the chicken, avoid overcrowding the pot--brown the thighs in two batches if all eight do not fit comfortably. Polenta, wide noodles or mashed potatoes go really well with this dish. Also, it has less calories than the Nutrition Facts calculate because you remove the skin after browning.

8 bone-in skin-on chicken thighs (about 3 pounds, trimmed of excess fat and skin)
salt & fresh ground pepper
1 tablespoon olive oil
1 large onion, halved and sliced about 1/4 inch thick (about 2 cups)
1 tablespoon tomato paste
3 garlic cloves (minced or pressed through garlic press, about 1 tablespoon)
1 anchovy fillet, minced (about 1 teaspoon)
1 (14 1/2 ounce) can diced tomatoes
2 cups low sodium chicken broth
1/4 cup dry red wine
1/4 teaspoon red pepper flakes
1 1/2 tablespoons chopped fresh thyme leaves
1 bay leaf
1/2 lb green beans, ends removed and cut in half
1/2 cup balsamic vinegar

Steps:

  • Adjust oven rack to lower-middle position; heat oven to 350 degrees. Season chicken thighs with salt and pepper. Heat oil in nonreactive Dutch oven over medium-high heat until shimmering but not smoking; add chicken thighs skin-side down and cook without moving them until skin is crisped and well browned, 10 to 12 minutes. Using tongs, turn chicken pieces and brown on second side, about 5 minutes longer; transfer thighs to large plate.
  • Pour off all but 1 teaspoon fat from pot. Add onion and tomato paste and cook over medium heat, stirring occasionally and scraping bottom of pot with wooden spoon, until tomato paste begins to darken, about 4 minutes (if bottom of pot becomes very dark and sticky, stir in 1 to 2 tablespoons water, juice from tomatoes or some of chicken broth).
  • Add garlic and anchovy and cook, stirring constantly, until fragrant, about 1 minute.
  • Stir in tomatoes, chicken broth, and wine, scraping up browned bits with wooden spoon.
  • Add red pepper flakes, thyme, and bay.
  • Remove and discard skin from chicken thighs, then submerge chicken bone-side up in liquid, adding any chicken juices accumulated on plate.
  • Increase heat to high, bring to simmer, cover, then place pot in oven.
  • After 30 minutes add green beans. Cook chicken for another 10 minutes or until done (when it offers no resistance when poked with tip of paring knife but meat still clings to bone).
  • While chicken cooks, simmer balsamic vinegar in 8-inch nonreactive skillet over medium-high heat until thick, syrupy, and reduced to 1/4 cup, 3 to 5 minutes (begin measuring volume when vinegar begins to cling to sides of saucepan). Set aside.
  • Using slotted spoon, transfer chicken to plate and tent with foil (I don't always tent it, too lazy); discard bay leaf.
  • Bring liquid in Dutch oven to simmer over medium-high heat and cook until the beans are of the tenderness you like.
  • Stir about 1/3 cup sauce into balsamic reduction to loosen, then stir mixture into sauce; adjust seasoning with salt and pepper.
  • Return chicken and accumulated juices to sauce, cook long enough to warm chicken, turning once or twice. Serve immediately.

1/2 cup reduced-sodium soy sauce
1 tablespoon turbinado or light brown sugar
3 bay leaves
1 head garlic, cloves peeled and smashed

8 pieces bone-in, skin-on chicken thighs and drumsticks (about 3 pounds total)
2 tablespoons vegetable oil

Steps:

  • Combine vinegar, soy sauce, sugar, bay leaves, garlic, and 1 teaspoon pepper in a bowl; add chicken and toss until coated with marinade. Cover bowl and refrigerate at least 2 hours and up to overnight.
  • Remove chicken (reserving marinade) and pat dry with paper towels. Heat oil in a large Dutch oven over medium. Add half of chicken and cook until golden brown, 3 to 5 minutes. Turn and brown other sides about 2 minutes more; transfer to a plate and repeat with remaining chicken.

2 tablespoons olive oil
1 onion, chopped
1 clove garlic, minced

1/4 cup raspberry vinegar

Steps:

  • Preheat oven to 375.
  • Heat the butter and oil in a large saute pan or skillet and brown chicken a few pieces at a time.
  • Transfer browned chicken to an ovenproof baking dish.
  • To the remaining oil in the pan, add onion, garlic, and bay leaf, and cook gently for 1-2 minutes until onion is transparent.
  • Add the vinegar and water and stir to loosen any browned bits from the bottom of the skillet; pour the sauce over the chicken, being sure that the onions are distributed evenly around the chicken pieces and lodge the bay leaf at the bottom.
  • Season with salt and pepper.
  • Bake for 1 hour and 15 minutes or until chicken is tender; turn chicken pieces once during baking.
  • Transfer chicken pieces to serving dish.
  • Remove fat from pan juices (I usually use a paper towel or lettuce leaf placed on the layer of fat for a few seconds) and pour over the chicken.
  • Garnish with chopped parsley and serve.
  • Great with rice or noodles.
  • MY NOTE: I put the chicken in skin side down first, then covered the baking dish with foil for the first 1/2 hour of cooking, then turned the chicken and removed the foil for the remainder of the cooking time.

4 large chicken legs
1 tablespoon sea salt
2 tablespoons olive oil
1 ounce butter
2 medium red onions, cut into quarters
2/3 cup dry white wine
2 tablespoons dry vermouth
1 1/4 cups chicken stock
10 black peppercorns, crushed
2 tablespoons cider vinegar
1 tablespoon clear honey
8 ripe figs, halved
2 tablespoons parsley, chopped
salt and pepper

Steps:

  • Preheat the oven to 350°F.
  • Sprinkle the chicken legs with sea salt. For best results, cover and leave in the fridge overnight. When ready to cook, wipe off the salt and trim any excess flesh.
  • Heat the oil in a large heavy-bottomed pan, add the chicken skin side down, and cook for about 6 minutes or until coloured. Add the butter to the pan, and turn the chicken over to baste.
  • Add the onions and wine and simmer until the liquid has reduced by half. Add the vermouth and the stock, being careful not to cover the chicken completely.
  • Bring to a simmer and sprinkle the chicken with the crushed peppercorns. Transfer pan to oven. Roast for about 30 - 40 minutes or until thoroughly cooked.
  • Whilst the chicken is cooking, warm the honey and vinegar slightly.
  • Once cooked through, remove the chicken and onions from the pan and put to one side to keep warm.
  • Add the warmed honey mix to the sauce and simmer until reduced by half.
  • Place the figs in a large clean pan, cut side down, and strain the reduced sauce over the figs. Cook for 5 minutes, basting frequently until the figs have slightly softened.
  • Serve the chicken leg with the figs and onion quarters.
  • Add parsley to the sauce, check seasoning and pour over.

2 tablespoons olive oil
1 medium onion, sliced thin (about 2 cups)
6 garlic cloves, smashed and peeled
2 bay leaves
2 sprigs thyme
1 1/2 cups red wine vinegar
1 cup chicken stock
1 bunch collard greens (about 6 packed cups) or 1 bunch mustard greens, washed and torn into 1-inch pieces (about 6 packed cups)
1/4 cup creme fraiche, plus extra for garnish

Steps:

  • Using paper towels, pat the chicken pieces dry; season liberally with salt and pepper.
  • In a Dutch oven, brown chicken in oil over medium high heat, about 5 minutes per side; transfer to a platter.
  • Reduce heat to medium and cook onions and garlic, scraping up any browned bits, 3 to 5 minutes; add in bay leaf and thyme.
  • Deglaze pot with vinegar and simmer until reduced by half, about 5 minutes.
  • Pour in chicken stock and bring to a boil; add greens, stirring until wilted, about 30 seconds.
  • Return chicken pieces, skin side up, and any accumulated juices, to pot until cooked through, about 10-12 minutes (occasionally baste with juices).
  • Transfer chicken to a serving platter and bring saue to another boil; reduce heat to medium low and stir in creme fraiche.
  • Cook, while stirring until sauce thickens slightly, about 3 minutes.
  • Spoon sauce and greens over chicken; serve with additional creme fraiche, if desired.

This is a Southern twist on Coq au Vin. It is a one-dish-meal that goes great with rice, noodles, or crusty bread. From Chef Stephen Stryjewski, of New Orleans.

8 chicken thighs or drumsticks
2 Tbsp olive oil
