1/4 cup balsamic vinegar
1/4 cup water
1 1/2 tablespoons fresh lemon juice
1 tablespoon brown sugar, packed plus
1 teaspoon brown sugar, packed
4 salmon fillets, skin on (center cut)
salt & freshly ground black pepper
2 teaspoons olive oil

Steps:

  • Stir together balsamic vinegar, water, lemon juice, and brown sugar in a small bowl.
  • Pat salmon dry and season with salt and pepper.
  • Heat oil in a 12-inch nonstick skillet over medium high heat, not smoking. Increase heat to high, add salmon skin side up, and sear until well browned, about 4 minutes.
  • Turn fish over and sear until just cooked through, 3 to 4 minutes more.
  • Transfer salmon to plates and carefully add vinegar mixture to skillet (liquid will bubble vigorously and steam).
  • Simmer, stirring, until thickened and reduced to about 1/3 cup, about 2 minutes.
  • Spoon glaze over salmon.
  • Serve and enjoy!

2 tablespoons balsamic vinegar
2 tablespoons liquid honey
1 1/2 tablespoons Dijon mustard or 1 1/2 tablespoons grainy mustard

1 -2 teaspoon sesame seeds (optional)

Steps:

  • Preheat oven to 450F.
  • Place salmon, skin-side down, on a foil-lined baking dish.
  • In a bowl,stir vinegar with honey,mustard and oil.
  • Spoon over salmon.
  • Sprinkle with sesame seeds, if using.
  • Bake in centre of 450F oven til fish flakes with a fork from 11 to 12 minutes.

  • Preheat oven to 400°F Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.
  • Coat a small saucepan with non-stick cooking spray. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.

1 whole side of salmon, or 4 (6-ounce) salmon fillets
1 tablespoon fine sea salt, preferably gray salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon dry mustard
1/2 cup honey
1/4 cup balsamic vinegar
Melted butter, for brushing salmon
2 untreated cedar planks, each about 5 by 12-inches, soaked in water to cover for at least 12 hours (available at hardware stores)
Extra-virgin olive oil, for oiling the planks

Steps:

  • Preheat the broiler. Preheat the oven to 400 degrees F.
  • If using a side of salmon, cut about halfway through the flesh about every 5 to 6-inches so there are some spaces for the glazes to sink in. If using salmon fillets, slice about 8 to 10 sliced angles into flesh, to help flesh more completely soak in the glaze.
  • In a small bowl or cup, mix the salt, pepper, and dry mustard.
  • In a medium glass bowl, heat the honey in the microwave for 30 seconds to liquefy further. Remove from the microwave and mix in balsamic vinegar.
  • Brush the top of the salmon fillets (not the skin side) with the melted butter. Season the flesh side with the spice mixture. Brush with the honey-balsamic mixture, reserving some for later.
  • Put the soaked planks under the hot broiler, about 5 inches from the heat source, until the wood is browned on top, about 3 minutes. With tongs, carefully remove the planks from the oven.
  • Immediately brush the browned surface with olive oil, then lay the salmon fillets on the oiled surface, skin side down.
  • Put 2 cookie sheets in the oven below where the planks will go to catch any glazes or juices that run off. Return the planks to the broiler and cook the fish for 10 minutes. Baste with honey-balsamic and place in oven. Cook until it is done to your taste, about 10 to 15 more minutes, or 20 minutes total for medium.
  • Remove the fillets to a platter, or immediately serve directly from the planks.

A simple and healthy balsamic glaze for salmon!

2 salmon fillets (about 5-8 ounces per piece)
2 teaspoons olive oil
1 teaspoon minced garlic
3 tablespoons balsamic vinegar
2 teaspoons honey
1 teaspoon dijon mustard
1/4 teaspoon salt (or additional to taste)
1/4 teaspoon pepper (or additional to taste)

Steps:

  • Preheat the oven to 400 degrees.
  • Line a baking dish with foil and coat with cooking spray.
  • Season both sides of the salmon with a pinch of salt and pepper. Place the salmon in the baking dish.
  • In a small non-stick sauce pan over low heat saute the garlic and the olive oil about 30 seconds until fragrant. Add the vinegar, honey and dijon to the pan and turn up to medium. Stir well and continue to stir occasionally. Allow the sauce to cook for 3-5 minutes or until it turns into a thick glaze. Season with the rest of the salt and pepper to taste.
  • Brush the top of the salmon with the sauce.
  • Cook for 5 minutes. Remove from the over and brush the sauce on the salmon again.
  • Return the salmon to the oven for another 5-10 minutes or until it starts to flake. The thicker your piece of salmon the longer the cooking time.
  • Serve immediately.

Here we reduce the vinegar to a glaze, tempering the sharpness of the acid. The tangy sauce that results bring out the sweetness of the crisp-crusted salmon.

1/4 cup balsamic vinegar
1/4 cup water
1 1/2 tablespoons fresh lemon juice
1 tablespoon plus 1 teaspoon packed light brown sugar
4 (6-ounce) center-cut pieces salmon fillet with skin
Salt and freshly ground black pepper
2 teaspoons vegetable oil

Steps:

  • Stir together vinegar, water, lemon juice, and brown sugar in a small bowl. Pat salmon dry and season with salt and pepper. Heat oil in a 12-inch nonstick skillet over moderately high heat but not smoking. Increase heat to high, add salmon skin side up, and sear until well browned, about 4 minutes. Turn fish over and sear until just cooked through, 3 to 4 minutes more. Transfer salmon to plates and carefully add vinegar mixture to skillet (liquid will bubble vigorously and steam). Simmer, stirring, until thickened and reduced to about 1/3 cup, about 2 minutes. Spoon glaze over salmon.

2 Tbsp. (30 mL) olive oil
Freshly ground black pepper
1 cup (250 mL) ready to use 25% less sodium chicken broth
3 Tbsp. (45 mL) balsamic vinegar
1 Tbsp. (15 mL) cornstarch
1 Tbsp. (15 mL) brown sugar
1 Tbsp. (15 mL) orange juice
1/2 tsp. (2 mL) grated orange peel

2 salmon fillets (, about 6 ounces each)
1 teaspoon avocado oil (, or olive oil)
1 teaspoon butter (, optional)
Salt and Pepper
chopped parsley (, optional)
2 Tablespoons balsamic glaze (, more if desired)

Steps:

  • Remove the salmon from the refrigerator and let rest for about 10 minutes before preparing. Do not use frozen salmon, it must be thawed. Then pat the fillets dry with a paper towel. Drizzle a little olive oil and sprinkle salt and pepper over top.
  • Heat the butter and oil in a heavy bottom skillet over medium-high heat. Once the pan is hot, add the fillets, skin sides up. Let this side cook undisturbed for about 5 minutes. Turn the heat to medium if it's burning.
  • Flip the salmon and then cook the opposite side for an additional 3 minutes, or until the internal temperature reaches 130°F. You can brush the balsamic glaze on the last couple minutes of cooking if desired. Remove to a plate and let rest a few minutes before serving.
  • Drizzle the balsamic glaze over the top just before serving and add fresh herbs if desired.

2 tsp. ghee or avocado oil
2 cloves garlic, minced
2 dates, chopped
3 Tbsp. balsamic vinegar
1 cup Driscoll's raspberries
1 ½ tsp. fresh thyme leaves
¼ tsp. salt
Salt and Pepper, to taste

Steps:

  • In a small saucepan over medium-low heat, add ghee (or avocado oil). Heat until fat starts to shimmer. Add garlic and cook, stirring continuously, for 30 seconds.
  • Add dates, balsamic vinegar and raspberries. Cook, stirring occasionally, until sauce is thickened - about 5-6 minutes Remove from heat and stir in thyme and salt.
  • Optional: strain sauce through a fine mesh strainer to remove seeds.
  • Preheat broiler. Position rack 5-6 inches below the broiler element.
  • Place salmon fillets skin down on a baking sheet, sprinkle each filet with salt and pepper. Brush each fillet with 2-3 tablespoons of sauce.
  • Broil salmon for about 8-10 minutes or until salmon is opaque and flakes easily with a fork.
  • Serve salmon with additional sauce.
