CREAMY HATCH CHILE AND MUSHROOM CHICKEN BREASTS

Creamy Hatch Chile and Mushroom Chicken Breasts image

I made this dish with Hatch chiles that I had in my freezer and some onions and mushrooms that needed to be used. I served it over a bed of cilantro-lime rice. I shredded my chicken breast and mixed it in with the rice. Hubby preferred his chicken breast whole. We're going through a stay-at-home order due to the Coronavirus pandemic and this was a great meal to make with items that I already had.

Time 2h20m

Yield 4

Number Of Ingredients 12

cooking spray
1 pound skinless, boneless chicken breast halves
1 tablespoon olive oil
1 medium onion, thinly sliced
1 (8 ounce) package sliced fresh mushrooms
3 cloves garlic, crushed
¼ cup chicken broth
3 tablespoons taco seasoning mix
1 teaspoon salt
½ teaspoon ground black pepper
4 Hatch chile peppers, halved and seeded
½ cup heavy whipping cream

Steps:

  • Spray a slow cooker with nonstick cooking spray. Place chicken breasts in the slow cooker.
  • Heat olive oil in a skillet until shimmering. Add onion; cook and stir for 5 minutes. Add mushrooms and cook until onion is translucent and mushrooms are soft, 2 to 4 minutes. Add garlic and cook for 1 minute more.
  • Transfer the onion mixture to the slow cooker. Add chicken broth, taco seasoning, salt, and pepper. Cook on High for 1 hour 30 minutes.
  • Meanwhile, set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place chile peppers cut-side down on baking sheet.
  • Broil the chile peppers until skin is heavily blistered and turning black, about 4 minutes per side.
  • Transfer the chile peppers to a bowl and cover tightly with plastic wrap. Allow to steam as they cool, about 15 minutes. Remove the skins and chop the flesh into 1-inch pieces.
  • Add Hatch chiles and heavy whipping cream to the slow cooker and cook for 30 minutes more.

GRILLED CHICKEN THIGHS WITH MANGO-ANCHO SAUCE

Grilled Chicken Thighs with Mango-Ancho Sauce image

Sweet mango and smoky ancho chile are combined to make both a delicious marinade and a sauce for these grilled chicken thighs. This isn't spicy, so the whole family can enjoy it. I like to serve this with cilantro-lime rice.

Categories     Meat and Poultry Recipes     Chicken     Chicken Thigh Recipes

Time 2h40m

Yield 4

Number Of Ingredients 9

1 large mango, peeled and diced
1 tablespoon lime juice
1 tablespoon honey
2 teaspoons ancho chile powder
½ teaspoon salt
1 tablespoon rice wine vinegar
1 tablespoon olive oil
4 (4 ounce) bone-in chicken thighs with skin
salt and ground black pepper to taste

Steps:

  • Combine mango, lime juice, honey, ancho chile powder, and salt in the bowl of a small food processor; pulse until smooth. Remove 1/4 cup of the sauce to a small bowl and whisk in rice wine vinegar and olive oil to make a marinade. Place remaining sauce in the refrigerator.
  • Place chicken thighs in a resealable plastic bag and drizzle with mango-ancho marinade. Seal the bag and marinate in the refrigerator, 2 hours to overnight.
  • Twenty minutes before grilling, remove chicken from the marinade, letting the excess drip off. Season chicken on both sides with salt and pepper. Discard the remaining marinade.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place chicken on the hot grill, skin-side down, and grill for 3 to 4 minutes. Flip chicken over and grill on the other side for 3 to 4 minutes. Continue flipping every 3 to 4 minutes until an instant-read thermometer inserted near the bone read 165 degrees F (74 degrees C), 22 to 25 minutes total. Turn grill to low heat and brush both sides of the chicken with reserved mango-ancho sauce, grilling an additional 1 to 2 minutes.

Red-Chili-Braised Chicken With Potatoes And Mushrooms image

Provided by Molly O'Neill

Categories     dinner, main course

Time 2h45m

Yield Four servings

Number Of Ingredients 12

8 cloves garlic, unpeeled
4 medium dried ancho chilies (about 2 ounces), stemmed and seeded
8 medium dried guajillo chilies (about 2 ounces), stemmed and seeded
1 1/2 teaspoons dried oregano, preferably Mexican
1/8 teaspoon ground cumin, preferably ground fresh
2 2/3 cups chicken broth, homemade or low-sodium canned, plus more if needed 1 1/2 tablespoons vegetable or olive oil
1 2 1/2- to 3-pound chicken, quartered
1 medium white onion, peeled and cut across into1/8-inch-thick slices
1 pound red-skinned potatoes (about 8 small), quartered
2 cups thinly sliced shiitake mushrooms
1 teaspoon kosher salt, plus more to taste
1 1/2 tablespoons vegetable or olive oi

Steps:

  • Heat a griddle or heavy skillet over medium heat. Add the unpeeled garlic and roast until softened, shaking pan, about 15 minutes (garlic will blacken in spots). Cool and peel.
  • Meanwhile, heat another skillet. Open and flatten the chilies (they may break), and toast 2 at a time, pressing them against the hot surface until they crackle and emit wisps of smoke. Flip over and toast other sides. Place in a bowl of hot water. Weight with a plate to keep the chilies submerged, and soak for 30 minutes. Drain.
  • Place the garlic, chilies, oregano, cumin and 2/3 cup of chicken broth in a food processor or blender and process until smooth, scraping and stirring. Add more broth, if needed, to puree the chilies. Press through a medium-mesh sieve and set aside. (The dish can be made ahead up to here.)
  • Heat the oil in a large, wide pot over medium-high heat. Pat the chicken dry and place in the pot in a single uncrowded layer, in batches if necessary. Cook until browned, about 4 minutes per side. Remove from the pan and set aside.
  • Place all but 2 onion slices in the pot. Saute until browned, about 8 minutes. Add the chile puree and cook, stirring constantly, until thickened and much darker, about 5 minutes. Stir in the remaining 2 cups of broth. Simmer for 15 minutes, stirring occasionally.
  • Stir in the potatoes and mushrooms, cover and simmer over medium-low heat for 10 minutes. Push the chicken legs into the sauce, cover partly and cook 15 minutes. Push the remaining chicken into the sauce, cover partly and cook until done, about 30 minutes longer.
  • Transfer the chicken to a warm, deep serving platter. Season the sauce and vegetables with salt. Spoon the sauce over the chicken and arrange the vegetables around it. Shape the reserved onion slices into rings and scatter over the vegetables. Serve.

PANFRIED CHICKEN WITH ANCHO CHILES AND MUSHROOMS

Panfried Chicken with Ancho Chiles and Mushrooms image

Provided by Food Network

Categories     main-dish

Time 1h40m

Yield 6 servings

Number Of Ingredients 12

8 tablespoons (1 stick) unsalted butter
1 medium onion, sliced
Salt and freshly ground black pepper
2 to 4 garlic cloves, sliced
1/2 pound Oyster mushrooms, cleaned and sliced
1/2 pound white mushrooms, cleaned and sliced
1 cup dry white wine
3 to 4 dried Ancho chiles, wiped clean, stemmed and seeded
2 1/2 cups chicken stock
Juice of 1 lime
1/4 cup olive oil
3 large whole boneless chicken breasts with skin, split

Steps:

  • Melt 4 tablespoons of the butter in a medium saucepan over moderate heat. Saute the onions with 1/2 teaspoon each of salt and pepper until golden brown, 8 to 10 minutes. Add the garlic and half of each of the mushrooms. Turn up the heat and cook the mushrooms, stirring frequently, until golden. Pour in the wine and cook until most of the liquid has evaporated.
  • Meanwhile, place the Ancho chiles over a burner and toast all over just until soft and the skin is slightly bubbly. Roughly chop half the chiles and add to the pot, reserving the rest.
  • Add the chicken stock to the pot and boil about 12 minutes. Transfer to a blender or food processor and puree until smooth. (For a smoother sauce, pass through a sieve.) Return the sauce to the stove and bring to a boil. Stir in the remaining butter, 1 tablespoon at a time, and remove from heat. (For a thinner, more rustic sauce you can eliminate this butter.) Stir in the lime juice, season with salt and pepper and reserve.
  • Preheat the oven to 350 degrees.
  • Season the chicken breasts well with salt and pepper. Heat a large dry skillet over moderate heat for 5 minutes. Pour in the olive oil and place the chicken in the pan, skin side down. Fry until the skin starts to brown and crisp, 5 to 10 minutes, and then turn and briefly sear the other side. Transfer to a baking dish (set the pan aside) and bake until cooked through, about 10 minutes.
  • Meanwhile, finish the sauce by thinly slicing the remaining toasted Ancho peppers. Reheat the pan used to brown the chicken and saute the remaining mushrooms over medium-high heat until the edges are brown. Then add the sliced Anchos. Stir and toss 1 to 2 minutes longer. Stir into the reserved sauce.
  • Coat the serving plates with the sauce. Top each with a browned chicken breast and serve.

CHICKEN ENCHILADAS WITH ANCHO CHILE CREAM SAUCE

Chicken Enchiladas With Ancho Chile Cream Sauce image

This is my "signature" dish. Always get raves on them. They are a bit time consuming, especially if you decide to make your own Pico de Gallo and Guacamole, but well worth it. I sip on a margarita to make the experience most authentic! * I find that I barely have enough cream sauce, you might consider doubling it for ease. * Here is a recommendation for the order of prepping things... *Start chiles soaking (30 minutes) *Cook chicken (I just boil chicken thighs in chicken stock...they need to cool before you can shred the meat) *Drink Margarita *Butter 13x9x2 baking dish *Preheat oven to 350°F *Slice and sauté mushrooms *Drink Margarita *Make sauce *Make filling *Assemble *Cook and eat (and drink Margarita)!
