I wanted to make stew, but I didn't want to make a lot so this recipe came out of the darkest corners of my brain. And by the way, this recipe is just enough for two hearty bowlfuls. 1/4 cup all-purpose flour
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 lb beef stew meat, cut into 1 inch chunks
1 1/2 cups potatoes, peeled and diced, cut into 1 inch pieces
3/4 cup carrot, diced
1 1/2 cups beef broth
1/2 teaspoon Worcestershire sauce
1 bay leaf

Steps:

  • Mix flour, kosher salt, black pepper, onion powder, and garlic powder together in a large plastic bag.
  • Add beef stew chunks, coating well.
  • Place coated meat into a 2 quart slow cooker.
  • Top meat with potatoes and carrots.
  • Mix together beef broth and worcestershire sauce, and pour over potatoes.
  • Top with bay leaf, and cover.
  • Cook on low for 6 hours.
  • After cooking remove bay leaf and stir so meat and veggies are combined.
  • Serve with your favorite crusty bread.

1 1/2 pound chuck roast (cut into 1 1/2 inch pieces or pre-cut stew meat)
1/4 cup flour
2 teaspoons salt
1 teaspoon pepper
2 tablespoons olive oil
2 pounds Yukon Gold potatoes (halved or quartered depending on size)
1 pound baby carrots
2 tablespoons butter
1 yellow onion (diced)
3 cloves garlic (minced)
3 cans beef broth (approximately 40 ounces)
1 small can tomato paste
2 tablespoons Balsamic or red wine vinegar
1 tablespoon Worcestershire sauce
2 tablespoons cornstarch (+ 2 Tbsp cold water)
1 tablespoon dried thyme
1 teaspoon dried parsley flakes
2 bay leaves
Fresh parsley (for garnish)

Steps:

  • Cut roast into 1 1/2 inch bite size chunks and place them in a gallon size resealable bag or other airtight container. Add flour, salt, and pepper. Shake bag until the meat is coated with flour.
  • Heat olive oil in a large heavy bottom skillet or pot. Add coated meat and brown each piece on all sides.
  • While meat is browning, cut potatoes and carrots and place both in the bottom of a crock pot. When meat is browned, layer the meat on top of the potatoes and carrots and leave remaining juices in the skillet.
  • Return the skillet to the stovetop and add butter. Melt the butter on medium-high heat, then saute onions and garlic. Stir in beef broth, tomato paste, red wine vinegar, and Worcestershire sauce. In a small cup, combine cornstarch and cold water. Mix until smooth then add to the liquid mixture in the skillet. This will thicken the liquid. Pour all the contents of the skillet over the meat and vegetables in the crock pot. Add thyme, parsley flakes, and bay leaves.
  • Cook on low for 7-8 hours or on high for approximately 4 hours. 30 minutes before serving check the taste of the broth and add salt, pepper, or seasonings as needed. Allow to cook for another 30 minutes after adding seasonings.
  • Remove bay leaves before serving. Garnish with fresh parsley.

½ cup all-purpose flour
1 teaspoon salt
½ teaspoon freshly ground black pepper
3 pounds boneless beef chuck, trimmed and cut into 1 1/2-inch pieces
¼ cup vegetable oil
1 large yellow onion, coarsely chopped
1 (15 ounce) can Irish stout beer (e.g. Guinness®)
4 cloves garlic, chopped
1 (14.5 ounce) can beef broth
1 tablespoon chopped fresh parsley
2 sprigs fresh thyme
2 bay leaves
1 pound round red potatoes, halved
3 carrots, cut into 1-inch chunks
1 (17.5 ounce) package frozen puff pastry, thawed and cut into quarters

Steps:

  • Combine flour, salt, and pepper in a shallow dish; add beef pieces. Toss to coat each piece evenly. Reserve remaining flour mixture for later use.
  • Heat oil in a large non-stick skillet; cook and stir coated beef, working in batches, until browned on all sides, about 10 minutes per batch. Transfer cooked beef to a slow cooker.
  • Cook and stir onion in the same skillet used for beef until golden, about 5 minutes. Add beer and garlic; bring to a boil for 1 minute. Scrape browned bits of food from bottom of the pan with a wooden spoon. Pour onion mixture into the slow cooker.
  • Mix beef broth, parsley, thyme, and bay leaves into beef mixture in slow cooker.
  • Cook on Low until beef is almost tender, 2 1/2 to 3 hours. Sprinkle in the reserved flour mixture; stir well. Add potatoes and carrots.
  • Cook on High until potatoes are tender, about 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Arrange puff pastry on baking sheets; pierce each piece several times with a fork.
  • Bake in the preheated oven until golden and crispy, about 10 minutes. Ladle stew into individual dishes; top each with a pastry square.

Steps:

  • In a stockpot, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. In a large shallow dish, combine flour, salt and pepper. Add beef, a few pieces at a time, and turn to coat. Brown beef in the bacon drippings. Remove and set aside., In the same pot, saute the mushrooms, leeks, carrots and celery in oil until tender. Add garlic; cook 1 minute longer. Stir in tomato paste until blended. Add the broth, beer, bay leaves, thyme, parsley and rosemary. Return beef and bacon to pot. Bring to a boil. With my Irish father in town, I wanted a ready-made meal after a long day of sight-seeing. I chose a hearty beef stew and wanted to incorporate his favorite beer, Guinness. I was worried that we left it in too long, but after 10 hours on low and 2 hours on warm ( it was a long day of sight-seeing) it was still awesome! Makes a flavorful, thick sauce to dip bread in. I filled the crock pot to the top because I wanted enough for them to have lunch left-overs, so decrease the amounts if needed. Enjoy!

8 -10 red potatoes, skin on, quartered
6 carrots, peeled, sliced into thick chunks
2 stalks celery, cut in chunks
3 bay leaves
3 lbs stew meat, cubed (I used chuck)
1/2 cup flour
1 dash salt
1 dash pepper
1 dash garlic powder
2 -3 tablespoons olive oil
1 medium onion, diced
4 large garlic cloves, minced
8 ounces baby portabella mushrooms, halved
2 (8 ounce) cans tomato sauce
10 3/4 ounces beef broth (I used consomme)
1 (13 g) envelope Lipton Onion Soup Mix
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon creole seasoning (Tony Chachere's)
1 teaspoon Italian herb seasoning (Mrs. Dash)
12 ounces beer (Guinness, draught or stout)
1 cup frozen peas, if desired

Steps:

  • Put potato, carrot, and celery chunks in the bottom of crock pot. Top with 2 bay leaves.
  • Season flour with a dash of salt, pepper and garlic powder and coat the beef with the flour mixture. Heat a couple of tbsp of olive oil over med-high heat in a large skillet and add 1 bay leaf. Sauté beef in batches, just until browned.(It took me about 3 batches in a 12" skillet). Add more oil to pan as necessary for each batch. Remove and set aside.
  • Add onion and garlic to the same pan and sauté over med heat for a few minutes, then add about half the can of beef broth to deglaze, scraping up the brown bits on the bottom of the pan. (That's Flavor!).
  • Add meat and onions to crock pot, top with mushrooms.
  • Mix remaining beef broth with tomato sauce, onion soup mix, remaining seasonings, and add to crock pot. Pour in most of bottle of beer (whatever fits, I had a few sips left for me).
  • Cook 8 hours on low heat. Stir in frozen peas when done, they'll heat up on their own.
  • Serve with crusty French bread!
  • *Tony Chachere's and Mrs. Dash are my "go-to" seasonings for everything. You can use your favorite if these are not available.

2 tablespoons olive oil
3 tablespoons all-purpose flour
2 pounds beef chuck, cut into 1 1/2-inch cubes
1 pound carrots, peeled and cut into 1-inch chunks

1 white onion, cut into large chunks
2 cloves garlic, minced
2 cups beef broth
1 (6 ounce) can tomato paste
1 (12 fluid ounce) can or bottle Irish stout beer (e.g. Guinness(r))
1 tablespoon cold water

Steps:

  • Heat the oil in a large skillet over medium heat. Toss beef cubes with flour to coat, then fry in the hot oil until browned. Place the carrots, potatoes, onion and garlic in a large slow cooker. Place the meat on top of the vegetables. Mix together the beef broth and tomato paste and pour into the slow cooker along with the beer.
  • Cover and cook on High for 6 hours or Low for 8 hours. During the last hour before serving, dissolve the cornstarch in cold water and then stir into the broth. Simmer on the High setting for a few minutes to thicken.

3 lbs leg of lamb, shoulder chops or 3 lbs lamb shanks
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup water
3 onions, chopped
2 large carrots, chopped
2 tablespoons fresh Italian parsley, chopped
2 tablespoons fresh thyme or 2 tablespoons savory, chopped
2 cups beef stock or 2 cups chicken stock
2 1/2 lbs round potatoes (Iabout 8) or 2 1/2 lbs long potatoes, peeled and cubed (Iabout 8)
2 tablespoons butter, softened
2 tablespoons all-purpose flour

Steps:

  • Sprinkle both sides of lamb cuts with half of the salt and pepper. Brown lamb all over, in batches, in a skillet over medium-high heat. Place in slow cooker.
  • Add water to skillet and bring to a boil, scraping up brown bits. Pour liquid into slow cooker.
  • Return skillet to medium heat and cook onions, carrots, parsley thyme and remaining salt and pepper for about 8 minutes until softened and beginning to turn golden.
  • Scrape into slow cooker.
  • Add stock and potatoes. Cover and cook on low for 8 hours or until lamb is tender and easily pulls away from the bone.
  • In a small bowl, mash together butter and flour until well combined. Uncover slow cooker, and stir butter mixture into stew and cook on high for 20 minutes or until slightly thickened.

1.5 lbs beef stew meat (in 1-2 inch cubes)
2 small-medium onions (peeled and cut into slim wedges)
2 cloves garlic (crushed)
1 pound waxy potatoes (peeled and cut into chunks)
4 medium carrots (peeled and cut into chunks)
3 sticks celery (sliced)
4 cups beef broth (see notes if want to use beer)
1 tablespoon Worcestershire sauce (can use soy sauce in place)
4 tablespoons white flour
1/2 teaspoon salt
ground black pepper (to taste)
1 sprig thyme (OR 1/4 teaspoon dried)
1 sprig rosemary (OR 1/4 teaspoon dried)
1 bay leaf (skip if you don't have)

Steps:

  • Brown meat: Heat oil in large skillet over medium-high heat. Add beef and brown; remove and add to 4-6 quart slow cooker.
  • Sauté onions: Add onions to hot skillet and sauté over medium heat until softened. Pour in about 1/2 cup of the beef broth, scraping any browned bits off the bottom of the pan (see notes for using dark beer in this step). Take off the heat and carefully pour into slow cooker over meat.
  • Cook stew: Place potatoes, carrots and celery in slow cooker. Whisk together broth, Worcestershire sauce and flour in a measuring jug. Pour over meat and vegetables in slow cooker, then carefully stir. Tuck in herbs, close lid and cook on LOW for 7-8 hours or on HIGH for 4 hours.

3 ½ pounds beef chuck cut into 1 and 1/2 inch cubes
2 tablespoons canola oil
2 onions (finely diced)
1 tablespoon tomato paste
4 garlic cloves minced

1 1/4 cups Guinness beer divided
1 ½ tablespoons brown sugar
1 tablespoon fresh thyme
1 pound carrots cut into 1 inch pieces
1 ½ pounds Yukon gold potatoes cut into 1 inch pieces

Steps:

  • Season beef with salt and pepper toss with flour to fully coat. Use all the flour.
  • Heat a dutch oven over medium high heat. Add 1 tablespoon of oil. Brown beef on all sides, working in batches if necessary to avoid over crowding pan. Remove beef from pan and transfer to slow cooker.
  • Return pan to heat, add another tablespoon of oil. Add the onions, season with salt and sauté until golden brown, about 20 minutes. Reduce heat as needed to avoid burning the onions.
  • When onions are golden, add the tomato paste and garlic, stir until combined and a "fond" (the brown bits) is starting to develop on the bottom of the pot.
  • Slowly whisk in the beef broth, scrapping up any brown bits on the bottom of the pan. Add 1/2 a cup of the Guinness, the brown sugar, and the fresh thyme. Whisk to combine.
  • Add potatoes and carrots to slow cooker. Carefully pour broth over meat and vegetables.
  • Set slow cooker to low and cook for 6-8 hours. If broth is not desired consistency, see notes for how to thicken it.
  • When finished cooking, stir in the remaining 3/4 cup of Guinness and fresh chopped parsley. Taste and add salt and pepper to taste. Serve.

  • Stir in beer, stock, the garlic, carrots, celery, potato, bay leaves, thyme and rosemary to slow cooker.
  • Caramelise onions in butter and sugar in a saucepan then add to cooker.
  • Sprinkle meat lightly with 2 tbsp flour, salt and pepper. In batches, brown meat all over, mix all in to the slow cooker. Set on Auto or Low for 8 hours, or High for 4-5 hours.
  • After cooking, mix remaining flour and water in a cup and add to stew. Set on high and stir until thickened. Add parsley and serve with thick slices of Vienna Bread.
  • Sometimes you may need to add a bit more brown sugar if it has a bitter taste.

Ready when you are, this savoury slow cooker beef stew recipe is full of flavour and so easy to make in the crock pot.

3 cups 750 mL 1" (2.5 cm) potato cubes or mini potatoes, halved
2 cups 500 mL sliced celery
2 cups 500 mL baby carrots
1 small onion, cut into wedges
2 bay leaf
1 1/2 lb 681 g 1" (2.5 cm) beef for stew, cubes
1/4 cup 60 mL all-purpose flour
1/4 tsp 1 mL ground black pepper
1 tbsp 15 mL canola oil
2 cups 500 mL CAMPBELL'S® Ready to Use 30% Less Sodium Beef Broth
1/2 tbsp 8 mL Worcestershire sauce
1 tbsp 15 mL chopped fresh thyme leaves
2 cloves garlic, minced

Steps:

  • Combine vegetables in 4½ qt (4.3 L) slow cooker. Add bay leaves.
  • Place stewing beef, flour and pepper into a sealable plastic bag and toss to coat beef.
  • Brown beef well on all sides in heated oil over medium-high heat in large non-stick skillet. Place beef on top of vegetables in slow cooker.
  • Add broth, Worcestershire sauce, thyme and garlic to skillet and combine well with pan drippings. Pour mixture over beef and vegetables.
  • Cook, covered, on HIGH setting for 4 hours* or until the beef reaches internal temperature of 165°F (74°C) and is fork-tender. Discard bay leaves before serving.

  • Combine all ingredients in slow cooker.
  • Cover and cook on high for 1 hour.
  • Reduce heat to low and cook until lamb and vegetables are very tender, 10-12 hours.
  • Season to taste with salt and pepper. Discard bay leaf.
