BIRD'S-NEST PUDDING PIE

Bird's-Nest Pudding Pie image

We like to think of this dessert as the turducken of pies -- spiced, cranberry-stuffed apples are baked in a pie shell, surrounded by cake batter. It's inspired by the bird's-nest pudding in Laura Ingalls Wilder's classic "Farmer Boy."

Time 3h30m

Number Of Ingredients 13

1/2 cup unbleached all-purpose flour, plus more for dusting
1 disk Test Kitchen's Favorite Deep-Dish Pate Brisee
1 cup packed light-brown sugar
3/4 cup fresh or thawed frozen cranberries
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/2 teaspoon kosher salt
5 small McIntosh apples (2 pounds)
2 tablespoons unsalted butter, room temperature, cut into small pieces, plus 2 tablespoons, melted
1/2 teaspoon baking powder
1 large egg, separated, plus 1 large egg white
1/3 cup whole milk, room temperature
Vanilla ice cream, for serving

Steps:

  • Preheat oven to 375 degrees. On a lightly floured work surface, roll out dough 1/8 inch thick. Cut out a 13-inch round. Fit into bottom and up sides of a 9-inch springform pan. Freeze 15 minutes.
  • Blind-bake crust: Line chilled crust with parchment and then foil, pressing into corners to hold up sides. Fill with baking beans or rice. Bake until sides are set and beginning to turn golden, 45 minutes to 1 hour. Remove paper and beans from crust and continue baking until bottom crust is golden brown and dry, about 10 minutes more.
  • Meanwhile, stir together 1/2 cup sugar, 1/2 cup cranberries, cinnamon, nutmeg, and 1/4 teaspoon salt. Peel apples; scoop out cores from stem ends with a melon baller or a sharp-tipped spoon, leaving bottom ends intact. Fill hollows with 1 heaping tablespoon cranberry mixture, pressing down to fit as much in as possible and mounding slightly over tops. Transfer to an 8-by-8-inch baking dish. Dot with room-temperature butter. Thirty-five minutes before crust is done, place in oven and bake 25 minutes, turning apples halfway through so sides facing edge of dish face in. Cover with foil and bake until apples are just barely tender when pierced with the tip of a knife, 5 to 10 minutes more. Toss remaining 1/4 cup cranberries with juices in bottom of dish.
  • Meanwhile, whisk together flour, baking powder, and remaining 1/4 teaspoon salt. In a separate bowl, whisk egg yolk with remaining 1/2 cup sugar until combined. Whisk in flour mixture, then melted butter and milk. Beat egg whites until stiff peaks form, then gently fold into batter.
  • Pour batter into warm crust. Nestle apples into batter, spooning cranberries and 2 tablespoons of juices from dish over top. Return to oven; bake until pie is puffed and beginning to turn golden on edges, and springs back when pressed in center, 30 to 40 minutes. Let cool at least 45 minutes. Serve warm, with ice cream.

BREAKFAST BIRD'S NEST

Breakfast Bird's Nest image

My grandmother and mom both made these for me when I was very little and now I make them for my little ones. They love their eggs made this way. Some people call them "egg in a window", but my mom always called them "bird's nests". Kids love them, but I still make them for myself :) There's just something yummier about the "dipping" toast being fried in butter instead of just popped in the toaster, and after dipping, the egg white tastes great with the fried bread from the "nest".

Categories     Breakfast

Time 10m

Yield 1 serving(s)

Number Of Ingredients 3

1 large egg
1 slice bread (your favorite)

  • Lay bread on the counter or a plate.
  • Using a wide topped glass, cut a circle out of the center of the bread.
  • Over medium heat, melt 1 tsp butter in a non-stick skillet.
  • When heated, lay both pieces of bread (the circle and the piece with the hole) in pan and reduce heat to low-medium.

  • Serve egg with the toasted bread circle for dipping.

BIRD'S NEST BREAKFAST CUPS

Bird's Nest Breakfast Cups image

I got the basics of this recipe from a friend of mine and thought it was a great idea since these little nests can be made ahead, which I love. They are delicious, easy to make, and can be customized to your own tastes. I not only use the recipe as a delicious grab-and-go breakfast, but serve it to guests nestled into some lovely cheese grits, alongside fresh fruits and French toast made on a panini press. Oh, and don't forget the mimosas!

Yield Makes 36 pastries

Number Of Ingredients 16

For syrup:
1 1/2 cups water
3/4 cup sugar
3/4 cup honey
2 (4-inch) strips fresh orange zest
2/3 cup fresh orange juice
2 tablespoons fresh lemon juice
For filling:
2 cups whole-milk ricotta
3/4 cup finely shredded mozzarella
3 tablespoons honey
1 1/2 teaspoons grated fresh orange zest
1/4 teaspoon cinnamon
1-pound package kataifi (shredded phyllo dough), thawed if frozen
1 stick unsalted butter, melted
1/2 cup pine nuts, toasted

Steps:

  • Make syrup:
  • Bring water, sugar, honey, zest, and juices to a boil in a 2-quart saucepan over moderate heat, stirring until sugar is dissolved, then simmer until slightly thickened, about 8 minutes. Cool syrup.
  • Make filling:
  • Stir together cheeses, honey, zest, and cinnamon.
  • Assemble and bake nests:
  • Preheat oven to 350°F and butter 2 shallow baking pans (about 1 inch deep).
  • Gently pull apart strands of kataifi in a large bowl to loosen, then toss with all of butter. Pack a 1/3-cup measuring cup with strands and invert into a baking pan to form a mound. Make 36 more mounds (18 in each pan) in same manner.
  • With your finger, make a 1-inch-deep depression in top of each mound to form a nest. Spoon filling into holes, then sprinkle pine nuts over filling.
  • Bake birds' nests in upper and lower thirds of oven, rotating pans halfway through baking for even browning, until nests are pale golden, about 35 minutes. Discard zest and drizzle all of syrup over nests (syrup will gradually be absorbed). Cool birds' nests in pans on a rack.

BIRD'S SPAGHETTI NEST

Bird's Spaghetti Nest image

This is easy to fix and delicious! Using jumbo muffin tins gives nice individual presentations while using the bundt pan is great for a larger crowd.

Provided by 2Bleu

Categories     One Dish Meal

Time 50m

Yield 8 serving(s)

Number Of Ingredients 14

8 ounces reduced-fat cream cheese
2 ounces parmesan cheese, shredded
1/2 cup light sour cream
1 egg
1 lb ground beef
1 small onion, chopped
1/2 green pepper, chopped
1 tablespoon italian seasoning
1 teaspoon salt
1 teaspoon black pepper
1/4 cup tomato paste
1/2 cup tomato sauce
1/4 cup ketchup
8 ounces spaghetti

Steps:

  • Preheat oven to 350°F In a large bowl, mix cheeses, sour cream, and egg together. Set aside.
  • Sauté beef in a large skillet with the onion, green pepper, Italian seasoning, salt, and pepper. When beef is cooked thorough, add remaining beef ingredients.
  • Cook spaghetti till done, drain in strainer, then pour into cheese mixture while hot. Chop the pasta cheese mixture using a spatula or other sharp edged utensil, while stirring and mixing well and place into a lightly greased bundt pan OR jumbo muffin tins (better).
  • When beef mixture is done, pour it over the pasta/cheese mixture and bake for 25-30 minutes.
  • Allow to cool about 5 minutes, then flip over onto a serving platter for the bundt pan, onto the counter for muffin tins, then use a spatula to transfer to plates.
  • I like using the jumbo muffin tins, then putting the extra into a casserole dish for left-overs.
