Instant Pot steak fajitas that are so tender, juicy and filled with incredible flavors!

1 pound (450 grams) steak (rump, top round or flank sliced into long strips)
1 onion (peeled and sliced)
2 tablespoons fajita seasoning
½ cup (125 ml) beef or vegetable stock or water
salt (to taste)
3 bell peppers (red, green and yellow - thickly sliced)
4 tortilla bread

Steps:

  • Add the meat to the pot, followed by the onion and bell peppers (add the bell peppers if you don't mind soft veggies, otherwise add them after pressure cooking), the spices, and ½ cup of liquid (beef or vegetable stock or water, whatever is available).
  • Give everything a quick mix, secure the lid and set the vent to SEALING. Select the PRESSURE COOK/MANUAL setting and set the cooking time for 10 minutes at high pressure. The Instant Pot will take around 6-7 minutes to come to pressure and start cooking. When the cooking program ends, quickly release the steam.
  • Remove the lid, and add the bell peppers if you didn't add them before pressing cooking then cover with the lid again, and let the peppers "steam" for a few minutes. If you already cooked the bell peppers, then skip this step.
  • Then either drain the extra liquid (and retain some) or use a slotted spoon to take out the fajitas.
  • To serve, stuff warmed tortillas with the fajitas and garnish with chopped cilantro leaves and drizzle over with a little bit of the reserved sauce.

2 tablespoons canola oil
1-1/2 pounds beef top sirloin steak, cut into thin strips
1 large onion, julienned
1 large sweet red pepper, julienned
1 garlic clove, minced
1/2 cup reduced-sodium beef broth
2 tablespoons lemon juice
1-1/2 teaspoons ground cumin
1 teaspoon seasoned salt
1/2 teaspoon chili powder
1/4 to 1/2 teaspoon crushed red pepper flakes
12 mini flour tortillas (5 inches), warmed
Optional toppings: Shredded cheddar cheese, fresh cilantro leaves, sliced jalapeno pepper and avocado

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown beef. Press cancel. Place onions, peppers and garlic on meat. Top with broth, lemon juice and seasonings., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Quick-release pressure. Press cancel. Using tongs, serve with tortillas and toppings as desired.

Make tender, delicious steak fajitas using the Instant Pot and an inexpensive cut of beef.

1 pound sirloin steak roast or flank steak
1 tablespoon fajita seasoning (divided)
2 teaspoons oil (divided)
1/2-3/4 cup low-sodium beef broth
1 large yellow or white onion (thinly sliced)
3 large bell peppers (any color) (thinly sliced)
2 limes (zested and juiced)

Steps:

  • Place the full cut of meat into the freezer for 10 to 15 minutes, as it will be easier to slice. After freezing, slice the steak into ½-inch strips against the grain. Season the meat with 1/2 tablespoon of the fajita seasoning.
  • Turn the Instant Pot to Saute and add in 1 teaspoon of oil and let heat.
  • Once the oil is heated, add half the seasoned meat to the Instant Pot in a single layer. Saute for about 1-2 minutes per side, to JUST brown the steak. Remove the seared meat from the inner pot and place it on a plate. Repeat the process with the remaining meat, adding in an additional teaspoon of oil if needed. Once browned, remove the steak to the plate with the first batch, and drain off any grease if needed.
  • Turn the Instant Pot off by hitting cancel, Add in 1/2 cup beef broth for a 3 or 6-quart Instant Pot or 3/4 cup for an 8-quart model. Use a wooden or metal spatula to scrape up any browned bits off the bottom of the inner pot.
  • Add the seared beef back to the inner pot. Top the meat with the sliced onion and sliced peppers. Sprinkle the additional 1/2 tablespoon of fajita seasoning over the pepper and onions.
  • Seal instant pot, being sure vent knob is pointed to sealed. Set to cook on High Pressure for 2 minutes. Once cooking time is finished let pressure release naturally for 10 minutes, to keep the meat tender.
  • Remove the meat, onions, and peppers to a serving platter using a slotted spoon. Add the zest and juice of the limes and toss to coat.
  • Serve the fajita mixture as desired on tortillas or over rice with your favorite toppings.

1 tsp olive oil
1 flank steak
sliced thin
1 red pepper
sliced
1 green pepper
sliced
1 onion
sliced
1 Tbsp taco seasoning
1/2 cup beef broth
1 Tbsp tomato paste
Tortillas and lime wedges
for serving

Steps:

  • Turn on the Saute feature on the Instant Pot. Once warmed, add the olive oil. Saute the steak in the Instant Pot for 2 minutes, no more. The steak won't be cooked all the way-that's okay! Pour in the beef broth and add the tomato paste. Mix until the tomato paste has fully been worked into the broth. Add in the sliced red pepper, green pepper, onion, and taco seasoning. Place the lid on the Instant Pot and set it to be sealed. Cook the steak at high pressure on manual (Pressure Cook) for 10 minutes. Wait for the Instant Pot to come to pressure, then it will cook the amount of time you set. When the timer goes off, release the pressure right away. Serve with tortillas or, to keep it low-carb, in a bowl with a bed of greens and guacamole.

1-1/2 teaspoons ground cumin
1/2 teaspoon seasoned salt
1/2 teaspoon chili powder
1/4 to 1/2 teaspoon crushed red pepper flakes

1 large sweet red pepper, thinly sliced

8 flour tortillas (8 inches), warmed

Steps:

  • In a bowl, toss steak with cumin, salt, chili powder and red pepper flakes. Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown meat in batches and remove. Add water, lemon juice and garlic to cooker; stir to loosen any browned bits. Press cancel. Return beef to cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 20 minutes., Allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure. Remove steak with a slotted spoon; keep warm., Add red pepper and onion to cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 5 minutes. Quick-release pressure. Serve vegetables and steak with tortillas and desired toppings.
