1 (16 ounce) container sour cream
1 (8 ounce) package cream cheese
1 (10.75 ounce) can condensed cream of shrimp soup
1 dash Worcestershire sauce
1 pinch garlic salt

Steps:

  • Melt sour cream, cream cheese, shrimp soup, Worcestershire sauce and garlic salt over a low heat in a medium size pot. Cook until melted together and the mixture has a creamy texture. Pour mixture into a serving bowl. Serve hot.

1 tablespoon olive oil
1 medium onion, diced
3 garlic cloves, minces
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1 lb brie cheese, rind removed, cubed
1/2 cup light cream
1 1/2 cups mild shredded cheddar cheese
1/2 teaspoon hot sauce (i prefer sriracha)

Steps:

  • Preheat oven to 450 degrees. Lightly oil 9" X 9" baking dish.
  • Combine olive oil, onion and garlic in sauce pan, sautee over med. low heat until tender.
  • Add cream, salt, pepper, bring to low simmer for 1 minute.
  • Add cheeses and hot sauce. Stip until smooth.
  • Pour into greased baking sidh, bake for 15 minutes.

1 tablespoon olive oil
1 pound frozen fully cooked salad shrimp, thawed
¼ cup finely chopped fresh parsley
salt and ground black pepper to taste
½ cup ketchup, or more as needed
2 tablespoons prepared horseradish, or more as needed
½ cup mayonnaise
3 tablespoons seasoned bread crumbs

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat oil in a skillet over medium-high heat. Saute shrimp in the hot oil with parsley, salt, and pepper until just heated through, 3 to 4 minutes.
  • Mix ketchup and horseradish together in a bowl for cocktail sauce, adding more ketchup or horseradish to adjust spiciness. Stir in mayonnaise and mix well. Fold in cooked shrimp until well mixed. Pour into a small, shallow baking dish. Sprinkle bread crumbs evenly over the top of the mixture.
  • Bake in the preheated oven until edges are bubbly, about 20 minutes.

1 (15 ounce) jar alfredo sauce (I used Classico 4 Cheese)
12 ounces shredded swiss cheese
1/2 cup pico de gallo
6 ounces baby shrimp

Steps:

  • Put sauce into sauce pan and add shredded cheese.
  • Stir until all the cheese is melted.
  • Add shrimp and stir until warm.
  • Add pico de gallo just before serving.
  • The shrimp and pico de gallo really add a lot of moisture, but if it is too thick, add a little milk, half & half or heavy cream.
  • If you don't have pico de gallo, finely diced tomatoes and onions can be used instead.

1 1/2 teaspoons olive oil
4 ounces fresh shiitake mushrooms (stemmed with caps diced)
1 shallot (minced)
1 teaspoon fresh thyme (chopped)
1 1/2 tablespoons all-purpose flour
12 ounces chilled chilled 60% Brie cheese (double creme, recommended not to use triple creme)
2 ounces Roquefort cheese (chilled)
1 cup dry white wine

Steps:

  • First, heat the oil in a medium-size heavy skillet over medium-high heat. Then, add the mushrooms, shallot, and thyme and sauté until the mushrooms begin to soften (about 2 minutes).
  • Next, place the flour in a large bowl. Cut the rind from your Brie and discard it. Cut the Brie into cubes and drop into the flour. Toss the cubes to coat, separating the cheese cubes.
  • Crumble the Roquefort into the same bowl and also toss to coat.
  • Pour the wine into a medium-size heavy saucepan and bring to a slow simmer over medium heat. At this point, add the cheese by handfuls, slowly, and stirring all the while until each addition of cheese is melted. Keep stirring until the Brie fondue mixture is smooth.
  • Next stir in the mushroom mixture into the fondue. Season with generous amount of pepper and transfer it all to a fondue pot.
  • Set the fondue pot over a candle or a canned heat burner. Or if you have an electric fondue pot, make sure you are familiar with the settings before using it. Serve with bread and vegetables (see below).

1 garlic clove, crushed
1/4 cup dry white wine
9 ounces brie cheese, rind removed and cubed
1 tablespoon cornstarch
2 tablespoons green onions, chopped
1 pinch nutmeg, freshly grated
salt and white pepper

Steps:

  • Rub garlic all over the inside of your fondue pot. Then rub it in a saucepan, leaving the crushed pieces in the bottom. Add the white wine to the saucepan and heat over medium-low heat.
  • Toss the cheese cubes in cornstarch to coat. When the wine is hot, add the cheese. Stir slowly with a wooden spoon at first and then use a whisk. Stir constantly to keep it from scorching on the bottom of the pot.
  • When the cheese has melted, add green onion and remove pot from the heat. Grate in a little nutmeg. Season with salt and pepper to taste.
  • The fondue should be smooth and coat a wooden spoon. If it seems to runny, add more cheese. If it is too thick, add a splash more wine --sparingly.
  • Pour the cheese into your fondue pot and keep fondue warm over low heat.
