CELERY ALMANDINE
This is a wonderful recipe that my Aunt Stevie shared with me at my engagement party over 35 years ago! This is a super easy, rather elegant, slightly crunchy, kinda nutty side dish--and I really don't even care much for celery.

Steps:
- Melt butter in a large skillet over medium heat; cook and stir almonds until golden, 2 to 3 minutes. Stir celery, onion, bouillon, sugar, and ginger into almonds. Continue to cook and stir until celery is tender, about 10 minutes.

BAKED CELERY
Steps:
- 1. Chop celery and simmer in butter. Mix together with soup and water chestnuts and spread in a buttered baking dish. Add almonds and 3 slices of soft bread torn or cubed and browned in butter. Bake at 350 for 25 to 30 minutes. Serve with soy sauce.
CELERY CASSEROLE
Celery is the star in this dish instead of being a supporting character! Sometimes, I use roughly crushed chow mein noodles instead of crackers and just enough butter to crisp the almonds.

- Preheat oven to 350°F.
- Cook celery in salted boiling water for 7 minutes and drain.
- Combine with water chestnuts and soup, pour into a greased 1 1/2 quart casserole.
- In a sauté pan, melt butter, add cracker crumbs and almonds and stir until well mixed.
- Sprinkle over celery mixture and bake for 30 minutes.
BAKED CELERY WITH ALMONDS
Growing up, we always had braised celery on our holiday table. However, the plainness of this dish did not appeal to my husband. Imagine my delight to find this "fancied-up" version of celery in BH&G. It pleases both of us! Another plus: it has a make-ahead feature and doubles easily.

Steps:
- Wash and cut the celery into 1/2-inch slices including some tender tops. You should have 5 cups of slices. In a large saucepan, simmer the celery in boiling salted water until tender. Drain in a colander *reserving* 1/2 cup of the pot liquor. Discard tops.
- In the same saucepan, melt the butter; stir in flour, salt and pepper and blend well. Add, stirring, the milk and reserved pot liquor; cook until thickened. Remove from heat.
- Stir in celery and half of the toasted almonds. Pour into a 1-quart baking dish. Casserole may be made ahead to this pooint; cover with plastic wrap and refrigerate.
- To finish the casserole: Top with remaining almonds. Combine bread crumbs and melted butter; sprinkle over top of casserole. Bake 20-25 minutes, or until hot and bubbly. Add ten or more minutes to the baking time if the casserole has been refrigerated.

BRAISED CELERY
Steps:
- Peel any of the fibrous outer stalks of celery with a vegetable peeler and slice into 1-inch pieces on the bias.
- Heat the butter in a 10-inch saute pan over medium heat. Once melted, add the celery, salt and pepper and cook for 5 minutes until just beginning to soften slightly. Add the beef broth and stir to combine. Cover and reduce the heat to low. Cook until the celery is tender but not mushy, approximately 5 minutes. Uncover and allow the celery to continue to cook for an additional 5 minutes or until the liquid has been reduced to a glaze. Transfer to a serving dish and garnish with the reserved leaves.
CELERY WITH ALMOND BUTTER AND DATES
These yummy appetizers can be served on a buffet table or as party snacks. Use organic ingredients if you can find them. The amounts given are very approximate because I never really measure this. While the salt is optional, I like to add it because it adds another layer of flavor and contrasts with the sweetness of the dates. This tastes good whether you use a lot of dates or just a few - your choice.

Steps:
- Choose celery ribs that are fresh and bright green.
- Cut the celery ribs into 2-inch lengths.
- Stir the almond butter well, and pour some into a small bowl.
- If desired, add a light sprinkling of salt to the almond butter and stir to combine.
- Spread a layer of almond butter into the cavity of each piece of celery.
- Top each celery piece with date pieces.
- Arrange on a serving plate.

BAKED CELERY
By my recollection, this dish is very similar to one my Irish grandmother cooked. Cooked celery as a side-dish vegetable seems to be out of vogue now, but it really is quite good.

- Preheat oven to 350F degrees.
- Separate celery into stalks, remove leaves (save for soup) and trim, wash well and cut into pieces about 3/4-inch thick.
- Place celery in an ungreased casserole dish.
- Dice bacon; add bacon and sliced onion to casserole, atop the celery.
- Sprinkle all with fresh parsley.
- Combine stock and water (or just use all stock) and pour over dish; don't stir.
- Dot casserole with small bits of butter.
- Cover dish and bake for 30 to 45 minutes, or until celery is cooked but not mushy.

I love to cook for big crowds, and I do a lot of outdoor entertaining during the summer. In winter, when it's too cold for outdoor eating, I still invite people over for meals indoors.
